NUT AND SESAME SEED STUFFED PANCAKES
These soft and chewy pancakes-inspired by atayef and Korean hotteok-are filled with nuts, sesame seeds, tahini, and grape molasses.

Steps:
- Make the dough: In a large bowl, combine both flours, the yeast, sugar, salt, oil, warm milk, and ¼ cup (2 fl oz. or 60 ml) water. Knead or mix with a spatula until everything comes together in a sticky dough. Cover and set aside to rise until doubled in size, 1-2 hours.
- Meanwhile, make the filling: In a food processor, combine the nuts and sesame seeds and pulse until coarsely chopped. Transfer to a small bowl, add the granulated sugar, brown sugar, tahini, date molasses, rose water, cinnamon, and salt and mix until everything comes together in a coarse paste.
- Oil your hands and divide the dough into 12 equal portions (about the size of golf balls) and place on an oiled tray. One at a time, flatten each ball until it's slightly larger than your palm and spoon a generous tablespoon of the filling into the center. Bring the edges together to seal each parcel into a ball.
- Pour a very thin layer of vegetable oil into a large frying pan and place over medium heat. When hot, place one ball and flatten it to a wide disc with an oiled spatula. Repeat until the pan is full. Cook until the bottom is golden brown, about 1 minute, then flip and continue to cook until the other side is a golden brown as well. Remove from the heat and serve while still warm.
CHINESE SCALLION PANCAKES
Unlike true pancakes, "Cong You Bing" (or Chinese scallion pancakes) are made from a dough instead of a batter. The tasty appetizers are the perfect "sponge" for mopping up extra sauce and can be made ahead of time for convenience. - Place flour in a large bowl; stir in boiling water until dough forms a ball. Turn onto a floured surface; knead until smooth and elastic, 4-6 minutes. Place in a large bowl; cover and let rest for 30 minutes., Divide dough into 8 portions; roll each portion into an 8-in. circle. Brush with 1/2 teaspoon sesame oil; sprinkle with 1 heaping tablespoon of green onion and 1/8 teaspoon salt. Roll into a thin cylinder (jelly-roll style); starting at one end, twist cylinder onto itself forming a coil, pinching to seal. Flatten slightly. Roll each coil to 1/8-in. thickness., In a large skillet, heat 1 tablespoon canola oil. Over medium-high heat, cook 1 pancake at a time until golden brown, 2-3 minutes on each side., Meanwhile, in a small bowl, combine sauce ingredients. Serve with pancakes.

- Split the spring roll sheets into 6 pieces.
- Put in the bean paste.
- Fold into triangles.
- Mix the egg and the plain flour.
- Put the pancake on one side and the sesame seeds all over the other.
- Fry for a couple of minutes.
- Serve hot.

CHINESE SESAME BREAD WITH SCALLIONS - KIRBIE'S CRAVINGS

- In a large bowl, add flour, sugar, oil, salt, water, yeast. Using the dough hook attachment of your stand mixer, combine ingredients until dough comes together and then knead on low speed for 2-3 minutes. The dough will be quite sticky. You can also do this by hand, which is how my mom did it.
- Lightly grease another large bowl. Gather dough and place into the greased bowl. Cover with plastic wrap and let the dough rest in a warm place until it doubles in size, about 1 hour.
- Lightly flour a large pastry board or flat surface. Roll dough out. Spread scallions across the surface. Then, roll the dough back up, with the scallions folded on the inside (see photos). Form the roll into a spiral. Carefully use the rolling pin on the spiral, rolling and flattening until it becomes a large round disc. (An alternative method: My mother's method was to grease a large plate and roll dough out with scallions directly onto the plate. This method works but you won't have as many layers.)
- Sprinkle both sides with sesame seeds, so that the exterior has a sesame crust. I used about 2 tbsp per side. Let dough rest for about 20 minutes.
