Sesame-Crusted Steaks With Buttermilk-Horseradish Sauce image

Tangy buttermilk, cool sour cream and the distinct flavor of horseradish combine to make a unique sauce for sesame-crusted steak. Be sure not to use thick-cut steaks for this (unless you like your steak really rare) because the sesame seeds will burn before the steak gets cooked through. 4 boneless sirloin steaks
salt & freshly ground black pepper
1/3 cup sesame seeds
1 tablespoon olive oil
1/2 cup buttermilk
1/2 cup sour cream
2 tablespoons prepared horseradish
1 teaspoon Dijon mustard
1 teaspoon minced fresh chives
salt & freshly ground black pepper

Steps:

  • Season the steaks all over with salt and pepper. Press the sesame seeds into both sides of the steaks.
  • Heat the oil in a large skillet over medium-high heat until hot, 1 to 2 minutes. Add the steaks and cook for 3 to 5 minutes per side for medium doneness. Remove from the heat and let stand for 5 minutes before serving.
  • Meanwhile, in a medium bowl, whisk together the buttermilk, sour cream, horseradish, mustard, and chives. Season with salt and pepper.
  • Serve the steaks with the sauce spooned over the top.

This is a really easy recipe but very popular at my house. I love seame seeds and sesame flavor so it's been a keeper for us for years!

1/2 cup vegetable oil
1/3 cup sesame seeds
4 medium onions, thickly sliced
1/2 cup soy sauce
1/4 cup lemon juice
1 tablespoon sugar
1/4 teaspoon cracked pepper
2 garlic cloves, crushed
2 1/2-3 lbs boneless beef top sirloin steaks, cut 1 1/2 inch thick

Steps:

  • About 5 hours before serving or early in the day, heat vegetable oil in 10" skillet over medium-high heat. Cook sesame seeds in hot oil until golden, stirring grequently. In large zipper lock bag, mix well, sesame seed oil mixture, onions, soy sauce, lemon juice, sugar, pepper and garlic. Trim any excess fat from steak; place steak in marinade, turning to coat both sides. Refrigerate at least 4 hours, turning steak occasionally. About 45 minutes before serving, preheat grill. Grill for 25 minutes for rare. Brush often with marinade; turn steak once.

Broiled Salmon Steaks with Horseradish Crust image

two 3/4-inch-thick salmon steaks
2 tablespoons unsalted butter, melted
1/4 cup dry white wine
1/2 cup coarse dry bread crumbs
2 tablespoons well-drained bottled horseradish
1 scallion, minced

Steps:

  • Arrange the salmon steaks in a buttered flameproof baking dish just large enough to hold them in one layer, brush them lightly with some of the butter, and season them with salt and pepper. Pour the wine around the steaks and broil the steaks under a preheated broiler about 4 inches from the heat for 4 to 5 minutes, or until they are almost cooked through. While the steaks are cooking, stir together well the remaining butter, the bread crumbs, the horseradish, and the scallion, pat the crumb mixture evenly on the steaks, and broil the steaks for 2 to 4 minutes more, or until they are just cooked through and the crumbs are golden.

1/2 cup soy sauce
1/2 cup dry white wine
1/2 onion, chopped
3 tablespoons chopped fresh rosemary
2 tablespoons olive oil
2 garlic cloves, chopped
1 2-pound flank steak, trimmed
SAUCE
1/2 cup sour cream
1 tablespoon plus 1 teaspoon prepared horseradish
2 green onions, chopped
Romaine lettuce leaves

Steps:

  • FOR STEAK: Combine first 6 ingredients in glass baking dish. Add steak and turn to coat. Cover and marinate overnight, turning occasionally.
  • FOR SAUCE: Mix first 3 ingredients in small bowl. Season with generous amount of pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Prepare barbecue (high heat). Drain steak. Pour marinade into small saucepan and boil 1 minute. Season steak with generous amount of pepper. Grill to desired doneness, basting occasionally with marinade, about 6 minutes per side for rare. Transfer steak to plate and let stand at least 15 minutes. (Can be prepared up to 2 hours ahead.) Cut steak across grain into thin diagonal slices. Line platter with romaine leaves. Top with steak. Serve warm or at room temperature with horseradish sauce.

This is a grill recipe my wife and I have been making for over 30 years. The sesame flavor is fantastic, and the London broil comes out tender as can be. Turn it twice per side to get the diamond-shaped grill marks and people will rave!

½ cup sesame oil
⅓ cup sesame seeds
4 yellow onions, sliced
½ cup soy sauce
¼ cup lemon juice
1 tablespoon sugar
2 cloves garlic, crushed
¼ teaspoon whole black peppercorns
1 (2.5 pound) London broil steak

Steps:

  • Heat sesame oil in a skillet over medium-high heat. Cook and stir sesame seeds in hot oil until golden brown, about 1 minute. Transfer seeds and oil immediately to a large glass or ceramic baking dish.
  • Stir onions, soy sauce, lemon juice, sugar, garlic, and peppercorns into sesame mixture until marinade is evenly combined. Place steak into marinade, turning to coat all sides. Cover baking dish with plastic wrap and refrigerate, turning steak often, for at least 4 hours or up to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook the steak on the preheated grill until meat starts to firm and turns reddish-pink and juicy in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium rare. Transfer steak to a plate, cover with aluminum foil, and let rest for about 10 minutes. Slice across the grain.
