Time 18m

Number Of Ingredients 8

4 tablespoons oil
4 cloves garlic ((smashed and chopped))
A small handful of dried red chili peppers ((de-seeded and cut))
1¼ pounds mustard greens ((550g, thoroughly washed and cut into 1 cm long pieces))
1½ teaspoons sugar
1 teaspoon sesame oil
Salt to taste
½ teaspoon organic chicken bouillon ((optional))

Steps:

  • Heat the oil oil in a wok over medium heat. Add the garlic and chili peppers and cook for about a minute, being sure to avoid burning the garlic.
  • Now add the mustard greens, turning the heat up to the highest setting. Add the sugar, sesame oil, and salt (and organic chicken bouillon if using). Stir and mix everything well.
  • Cover the lid, and let it cook for about 45 seconds to a minute. Now uncover, stirring the greens one more time. Plate and serve immediately!

SAKE-BRAISED MUSTARD GREENS WITH SESAME RECIPE

Sake-Braised Mustard Greens with Sesame Recipe image

Use less-spicy kale instead of mustard greens if you prefer a milder side dish-or try a mixture of both.

Provided by The Wolf's Tailor, Denver, CO

Yield 8 servings

Number Of Ingredients 7

¼ cup toasted sesame oil
6 garlic cloves, thinly sliced
4 large bunches mustard greens or kale, ribs and stems removed, leaves torn into large pieces
½ cup sake or dry white wine
1 Tbsp. finely grated lemon zest
Kosher salt
Toasted sesame seeds (for serving)

Steps:

  • Pour oil into a large high-sided skillet, add garlic, and set over medium heat. Cook, stirring often, until garlic is barely golden, about 2 minutes.
  • Add a third of the greens to skillet and toss to coat with oil and garlic. Cover skillet with a lid and cook until greens are slightly wilted, about 2 minutes. Uncover skillet; add sake and another third of greens and toss to combine. Cover and cook until greens are slightly wilted, about 2 minutes, then add remaining greens. Cover and cook until slightly wilted, about 2 minutes. Remove lid from skillet, add lemon zest to greens, and continue to cook, stirring often, until greens are completely wilted and tender and most of the liquid has evaporated, about 2 minutes. Season with salt.
  • Transfer greens to a serving bowl and top with sesame seeds.

  • Wash and drain Chinese mustard greens thoroughly. Trim ½ inch off the end of the stalks. Cut the leaves into 2 or 3 bite size pieces, about 2 to 3 inches in length. Cut the stem pieces into half lengthwise. Stems and leaves should preferably be separated.
  • Bring a large pot of water to boil. Scald stems for about a minute. Remove and drain with a metal strainer. Scald the leaves for a shorter period of time. Remove and drain as soon as they turn a bright green color. Press out as much water as possible from the vegetables.
  • Heat a wok or large pan. When it is hot, add vegetable oil. Sauté garlic for 30 seconds. Add imitation crab meat and fry for 1 to 2 minutes.
