SESAME CHICKEN
Steps:
- Mix all of the marinade ingredients in a medium bowl and add the chicken pieces to coat. Marinate for 30 minutes while you prepare the rest of the recipe.
- In a medium sauce pan, heat sesame oil over medium low heat and add the ginger and garlic chili paste and cook to flavor the oil, three minutes.
- Add the chicken broth, sherry, sugar and tahini and raise heat to medium and bring mixture to hot.
- In a small bowl, mix corn starch with the soy sauce and vinegar to form a slurry.
- Add this to the hot sauce and stir to thicken. Once hot and bubbling, remove to a back burner and keep hot on a low heat. If the sauce is not thick enough, mix another tablespoon of corn starch with a little water and slowly add to hot sauce until desired thickness. If too thick, add a little water or soy sauce to thin.
- Start cooking the rice so that it is done once the chicken is done. If you have a rice cooker, this can be a make ahead item.
- Toast the sesame seeds by placing in a dry pan and heating over medium heat for 4-5 minutes, tossing often. Remove to a dish after toasting so they don't continue to cook in the hot pan.
- When ready to fry, pour the chicken into a colander over a bowl to drain off some of the excess marinade. You can discard the drained marinade.
- In a heavy pan or wok, heat peanut oil to 375 degrees F.
- Heat oven to warm to hold cooked chicken between batches.
- Fry wet chicken pieces in four batches to maintain the oil temperature, moving cooked chicken with a spider or strainer to a pan covered in paper towels. To fry, use tongs and quickly place one piece at a time into hot oil, not letting the pieces touch each other. Each batch will take about 3-4 minutes. Let the oil come back to 375 degrees F before starting the next batch. Keep cooked chicken in warm oven between batches.
- Once all the chicken is cooked, place warm cooked chicken pieces in a large bowl and toss with the hot sauce. Add in the toasted sesame seeds and toss again, saving a little to sprinkle over the finished dish.
- Serve on a platter or in a bowl with the reserved sesame seeds sprinkled over the dish and garnish with slivered scallions.
- Serve with the cooked white rice on the side.

SESAME CHICKEN WITH SPICY DIPPING SAUCE
Steps:
- In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce, rum, crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.
- Preheat the oven to 400 degrees F.
- Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.
- To assemble:
- Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some Spicy Apricot Sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.
- Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.
- Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.
- Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick.
SRIRACHA-HONEY SOY SAUCE
Steps:
- Combine 1/2 cup each honey and Sriracha, 1/4 cup soy sauce, the juice of 1/2 lime and 1 tablespoon sesame oil in a saucepan. Bring to a simmer over medium heat, whisking, and cook until thickened, 5 minutes. Let cool.

- Cut each chicken breast into 4 long strips.
- Combine all marinade ingredients and marinate chicken strips in the refridgerator for 3 hours.
- Preheat oven to 175°C.
- Wet wooden skewers and thread chicken strips onto skewers.
- Pour some of the marinade on the bottom of an ovenproof pan, place the skewers in the pan and sprinkle them with sesame seeds.
- Bake for 20 minutes or until done.

- Place tofu, zucchini, red bell pepper, and mushrooms in a bowl. Mix sriracha sauce, soy sauce, sesame oil, onion, jalapeno, and pepper in a small bowl, and pour over tofu and vegetables. Toss lightly to coat. Cover, and allow to marinate at least 1 hour in the refrigerator.

- Combine the ginger, garlic, honey, soy sauce, sesame oil, lime juice and sesame seeds. Divide between two bowls, then add the chicken pieces to one and the prawns to the other. Toss both mixtures well, then leave to marinate in the fridge for 15 mins.
- Cook the chicken in a frying pan over a medium-high heat for 3 mins, then push to one side and add the prawns to the other side of the pan. Cook for 2 mins until the prawns are pink and the chicken is cooked through (use two separate pans if anyone you're cooking for has an allergy or is a pescatarian). Put the broccoli in a microwaveable bowl with a splash of water, then cover and cook on high for 5 mins.
- Thread half of the skewers with chicken and broccoli and the other half with prawns and broccoli.

- Soak bamboo skewers in warm water for 1 hour.
- While skewers soak, mix teriyaki sauce, sesame oil, lemon juice, garlic, and sweetener together in a large glass or ceramic bowl. Add chicken, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour; the longer you marinate, the better the flavor.

- Heat oven to 200C/fan 180C/gas 6 and line a baking tray with baking paper. Mix the breadcrumbs, sesame seeds, five-spice and a little seasoning on a plate.
