100 g pork belly (skin removed and sliced)
5 large leaves of cabbage (washed, hand shredded and completely drained)
4 garlic cloves (sliced)
1 small chunk of ginger (sliced)
4 fresh Thai peppers (cut into small circles)
3 green onions (cut into small sections and separate green parts and white part)
1 tbsp. light soy sauce
1/4 tsp. salt
1/2 tsp. sugar
1/2 tbsp. sesame oil

Steps:

  • Spread a very little amount of oil in wok and fry the pork belly until cured and browned. Move them to one side of the wok.
  • Place garlic, ginger, scallion white and Thai peppers. Fry for half minutes until aromatic.
  • Add cabbage in, make a quick stir fry, then add light soy sauce, salt and sugar. Mix in sesame oil too. Serve hot.

Instead of throwing a bunch of garlic or even Cheetos into the coating, swap bread crumbs for a something that's probably already in your pantry. By crusting your pounded-thin pork with crushed sesame seeds and shallow-frying for just a few minutes, each bite of juicy pork has a snap and crackle racing through, in addition to deep sesame flavor. To cut through the richness, take a cue from pork tonkatsu and serve these with extra-crisp wisps of cabbage and lemon. With such a minimalist ingredient list and process, you might think you need to add a thing or two, but everything you need is right here.

6 cups finely shredded green cabbage
1 1/4 cups white sesame seeds
6 (5-ounce) slices boneless pork loin or boneless pork chops
Kosher salt
1½ to 2½ cups canola, vegetable or peanut oil
Lemon wedges, for serving

Steps:

  • Submerge the cabbage in a large bowl of ice water to crisp while you make the pork.
  • Place the sesame seeds in a large resealable plastic bag and pound using a rolling pin or skillet until coarsely crushed (alternatively, you can use a mortar and pestle). Transfer to a lipped plate or shallow bowl.
  • Working with one piece at a time, put the pork in another resealable plastic bag and pound using a rolling pin or skillet until it is 1/4-inch thick (don't skimp on this step; it's important that the pieces are thin). Transfer to a plate, salt lightly on both sides, then repeat until all pieces have been cooked.
  • Dredge the pork cutlets fully in the crushed sesame seeds.
  • In a large skillet over medium-high, heat 1/3 inch of oil until shimmering. Gently lay the cutlets in the pan, working in batches as necessary. Fry until golden brown on one side, 1 to 2 minutes, then flip and continue to cook until golden brown and cooked through, another 1 to 2 minutes. Transfer to a paper towel-lined plate and repeat until all pieces have been cooked.
  • Drain and dry the cabbage thoroughly (a salad spinner works well here). Serve each cutlet with a pile of cabbage, a squeeze of lemon over everything and more lemon wedges on the side. Season with salt to taste and serve at once.

2 pork chops
½ large head cabbage, quartered
2 onions, cut into 8 wedges
2 tart apples, cored and chopped

Steps:

  • Remove the pork and vegetable mixture from the skillet, leaving as much of the liquid in the skillet as possible. Whisk the water and flour together in a small bowl. Raise the heat under the skillet to medium-high. Pour the flour mixture into the remaining liquid in the skillet. Cook, stirring constantly, until the gravy thickens and begins to boil. Steps:

  • Make the Slaw:
  • Whisk mayonnaise, vinegar, Sriracha, sugar, and 1 tsp. salt in a large bowl. Transfer about 1/4 cup dressing to a small bowl; set aside.
  • Add cabbage and scallions to remaining dressing and toss to evenly coat. Season with remaining 1/2 tsp. salt. Cover and chill both the salad and dressing until ready to serve.

284 mL tin condensed chicken broth
1/3 cup oyster sauce
2 tablespoons low sodium soy sauce
2 teaspoons sesame oil
2 teaspoons cornstarch
1 1/2 tablespoons canola or vegetable oil (divided)
450g ground pork
1 medium onion (sliced thinly)
2 garlic cloves (minced)
1 tablespoon minced ginger
4 cups thinly sliced cabbage (about 1/4 of a medium cabbage)
2 medium carrots (peeled and sliced with a vegetable peeler into long strips)
1/4 cup water
227g package flat rice noodles
4 sprigs green onions (white and green parts, sliced)
2 tablespoons sesame seeds
2 teaspoons crushed red pepper flakes (optional)

Steps:

  • In a medium bowl whisk together the sesame stir fry sauce ingredients: chicken broth, oyster sauce, soy sauce, sesame oil and cornstarch. Set aside.
  • In a large wok or skillet heat ½ tablespoon of the oil over medium-high heat. Add pork and cook while breaking it up with a wooden spoon until browned and no pink remains. With a slotted spoon transfer the pork to a bowl.
  • Add remaining 1 tablespoon oil to the wok then add onion, garlic and ginger and cook for 2 minutes until the onion is just tender.
  • Add cabbage, carrots and ¼ cup water; toss to combine. Cover with a lid and cook for 2 minutes until the cabbage wilts slightly.
  • Return pork and any accumulated juices to the wok and toss to combine. Cover and cook for 4 minutes until the cabbage and carrots are tender.
  • Meanwhile, boil a large pot of water. Remove the pot from the heat and drop in the rice noodles completely immersing them. Soak noodles uncovered off the heat, for 4 - 5 minutes, no longer. Drain noodles in a colander, rinse well with cold water then immediately add them to the cabbage and pork mixture.
  • Whisk the sauce again and pour it into the wok and toss well to coat all the ingredients. Cook uncovered for 2 - 4 minutes over medium heat until the sauce bubbles, is glossy, thickened and most of it is absorbed. Stir in green onions and top with sesame seeds and optional crushed red pepper chili flakes.
