INSTANT POT RAMEN NOODLES

Instant Pot Ramen Noodles image

How to make gourmet or hacked Ramen noodles in your Instant Pot.

Provided by kelley

Time 20m

Number Of Ingredients 15

1 pound chicken, diced
1 tea garlic powder
1/2 tea salt
1 tea onion powder
1 tea ground ginger
1/2 tea pepper
2 table olive oil
3 cups chicken broth, low sodium
3 packages of Ramen noodles
1 cup frozen pea and carrot mix
1/2 cup baby corn
1/4 cup soy sauce, low sodium
2 tablespoons brown sugar
2 teaspoons sriracha sauce
chives for topping

Steps:

  • Turn on your sauté setting on. Add the oil to the pot. Then, add the spices to the chicken. Sauté the chicken for 3 minutes on each side. You just want to brown the chicken, not cook it all the way through.
  • Turn off the sauté function. Pour 1 cup of chicken broth into the pot and scrape off any browned bits from the bottom of the pot.
  • Put your lid on the Instant Pot, turn the valve to sealing. Then, set your cooker to manual pressure for 5-minutes. Then, do a quick release.
  • Remove the lid from your Instant Pot and turn the saute back on. Add the other 2 cups of broth and the Ramen noodles. Break apart the noodles and push them under the liquid to allow them to soften in the broth. Your water should boil after a few minutes and the noodles will become soft and easier to work with.
  • Once the noodles are soft, add the peas and carrots.
  • Add in the soy sauce, sriracha, and brown sugar. Stir to combine. Allow to simmer until sauce has thickened. Make sure to stir constantly so that your noodles don't stick to the bottom of the inner pot.
  • Finally, serve in bowls and garnish with chives. The sauce will continue to thicken as it cools.

  • Break the linguine in half and add it to the Instant Pot in a crisscross fashion. (NOTE: I know some will come after me for breaking pasta, but it needs to so it'll fit and cook evenly in the pot. Plus is makes more portions! I promise it'll still feel plenty long)
  • Add in the broth, sesame oil and soy sauce. Secure the lid and hit Manual or Pressure Cook at high pressure for 6 minutes. Quick release when done.
  • When the lid comes off the pot, it may appear a bit liquidy with some of the noodles clumped together. Have no fear! This is normal and will soon change. Grab a mixing spoon/spatula and stir for a few moments until the noodles becomes freed up and springy.

  • Add stock, mushrooms, scallions, garlic, and ginger to a programmable pressure multicooker (such as Instant Pot). (Times, instructions, and settings may vary according to cooker brand or model.) Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position. Select MANUAL/PRESSURE COOK setting. Select HIGH pressure for 40 minutes. (It will take 10 to 12 minutes for cooker to come up to pressure before cooking begins.)
  • When cooking cycle finishes, let the pressure release naturally for 10 minutes. Carefully turn steam release handle to VENTING position, and let steam fully escape (float valve will drop). (This will take 1 to 2 minutes.) Remove lid from cooker, and press CANCEL. Add kombu and bonito to stock in cooker. Let steep, uncovered, 15 minutes. Pour stock through a fine mesh strainer into a bowl. Reserve mushrooms for serving, and discard remaining solids.
  • Return strained stock to cooker, and select SAUTÉ setting. Select HIGH temperature setting, and bring stock to a gentle boil. Stir in tamari and mirin, and add chicken; cook, undisturbed, until a thermometer inserted into thickest portion of meat registers 165°F, 14 to 16 minutes. Remove chicken from stock; let cool slightly, about 5 minutes. Slice diagonally into 1/4-inch-thick pieces.
  • Divide cooked noodles evenly among 4 bowls. Spoon stock evenly into bowls; top with chicken, reserved mushrooms, eggs, sesame seeds, and additional chopped scallions.

  • Place the Instant Pot Liner inside the 6 quart Instant Pot and plug it in. Break 1 lb spaghetti or fettuccine into halves. Add these to the inner pot in a matted order or fan order. Check this you-tube from my channel to watch how I place my noodles in the IP. Add 4 cups of water and Pressure cook on high followed by QPR. For this recipe you want al-dente noodles. My packet read 8-10 minutes on gas top. I cooked for 3 minutes followed by QPR which takes about 2 minutes. Therefore the noodles get about 5 minutes in cooking including the pressure release time. Drain the spaghetti and separate the noodles with a fork. Set aside. Wipe the bottom of the Inner Pot with Kitchen Towel. Put it back inside the instant pot.
  • Press Saute and set on medium. When the screen displays HOT, add oil to it. After few seconds, add chopped garlic and saute for a 30-45 seconds till garlic brown nicely. Add bell peppers and saute further for 1 minute. Now add Soy Sauce, Vegetarian Hoisin Sauce-, Sriracha, Salt and Pepper. Give a good stir with a stirrer. Now add the cooked spaghetti (noodles of your choice) back to the pot. Add chopped scallions. Give it all a good toss using the tongs. Sprinkle sesame seeds and serve warm.

Cancel Saute. Add the spaghetti to the pot on top of the sauces. Add 4 cups of water/broth and Pressure cook on high for 4 minutes. Follow QPR. Open the lid. Separate the noodles with a fork. Add scallions and sesame seeds and toss together with tongs. Serve warm.
  • This recipe can easily be made on gas -top. Boil the pasta separately and drain. Saute the garlic and add sauces followed by boiled pasta. Toss it all together. If you are using any vegetables then you will add those after sauteeing the garlic. Finish with the garnish and serve hot.
