- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Whisk ale, flour, sesame seeds, cornstarch, and baking powder in a large bowl. The batter will be thick and slightly lumpy.
- Dip 7 to 8 strips of mushroom at a time into the batter, shaking off excess.
- Fry mushrooms in batches in the preheated oil until golden brown, 5 to 6 minutes.

- Remove & discard stems from the mushrooms. Combine the remaining ingredients in a small bowl.
- Brush both sides of the mushroom cap with the sauce mixture. Grill the mushrooms top side up on a covered grill over medium heat for 3-4 minutes.
- Brush the tops with more sauce mixture then turn over, cook another 2 minutes.
- Baste again then flip over. Continue to grill for another 4-5 minutes or until tender when pressed with a spatula.
- Remove from the grill then cut diagonally into 1/2 inch thick slices.

- Remove the stalks from the mushrooms and cut into pieces
- Over medium heat, saute garlic, ginger and the white parts of the green onion until fragrant
- Add in mushrooms and carrots and stir to combine
- Pour in the soy sauces, apple juice, sugar and water and mix thoroughly. Cover and simmer for 5 minutes or until the mushrooms have cooked down
- Remove from heat and stir in the remaining green onions and basil leaves, mixing well
- Dish and serve hot

- In a large and shallow baking dish, whisk all the marinade ingredients together. Taste and add more seasoning if desired (*note: the flavors will be concentrated).
- Add the mushrooms to the dish and liberally brush the marinade on all sides. You can also spoon it on. Let it sit for 10-20 minutes, flipping and brushing again midway through the marinating time.
- Heat a Grill, Grill Pan OR Skillet over medium-high heat. When fully heated, brush with oil and place the mushrooms on top (they should sizzle when they hit the pan). Don't move them once they are in the pan, just gently press down with a spatula or tongs. Give them a minimum of 4-5 minutes so they sear. Flip over and sear the other side, adding more oil if needed (you can also brush on more marinade). Grill until browned and tender about 4-5 minutes. Enjoy!
