SESAME DIPPING SAUCE

This is an Asian-style dipping sauce for coconut shrimp.

1 tablespoon olive oil
2 tablespoons minced garlic
4 ½ teaspoons red pepper flakes
2 tablespoons minced fresh ginger root
3 cups soy sauce
3 cups honey
1 cup orange juice
1 tablespoon sesame oil
½ lime, juiced
1 tablespoon sesame seeds

Steps:

  • Heat the olive oil in a large skillet over medium heat; cook and stir the garlic and red pepper flakes in the hot oil until fragrant, 2 to 3 minutes. Add the ginger, soy sauce, honey, orange juice, sesame oil, lime juice, and sesame seeds; stir. Cook until heated, 2 to 3 minutes more.

This is a wonderful sauce from a local restaurant. Its sought after and thankfully they are planning on bottling it but I just couldn't wait and happened to get the recipe from a friend who got it from a former employee. Its super tasty over rice, goes well as a dipping sauce for steak and prawns or whatever you want to try.

6 tablespoons ground sesame seeds
1 tablespoon roasted sesame seeds
1 teaspoon English mustard powder
3/4 cup yamasa soy sauce
3/4 cup vegetable oil
1 garlic clove
1/2 cup chopped onion

Steps:

  • Prepare mustard according to instructions.
  • Mix mustard, soy sauce and oil in blender. You can use any type of soy sauce you like, but tamara can get to salty, so a less salty version is better.
  • Add garlic, onion, ground seseame seeds and blend until smooth.
  • Mix roasted seeds inches.
  • You can substitute whole seseame seeds for the ground but make sure to blend on high for a long time.
  • Warm if desired over low heat.

CHINESE STYLE SESAME SAUCE

This is the SAUCE for Chinese restaurant style sesame chicken and broccoli. This sauce can be poured over fried chicken, or used as a dipping sauce for fried chicken. I emphasize not using too much vinegar because it turns into a sweet-n-sour type sauce. But you do need a 'touch' of vinegar.

¼ cup cornstarch
1 cup chicken broth
½ cup water
⅛ cup white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced

Steps:

  • In a saucepan, mix together sugar and cornstarch. Stir in chicken broth, water, vinegar, soy sauce, sesame oil, chile paste, and garlic. Bring to a boil over medium heat, stirring constantly. Reduce heat, and simmer 5 minutes.

This is restaurant-quality sesame chicken sauce. Better than most take-out Chinese! Serve over fried rice or lo mein noodles.

1 cup chicken broth
¾ cup packed brown sugar
⅛ cup white vinegar
2 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
¼ cup cornstarch
½ cup water

Steps:

  • Mix chicken broth, brown sugar, vinegar, soy sauce, sesame oil, chile paste, and garlic together in a small pot. Bring to a boil. Reduce heat to a simmer.
  • Dissolve cornstarch in water; add to the simmering mixture. Cook until sauce thickens, about 10 minutes.

3 ounces toasted sesame seeds
1/4 cup Japanese soy sauce
1/4 cup light olive oil
1 tablespoon vinegar (or lemon juice)
2 tablespoons water
1 garlic clove, crushed
1 1/2 teaspoons togarashi pepper (see note)
1 tablespoon chopped white onions or 1/2 teaspoon onion powder
1 cooked egg yolk (optional)

Steps:

  • Place all ingredients in a small blender.
  • Blend till smooth.
  • Note: Togarashi is a Japanese seasoning made of crushed red pepper and other condiments, blended into a powder. Red or black pepper may be substituted.
