SESAME SEED COOKIES
Though these are reminiscent of the traditional Greek or Italian cookies of the same name, the recipes originates in the US south and traces its roots to Africa. Nutty toasted sesame seeds are included in the dough as well as serving as the crispy coating. They are now commonly served at Kwanzaa celebrations. I have not tried this yet but am posting for ZWT 3.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and anise extract until well blended. Sift together the flour, baking powder and salt; stir into the butter mixture until well incorporated. If you are using a stand mixer, let the dough mix for another minute to add lightness to the dough. The dough will be soft, but will hand roll easily.
- Pinch off pieces of dough slightly smaller than a walnut, and roll them into small logs. Dip in milk, then roll in sesame seeds. Place cookies one inch apart on a cookie sheet. Cookies will not spread very much.
- Bake for 17 to 20 minutes in the preheated oven, or until bottom and sides of cookies are lightly toasted. Remove from cookie sheets to cool on wire racks. Store in an airtight container at room temperature.

- Cut the butter into small cubes and keep them refrigerated until ready to use (I cut on parchment paper and wrap up the butter for easy transfer.).
- Wrap the logs tightly in plastic wrap and refrigerate until firm, at least an hour (you can put them in the freezer to speed up the process as well).
- Preheat the oven to 350°F (175°C). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Remove the dough from plastic wrap and cut into discs about ¼ inch (6 mm) thick (if you prefer thicker cookies, cut into discs about ½ inch (1.3 cm) and you get 20 cookies total).

- Once melted, take the pan off the heat and let the butter cool until it reaches room temperature again. Remove the star anise. Then add the eggs.
- Whisk well into a creamy mix. Sift the flour over a large mixing bowl and add the caster sugar, vanilla sugar, baking powder and a pinch of pepper and salt. Add the melted butter mix to these dry ingredients.
- Stir well until all the flour is fully incorporated. Add extra flour if necessary. The dough should still be a little wet and sticky. If you add too much flour the cookies will be too dry. Divide the dough into even portions. I made 1 oz (28 g) portions. Then roll the portions into balls.

- Make the dough: In a large bowl mix the sugar, the ground cinnamon, baking powder, the baking soda and salt. Add the olive oil, the orange juice, the raki (or grappa) and the cinnamon extract and whisk for one minute until the sugar is dissolved.
- Keep half cup of flour aside and add the rest 3 cups to the bowl. Mix until a soft dough is formed. Let the dough rest for 10-15 minutes and if it is sticky add the rest of the flour gradually until a soft, pliable dough is formed.
- Prepare the sesame coating: Put the sesame seeds in a fine sieve, rinse and drain. Add the one tablespoon sugar and mix well (this will help the seeds to stick on the cookies).
