CREAMED ONIONS AND PEAS
This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Steps:
- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

GLAZED PEARL ONIONS

- Combine 1 pound frozen pearl onions, 1 cup chicken broth and 2 tablespoons each molasses, cider vinegar and butter in a skillet; season with salt and pepper. Simmer, stirring occasionally, until reduced to a glaze, about 20 minutes. Sprinkle with chopped parsley.
SESAME SNAP PEAS

- Cook 1 pound sugar snap peas (strings removed) in a steamer basket set over a pot of boiling water, covered, 3 minutes. Transfer to a bowl and toss with 1 tablespoon minced shallot, 2 teaspoons each sherry vinegar and sesame oil, and 1 teaspoon each grated ginger and kosher salt.
GLAZED SUGAR SNAP PEAS AND TURNIPS
Steps:
- Boil 3/4 pound sugar snap peas in salted water, 3 minutes. Add 2 bunches thinly sliced baby turnips; cook 2 minutes, then drain. Cook 1 sliced onion and 1 chopped garlic clove in butter until soft. Add the vegetables, 1 tablespoon sugar, and salt and pepper; cook until glazed. Top with chopped parsley. Serve with lemon wedges.

I love sugar snap peas and I toss them into all kinds of dishes but this is a way to have them as a side dish. I think the Tarragon compliments them nicely.

- Melt butter in a medium saucepan and add onion.
- Cook over medium heat, stirring occasionally, until onion is softened but not transparent (about 2-3 minutes).
- Add remaining ingredients (EXCEPT PEA PODS) and bring mixture to a boil.
- Reduce heat to a medium heat and add Pea pods.
- Cook until vegetables are tender (about 1-2 minutes) and heated through or to desired crispness.
- NOTE: If you remove pea pods from freezer before you get started and let them sit on counter in package, they will defrost just a little and cooking time may shorten slightly.

GLAZED CARROTS, PARSNIPS AND PEARL ONIONS

- In a medium hot skillet, add 1/2 tablespoon of butter and cook the garlic and ginger until soft, about 1 minute. Add the carrots, parsnips and onions and season. Cook 5 minutes to soften then add the stock, soy sauce and simmer. Reduce by 50 percent, about 12 to 15 minutes and check for seasoning. Lift with the butter and reserve hot.
