Steps:
- Place the salmon fillets in a baking dish, sealable container, or zipped-top bag. Whisk the maple syrup, soy sauce, sesame oil, and garlic together in a medium bowl. Pour over the salmon fillets, coating them thoroughly. Cover the dish/seal the container or bag. Refrigerate for 15 minutes or up to 8-9 hours.
- Preheat oven to 375°F (191°C). Line a baking sheet with aluminum foil, parchment paper, or a silicone baking mat. Set aside.
- Line the marinated salmon fillets on the baking sheet and top each with sesame seeds. Hold onto the used marinade-see step 4. Bake the salmon for 15-20 minutes depending on thickness, about 10 minutes per 1-inch inch thickness measured from the thickest part of the fillet or until the thickest part reaches 145°F (63°C) internal heat. If desired (for crispier edges), broil the salmon on high for the last 3 minutes.
- Pour the used marinade into a small saucepan or skillet. Bring to a boil, then reduce heat to medium-low and simmer for 5 minutes.
- Remove cooked salmon from the oven. Garnish with chopped scallion and serve with thickened maple glaze.

Steps:
- Position a rack in the center of the oven and preheat the oven to 375ºF. Tear three pieces of foil that are slightly larger than the baking sheet, large enough to wrap the salmon in. Place one piece of foil on the baking sheet, followed by the second one going the other way (like a cross) and the last one going the same direction as the first. This will ensure none of the sauce leaks out.
- In a saucepan over medium heat, heat the oil and add the ginger and garlic and allow to sizzle for just 30 seconds, add the rice vinegar and soy sauce and allow the them to reduce for 30 seconds to a minute. Stir in the honey and remove from heat. Add the sesame oil and red pepper flakes.
- Place the salmon filet in the prepared foil, using a brush or spoon, brush the salmon with the sesame ginger sauce. Any remaining sauce can be poured around the salmon. Sprinkle with the toasted sesame seeds. Wrap the foil so all sides are properly closed so the sauce does not leak.
- Bake salmon for 12-14 minutes or until firm (see note). Open the foil, spoon the sauce surrounding the salmon onto the fish, place under the broiler on for the 1-3 minutes, keeping an eye on the salmon so it does not burn. Remove from the oven, if your sauce is a little liquidy, allow the fish to rest for just 5 minutes. This will allow the sauce to thicken a bit. Serve with sliced scallions garnished on top.

Steps:
- Preheat the oven to 350 degrees.
- Brush the salmon steaks lightly with some of the oil. Combine the two types of sesame seeds in a flat dish or pan and dredge the flesh side (not the skin side) in the sesame seeds and set aside. Combine the shallots, ginger, chili oil, sherry, broth and soy sauce in an oven-proof dish.
- Season the steaks with salt and pepper.
- Heat a saute pan over medium heat with the remaining canola oil and sear the salmon steaks on both sides to a golden brown, taking care not to burn the sesame seeds. Place the seared fish, sesame seeds up, on the seasoned shallots in the baking dish and put the salmon in the oven. Roast for 7 to 8 minutes for medium rare, or until the fish is cooked to your preference.
- Serve the roast salmon immediately with additional soy sauce, pickled ginger and chili sauce on the side.
