SESAME LACE COOKIES

Inspired by Italian Florentine cookies, sesame lace cookies are nice and thin with a buttery toffee flavor. These cookies come together in a pinch for stress-free holiday baking!

Number Of Ingredients 10

1 c sesame seeds (white, black, or a mix of both)
1/4 c all-purpose flour
1/2 tsp salt
1/4 c white sugar
1/4 c brown sugar
2 tbs heavy cream
2 tbs honey
1/3 c unsalted butter
1 tsp vanilla extract
8 oz dark chocolate (chopped)

Steps:

  • Preheat oven to 350°F. Line two sheet pans with parchment paper.
  • In a medium bowl, stir together sesame seeds, flour, and salt. Set aside.
  • In a small saucepan, combine the white sugar, brown sugar, heavy cream, honey, and unsalted butter. Bring to a boil, stirring frequently. Let boil for 2 minutes, until sugar is completely dissolved. Remove from heat and stir in the vanilla extract. The mixture will bubble.
  • Pour the butter-sugar mixture over the sesame mixture, using a rubber spatula to fold everything together. Let cool for about 10 minutes.
  • Scoop the sesame cookie dough using a standard .75oz cookie scoop or spoon. (For smaller cookies, use a teaspoon). Space the cookies about 3 inches apart, because they will spread significantly.
  • Bake on the center rack of your oven for 8-9 minutes, rotating the pans halfway through, until the mixture is no longer bubbling and the cookies are a caramel-y golden brown.
  • Let the cookies cool for 5-6 minutes on the sheet pan, or until they are stiff and slightly cooled. Using a thin spatula or butter knife, transfer to a wire rack to cool completely. Repeat with the remaining cookie batter.
  • Meanwhile, melt the chocolate. Add a couple of inches of water to a pot and bring to a simmer. Pour the chopped chocolate into another similar-sized pot or heatproof bowl, and place over the simmering water. Stir the chocolate until smooth and completely melted. Alternatively, you can microwave the chocolate in a heatproof bowl at 50% power in 30-second increments, stirring in-between, until melted. Let the melted chocolate cool for a few minutes.
  • With a small offset spatula or butter knife, spread about half a Tablespoon of melted chocolate on the bottom of each cookie. Place the cookies chocolate-side up on a parchment-lined cookie sheet and use the tines of a fork to create a wavy decoration. Alternatively, you can place the cookies chocolate-side down on a parchment-lined sheet so the chocolate seeps through the holes of the cookies. Let the chocolate set completely.
  • Place the cookies in an airtight container with parchment paper in-between each layer. Leave at room-temperature to prevent the chocolate from melting. Cookies will last for several weeks.

These Florentine lace cookies are simple to make and gorgeous to look at. This cookie technique is versatile and adaptable to any kinds of nuts or chocolate. They also keep pretty well so they're perfect if you're looking for an idea for an edible holiday gift for any cookie lover on your list--just stack them up in a box and tie them with a bow!

1 ½ cups whole raw almonds
½ cup unsalted butter
¾ cup light brown sugar
¼ cup honey
½ teaspoon vanilla extract
1 pinch salt
3 tablespoons all-purpose flour
1 cup semisweet chocolate chips, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Place almonds into the bowl of a food processor; alternate pulsing and running at full speed every few seconds until finely chopped and crumblike. Be careful not to go too far; you don't want them too fine and pasty.
  • Combine butter, brown sugar, and honey in a saucepan over medium heat. Stir a few times and cook until melted and dissolved. Bring to a boil, then carefully remove from the heat.
  • Add vanilla extract, salt, and flour, and whisk until smooth. Add chopped almonds and mix with a spatula until everything is combined.
  • Drop eight uniformly sized, rounded spoonfuls of batter (each about 2 teaspoons, or 15 grams) onto the prepared sheet. Fine-tune the cookie shapes and make sure they are evenly spaced.
  • Place in the center of the preheated oven and bake until golden brown and a bit darker around the outsides, 10 to 12 minutes, rotating the pan halfway through.
  • Remove from the oven and slide the silicone liner off the baking sheet and directly onto the countertop. Allow to sit until cool and crisp, 3 to 5 minutes, then gently peel cookies off the liner. Repeat to bake remaining batches.
  • Spread melted chocolate over the flat side of one cookie. Place a second cookie, flat-side down, on top to make a sandwich and press very gently to seal. Repeat to form remaining cookies. Let sit until chocolate has firmed up, about 30 minutes.

How to make traditional Korean tea cookie (Dasik) for Lunar New Year's. Cookies are made from finely ground sesame seeds, green tea powder and more. Great melt-in-your-mouth cookie that is simple to make and pairs wonderfully with green teas.

1 cup roasted sesame seeds ((110 g / 4 oz) or 1/2 cup sesame seed powder (white or black sesame seeds))
1/8 tsp sea salt or more to taste
1/2 cup rice syrup ((조청 jocheong))
3/4 cup honey
1/2 cup sugar ((7 oz / 100 g))
2 Tbsp water

Steps:

  • If your sesame seeds are not roasted, roast your sesame seeds in pan for 3-5 minutes on medium heat. Stirring often so they don't burn.
  • Melt sugar and water in a pot on medium heat. Once sugar is all melted, add honey and rice syrup. Raise heat to medium high and stir often and bring to boil. Turn off heat and let it cool. Do not over cook
  • Finely grind sesame seeds in a blender. The longer you blend, the finer it will be.
  • In a bowl, add the sesame seed powder and sprinkle sea salt on top.
  • Add 1 Tbs + 1 tsp of the honey syrup to 1/2 cup sesame seed powder and mix well. It should become pretty lumpy and hold shape when you form it in your hand. Similar to play-doh consistency.
  • Take a little bit of the dough and roll into a ball. Raise the mold by inserting the bar so the dough can be pressed into the mold.
  • Press the ball into each mold and make sure it is filled to the top to be flush with the frame.
  • Once the molds are filled, take out the spacer and push the upper frame down.
  • The cookies will now stick out (protrude) from the mold and you can gently remove each cookie.

½ cup butter
¾ cup white sugar
1 egg, beaten
1 cup quick cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
  • Drop teaspoonfuls of dough onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

Steps:

  • In a 1- to 1 1/2-quart heavy saucepan bring confectioners' sugar, butter, honey, and water to a boil over moderate heat, stirring, and boil 1 minute. Remove pan from heat and stir in sesame seeds, flour, and a pinch salt until mixture is combined well. Cool dough to room temperature. Form and bake cookies as directed below.
  • To form and bake lace cookies:
  • Preheat oven to 350°F and line 2 large baking sheets with parchment paper.
  • Roll level 1/2-teaspoons dough into balls and arrange 4 inches apart on baking sheets. Bake cookies in batches in upper and lower thirds of oven, switching position of sheets halfway through baking, 10 minutes, or until cookies are flat and golden. Transfer parchment with cookies to racks to cool. Cool baking sheets and line with fresh parchment between batches.

Steps:

  • Preheat the oven to 350 degrees. Line baking sheets with Silpats or parchment paper, and set aside.

To form ice-cream cones, shape warm cookies around a cone-shaped dowel, and place upright in a tall glass to cool. For flat cookies, transfer from baking sheet to a wire rack to cool.
