HONEY SESAME PORK TENDERLOIN
We love this variation of pork tenderloin. It's excellent served over rice. Delicious! The prep time does not include marinating, which is 2 hours. Enjoy!

Steps:
- Combine soy sauce, ginger, garlic and sesame oil.
- Place tenderloin in a resealable plastic food storage bag and pour the soy sauce mixture into it.
- Marinate for 2 hours in the refrigerator. **I do not recommend marinating this any longer than 2 hours - as the pork will become too salty tasting**.
- Preheat oven to 375 degrees.
- Remove pork from marinade and pat dry with a paper towel.
- Mix honey and brown sugar on a plate. (You could use a whisk if you're having trouble mixing these ingredients.).
- Place sesame seeds on another plate.
- Roll pork in honey mixture and then roll in the sesame seeds.
- Roast in a shallow pan for 20 to 30 minutes or until meat thermometer inserted into the thickest part registers 160 degrees.
- Suggested to serve over rice.

ORANGE SESAME PORK
Dry-roasted sesame seeds, often found in Chinese-inspired dishes like this one, add a rich nuttiness that teams well with pork. You'll be tempted to eat every bite, but save some to make Cook's-Choice Fried Rice (page 210).
Yield serves 4, 3 ounces pork per serving (plus 12 ounces pork reserved)
Number Of Ingredients 9
Steps:
- Preheat the oven to 425°F. Lightly spray a 13 x 9 x 2-inch baking pan with cooking spray.
- In a small bowl, stir together the vinegar, soy sauce, orange juice concentrate, garlic, and red pepper flakes.
- Tucking any thin ends under so they cook evenly, put the pork in the baking pan so the pieces do not touch. Pour the vinegar mixture over the pork.
- Roast for 10 minutes. Turn over. Roast for 10 to 15 minutes, or until the internal temperature registers 150°F on an instant-read thermometer or is slightly pink in the very center. While the pork cooks, if the sauce appears to be burning (it may in corners or in dark pans), tilt the pan and loosen and stir the thicker sticky substances. Add the water if needed.
- Meanwhile, in a small skillet, dry-roast the sesame seeds over low heat for about 2 minutes, or just until fragrant and golden, stirring frequently. Watch carefully so they don't get too brown. Pour onto a small plate.
- Transfer the pork to a cutting board. Let stand for about 10 minutes. The pork will continue to cook during the standing time, reaching about 160°F. Cut diagonally, making long, thin slices. Refrigerate half the pork (12 ounces) in an airtight container for use in Cook's-Choice Fried Rice. Transfer the remaining pork to plates. Spoon the pan juices over the pork. Sprinkle with the sesame seeds.

HOISIN SESAME PORK TENDERLOIN
This is the meal we have when I'm feeling completely lazy. It's so easy, I'm almost ashamed to post! The pork turns out so juicy and flavorful. We've added a small amount of grated ginger to the sauce, but really prefer it "plain."

Steps:
- Preheat oven to 400 degrees.
- Line a baking pan with foil.
- Put the tenderloin (s) into the baking sheet.
- Spread hoisin sauce over the pork tenderloin (s) rubbing the sauce into the meat lightly with your fingers.
- Sprinkle the toasted sesame seeds over the pork tenderloins, turning the tenderloin to cover completely.
- Roast in the middle of the oven for about 20 to 30 minutes.
- The shorter time will yield a slightly pinkish middle, the longer time will be more well-done.
- Serve with rice.
- Sauce can be thickened with cornstarch-- if there isn't enough juice from cooking the tenderloin, just add a bit of hoisin sauce and warm with the pork juices.

Steps:
- Pound the pork chops with a meat mallet or heavy skillet until about 1/4 inch thick; season with salt and pepper. Put the flour in a shallow baking dish. Whisk the eggs, 1/2 teaspoon sesame oil and a pinch each of salt and pepper in a second dish. Put the panko in a third dish. Working with 1 chop at a time, coat in the flour and then dip in the egg, shaking off any excess; firmly press both sides in the panko.
- Heat about 1/2 cup vegetable oil in a large nonstick skillet over medium-high heat until very hot (a breadcrumb should instantly sizzle in the oil). Working in batches, fry the chops, turning once, until browned and cooked through, 4 to 5 minutes. Transfer to a paper towel-lined plate to drain; season with salt. (Add more oil to the skillet between batches if needed to maintain a thin layer.)
- While the chops cook, whisk the vinegar, miso, 2 teaspoons vegetable oil and the remaining 1 1/2 teaspoons sesame oil in a large bowl until smooth. Add the greens, carrots and tomatoes and toss; season with salt and pepper. Serve with the pork chops.

ASIAN PORK TENDERLOIN
This is a simple and flavorful recipe. For best results, marinate the pork at least 8 hours (overnight is best) and flip it after 4 hours. It's great with rice and Asian veggies like bok choy! Enjoy!
