CHICKEN TORTELLINI SALAD RECIPE
This pasta salad with chicken and fresh vegetables makes a quick and delicious summer dinner and an even better lunch for the next day. Get a jump on meal planning and prep this recipe a day in advance. Make and refrigerate the basil vinaigrette (shake it well before dressing the salad). Mix the tortellini, shredded rotisserie chicken, tomatoes, black-eyed peas, and corn in a large bowl; cover and refrigerate. When you are ready to serve the salad, dress the tortellini mixture with the dressing, stir in arugula, and top with toasted pecans. Get in the habit of toasting nuts every time you use them; toasting adds a depth of flavor and a wonderful aroma, as well as improving the texture of nuts so they stay crisp on top of salads or baked into breads and cookies. Toast several cups of nuts at one time, store in freezer-safe containers in the freezer, then pull out the amount you need when cooking. This salad recipe works well with whatever vegetables you have in your refrigerator or garden. Zucchini and yellow squash, bell peppers, heirloom tomatoes, and blanched snow peas are delicious dressed with the basil vinaigrette; just use your imagination. If arugula isn't available, use baby spinach leaves, instead. Keep a bottle of the basil vinaigrette in the refrigerator this summer and, along with dressing your favorite greens use it over grilled chicken and fish.

- Prepare the Vinaigrette: Combine all of the dressing ingredients in a large jar or measuring cup. Shake (or whisk) until completely combined. Set aside.
- Prepare the Chicken: Season chicken with salt and pepper on all sides, to taste. Heat olive oil in a large skillet over medium heat. Place chicken in the skillet and allow the chicken to cook on one side, undisturbed, for at least 6-7 minutes. Flip, and cook the chicken for about 6-8 more minutes, or until it is nicely browned on both sides and cooked through.
- The chicken is cooked through when the internal temperature reaches 180 degrees F, or when juices run clear.
- When the chicken is cooked through, remove it from the skillet and place it on a cutting board to rest.
- Prepare the Tortellini: Cook the tortellini in a large saucepot according to package instructions. Drain.
- While the tortellini cooks, dice the chicken into bite-size pieces.
- Assemble the Salad: In a large bowl, gently combine diced chicken, cooked tortellini, spinach, onion, tomatoes, cucumbers, olives, and feta cheese. Pour about ¼ cup vinaigrette over the salad (or more, to taste). Reserve remaining vinaigrette.*
- Cover and refrigerate salad until ready to serve. You can prepare this dish up to 1 day in advance. Stir in the chopped fresh basil just before serving.

SESAME CHICKEN TORTELLINI SALAD

- Cook the chicken breasts by air-frying, grilling, sautéing or poaching. (To poach, bring a saucepan of water to a boil. Season generously with salt and then add the chicken breasts. Let the pot return to the boil and then cover and turn off the heat. Let the chicken sit in the water for 20 minutes and then remove, transfer to a cutting board and let them cool.)
- Bring a large stockpot of salted water to the boil. Add the tortellini and cook for 1 minute. Add the snow peas to the pot with the tortellini and boil for an additional 2 minutes. Drain the tortellini and snow peas together, rinse with cold water and transfer to a large bowl.
- Cut the cooled chicken up into ½-inch cubes. Cut the pepper into 1- to 2-inch pieces.
- Make the sesame ginger dressing by whisking the sugar, rice wine vinegar, soy sauce and fresh ginger together. While whisking, drizzle in the sesame and vegetable oils until the dressing thickens slightly.
- Add the chicken, peppers and water chestnuts to the tortellini and snow peas. Add the dressing and toss to coat. Season with freshly ground black pepper and add the toasted sesame seeds. Chill until ready to serve.

- Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. GRILLED SESAME CHICKEN SERVED WITH TORTELLINI ALFREDO AND TORTELLINI TERIYAKI

- Preheat the oven to 300 degrees F. Preheat the grill
- In a bowl, combine the coriander, cumin, ginger, mustard, cinnamon, salt, and pepper to make a blend. Sprinkle the blend on 1 side of the tenders. On a flat surface, create 2 sections ¿ one for black sesame seeds, the other for the white sesame seeds. Coat half of one half of the unseasoned side of the tender with the black seeds, and the other half with the white seeds. Rub the grill or grill pan with oil so as not to stick. Grill the chicken on the seasoned side ¿ NOT the seeded side. Finish in the oven for 8 minutes.
- Place 2 chicken strips in a line, end to end, in the center of the plate. Place 2 more chicken strips on either side of the line, in the center, to form a large cross on the plate. Place the tortellini in between the chicken, alternating teriyaki and alfredo. Serve.
- In a medium sized pot, over medium heat combine the teriyaki sauce and the sugar. Reduce it by 1/2, then add the butter and mount the sauce to create a sheen. Toss the cooked pasta with 2 tablespoons of the sauce, or until desired coating is achieved.;
- In a medium sized pot, over medium-high heat combine the cream and the garlic. Reduce this mixture by half and add the cheese. Turn heat to low and let the cheese melt, but DO NOT LET THIS SEPARATE. Season with salt and freshly ground pepper to taste. Toss with pasta and serve.

- Combine syrup, soy and sweet hot mustard in a bowl. Season chicken tenders with salt and pepper on both sides. Add chicken tenders to 1/2 of the marinade and coat. Set aside. Reserve the remaining 1/2 for dressing.
- Preheat a large nonstick skillet over medium high heat. Spread sesame seeds on a sheet of waxed paper or into a shallow dish. Waxed paper will speed your clean up. Dip the tenders into the sesame seeds. Coat the pan with a thin layer of oil. Cook chicken in small batches 3 minutes on each side and remove to plate.
- Whisk ginger, vinegar and the reserved marinade together then stream in the oil while you are continuing to whisk dressing.
- Combine all of the salad ingredients in a bowl. Toss with dressing and serve, topping with sesame chicken tenders. Toss some crunch into your salad with fried noodles, if you have any leftover packets from ordering Chinese take out, for the last time!

I copied this recipe from a vegetarian cookbook many years ago and I just came across it again today. It is such a wonderful salad - I love spinach and cheese tortellini but the dressing is what really makes it stand out.

- Combine dressing ingredients (oil through black pepper) in a jar, shaking to combine (or whisk together in a small bowl).
- Cook tortellini according to package directions, being sure not to overcook. Drain and transfer to a large serving bowl.
- Stir the bell pepper, tomato and onion with the tortellini. Pour half of the dressing over and toss well.
- Let marinate for at least 30 minutes, or up to 8 hours. (Cover and chill if longer than 1 hour. Bring to room temperature before serving.).
- Just before serving, stir the spinach into the tortellini mixture. Pour on the remaining dressing and toss well. Sprinkle on the sesame seeds and toss again.

- Place chicken in a large glass or ceramic bowl. Whisk soy sauce, brown sugar, garlic, and ginger for marinade together in a small bowl; pour over chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
