HOMEMADE SESAME SNAPS

Homemade Sesame Snaps image

This a healthier, homemade sesame snaps recipe that uses all natural ingredients. Enjoy as a snack or a little treat. These are gluten-free, nut-free, paleo and vegan-friendly (replace honey with maple syrup or extra rice syrup).

Provided by Irena Macri

Categories     Snack

Time 22m

Number Of Ingredients 7

1/2 cup sesame seeds
1/4 cup pumpkin seeds/pepitas
1/4 cup desiccated coconut, unsweetened
2 tablespoons brown rice syrup
1 tablespoon honey (or maple syrup)
1/2 tablespoon melted coconut oil
1 teaspoon vanilla essence/extract

Steps:

  • Preheat the oven to 150 C / 300 F.
  • Thoroughly combine all ingredients in a bowl with a spoon, pressing down the mixture against the sides.
  • Measure out a piece of parchment/baking paper to fit a medium flat baking tray (about 40cm x 30cm) and place it on a cutting board or flat surface. See step-by-step pics above.
  • Scoop the mixture into a ball and transfer to the middle of the sheet. Spread into an oval shaped pancake, pressing down with the back of the spoon. Make sure there are no visible holes. Then place another piece of parchment paper over the top and press down with your hands, until the pancake flattens. Make sure not to break it.
  • Using a rolling pin, flatten the mixture into a thin layer. Press and roll the pin over the top starting from the middle in different directions, making sure the mixture doesn't spread beyond the parchment paper. We're after 2-3mm thickness - but don't worry if it's a little thicker.
  • Carefully slide the paper with the snap layer onto a baking tray. Peel off the top piece of paper very carefully, patching up any little holes that might appear.
  • Bake in the oven, middle shelf, for 10-12 minutes, until golden brown. Keep an eye on it as the mixture does cook quickly and can burn easily. It should be golden brown.
  • Remove from the oven and cool completely. If it's cold outside, put the tray out in the cold air.
  • Once completely cooled, break into rectangular snap pieces. Keep in an airtight container for up to two weeks.

Provided by Shannon Lim

Categories     Baking

Time 40m

Yield 8

Number Of Ingredients 6

25g Egg White (about 1 medium egg at room temperature)
30g Brown Sugar
30g All-Purpose Flour (I use 15g rice flour & 15g tapioca starch for gluten free recipe) - sift flour twice
20g Butter - melted
80g White Sesame Seeds - toasted
10g Black Sesame Seeds - toasted

Steps:

  • Preheat oven at 170°C and line baking tray with grease proof baking paper.
  • In a mixing bowl, whisk egg white (with a hand whisk) until you see white bubbles. Add in sugar and beat in circular movement until the sugar dissolves.
  • Stir in melted butter and mix well.
  • Add in flour and mix till no traces of flour and lump-free.
  • Add in toasted sesame seeds, use a spatula to fold in until the mixture is well combined. You will find the mixture is dry and sticky. That's the correct texture you need.
  • Spoon ? or ½ tablespoon of mixture on the baking tray. Spread out into a round shape (about 2cm diameter) using a fork. Dip fork into water to wet it for easier spreading of the sesame mixture.
  • Bake at 170°C for 8-10 minutes or until golden brown and crispy. Rotate the baking tray towards the last 2 minutes.
  • Remove from the oven, leave to cool and then store into an air-tight container.

HOMEMADE MULTI-SEED CRACKERS

Homemade Multi-Seed Crackers image

Turn leftover brown rice and quinoa from dinner or meal-prepping into these delicious crispy crackers that are loaded with three good-for-you seeds--and create an everything-bagel flavor, without the bagel. The whole grains that make up this copycat cracker recipe add lots of fiber for a healthy snack that pairs perfectly with hummus or cheese.

Provided by Carolyn Casner

Categories     Healthy Vegetarian Rice Recipes

Time 1h

Number Of Ingredients 9

1 cup cooked brown rice, at room temperature
1 cup cooked quinoa, at room temperature
¼ cup sesame seeds
¼ cup flaxseeds
¼ cup sunflower seeds
2 tablespoons reduced-sodium tamari
2 tablespoons water
¼ teaspoon salt
¼ teaspoon ground pepper

Steps:

  • Place oven racks in upper and lower sections of the oven. Preheat to 350 degrees F. Cut 3 pieces of parchment paper the size of a large baking sheet.
  • Place rice, quinoa, sesame seeds, flaxseeds, sunflower seeds, tamari, water, salt and pepper in a food processor. Process until finely chopped and coming together in a ball. The dough will be sticky.
  • Divide the dough in half. Place 1 piece of dough between 2 sheets of the prepared parchment paper. Roll out as thin as possible. Remove the top sheet of parchment and place the dough with parchment on a baking sheet. Repeat with the remaining dough and prepared parchment.
  • Bake for 15 minutes. Switch the position of the baking sheets and continue baking until dark around the edges and crisp, 12 to 15 minutes more. Remove from oven and carefully break into roughly shaped crackers. If some crackers aren't fully crisp, return them to the oven and bake for 5 to 10 minutes more.

SESAME CRACKERS - THIN AND CRISPY

Sesame Crackers - Thin and Crispy image

Provided by Victor

Categories     Snack

Time 2h

Number Of Ingredients 8

1 1/2 tsp active dry yeast ((7 g; see notes))
1 3/4 cups warm water ((420 ml, 105° to 115°F))
1 Tbsp diastatic malt or honey ((15 ml))
1/2 oz kosher salt ((15 g))
2 ½ Tbsp Asian sesame oil ((40 ml))
6 oz whole wheat flour ((170 g))
20 oz bread flour ((568 g))
1/2 lb sesame seeds ((228 g; a mixture of black and white))

Steps:

  • In the bowl of an electric mixer, dissolve the yeast and the honey in the warm water. Let it sit for 10-15 minutes, until the yeast activates and a foam cap forms.
  • Mix in the salt and the sesame oil. Using the dough hook attachment, incorporate the whole wheat flour and all but a handful of the bread flour. Knead until a smooth, elastic dough develops. Keep adding more flour if necessary. Incorporate the sesame seeds. Remove the bowl from the mixer, cover and place in a warm place for 1 hour to proof.
  • Cut the dough into 4-6 pieces. Flatten each piece with your hands or a roller to about ¼ - inch thick. Cover the dough pieces with a piece of plastic wrap and let relax for 15 minutes. Roll each piece out to #6 setting on the KitchenAid pasta roller attachment, which is about 1/64 inch or about 0.5 mm thick (see notes).
  • Lay the rolled out dough on a large baking sheet lined with parchment paper. Cut the dough sheets into crackers of the desired size and shape. Large triangles or wedges work particularly well. Bake immediately (do not let them rise, or the crackers will be thick instead of thin and crisp) at 375°F (190°C) until deep golden brown (see notes). Rolled out to #6 they need 14-15 minutes of baking.
  • Store in airtight containers.

  • Add the sesame seeds to a heavy bottom pan. Roast on medium heat for 5 mins until they are light brown and aromatic. Take out the sesame seeds in a bowl and keep them aside.
  • In the same pan, add sugar and ghee. Stir in cardamom powder and salt. Cook on medium-low heat stirring frequently, until the sugar melts completely. Initially, the sugar will start to crystalize, keep mixing and breaking up the lumps as it then slowly start to melt to form syrup. Keep stirring all the time during the process. Takes about 6 to 8 minutes.
  • Once the syrup is ready, turn the heat to low and add the roasted sesame seeds and quickly mix them in.
  • Quickly and carefully pour the mixture on a parchment paper-lined surface. Spread it as thin as you can using a clean silicon spatula and by patting it to form an even layer while it's hot. Do not wait too long as the mixture will start to harden, it is easier to spread the mixture into a thin layer while it’s hot.Tip – You can also use a rolling pin to roll it thin. Just make sure that you apply lots of ghee or oil to the rolling pin so the mixture does not stick to it. Once again this step has to be done rather quickly as you want to cut it into pieces while it’s still warm.
