Number Of Ingredients 6

1 pound (4 sticks) unsalted butter, room temperature
1 1/2 cups sugar
3 cups all-purpose flour
2 cups shredded sweetened coconut
1 cup sesame seeds
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 300 degrees. Line baking sheets with Silpats (French nonstick baking mats).
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add flour a half cup at a time, mixing on low speed until well combined.
  • Remove bowl from mixer; with a wooden spoon or your hands, stir in coconut, sesame seeds, and pecans. Divide dough into thirds. Roll into logs about 1 1/2 inches in diameter. Wrap each log in plastic, and refrigerate until very firm, about 2 hours.
  • Using a sharp knife, cut logs into 1/4-inch-thick slices. Transfer to prepared baking sheets, about 1 1/2 inches apart. Bake until edges are golden, 20 to 30 minutes. Transfer sheets to a wire rack to cool. Cool for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely.

Provided by Food Network Kitchen

Categories     dessert

Yield Makes: 5 dozen cookies

Number Of Ingredients 10

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 cup granulated sugar
1/3 cup light brown sugar
1/4 cup tahini (ground sesame paste)
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup sesame seeds, white, black or a combination of both

Steps:

  • Whisk the flour, baking powder and salt together in a medium bowl. Set aside.
  • Beat the butter and sugars in a large bowl using an electric mixer until well combined, about 3 minutes. Add the tahini, vanilla and egg and beat until light, about 3 minutes. Stir in the flour. Form the dough into two 12-inch logs that are 1 1/2 to 2 inches in diameter, wrap in plastic wrap and refrigerate until very firm, 4 hours and up to overnight.
  • Preheat the oven to 325 degrees F. Line two or three baking sheets with parchment paper.
  • Remove one log of dough from the refrigerator and slice into 1/4- inch-thick slices. Place the sesame seeds on a plate. Coat the cookies in sesame seeds by pressing them lightly into the seeds, and place them on the prepared baking sheets. Bake until lightly golden around the edges, about 12 minutes, rotating the baking sheets top to bottom and front to back halfway through cooking. Cool the cookies on the baking sheet for 10 minutes, and then transfer to a rack to cool completely. Repeat with the remaining log.

VEGAN SESAME TAHINI COOKIES (GLUTEN FREE)

Vegan Sesame Tahini Cookies (Gluten Free) image

Vegan Sesame Tahini Cookies (Gluten Free): just 7 ingredients for the best vegan tahini cookies-buttery-rich, crisp sesame coating, tender on the inside. Delicious sesame tahini cookies that are gluten free!

Provided by Demeter | Beaming Baker

Categories     Desserts

Time 37m

Number Of Ingredients 9

½ cup unsalted tahini
½ cup natural, unsalted creamy almond butter
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
¼ cup + 3 tablespoons coconut sugar
2 tablespoons coconut flour
¾ teaspoon baking soda
½ teaspoon pure vanilla extract (optional)
¼ teaspoon salt (optional)
¼ cup sesame seeds

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a medium bowl, add all ingredients except sesame seeds. Using a rubber spatula, stir and fold until thoroughly mixed.
  • Pour sesame seeds into a shallow bowl. Using a medium cookie scoop, scoop and roll cookie dough into balls. Drop each ball into the bowl of sesame seeds. Roll and press until all dough balls are fully coated in seeds.
  • Place cookie dough balls onto the baking sheet, spaced evenly apart, with enough room to spread quite a bit-these cookies will bake up big. Using the palm of your hand or a spoon, gently flatten cookies to desired thickness. If desired, press together any large cracks that form around the edges of cookies-some cracks are natural & pretty!
  • Bake for 10-14 minutes. Mine took 12 minutes. Place cookie sheet on a cooling rack, and allow cookies to cool directly on the sheet for 15-20 minutes-do not remove from sheet for at least 15 minutes, as cookies are fragile. Then, using a spatula, gently transfer cookies directly onto the cooling rack to cool for about 30 minutes, or until completely cooled. Enjoy! Storing notes below.

  • In a large bowl, cream butter and sugar. Beat in vanilla and salt. Add flour gradually by 1 cupful to the creamed mixture. With a wooden spoon, stir in the coconut, sesame seeds, and almonds. I also used my hands to thoroughly incorporate everything well.
  • Divide the dough into three 10-inch rolls, wrapping each roll in plastic wrap. ***I found the easiest way to do this is to divide the dough into thirds inside your mixing bowl and transfer each third onto the plastic wrap and as you wrap the dough in plastic wrap, use your hands to form it into a 10-inch roll.***
  • Chill the dough for 1-2 hours in the refrigerator. You can also prep the dough up to one day in advance and refrigerate overnight.
