COCONUT-SESAME BUTTER MOCHI CAKE
Butter mochi is a Hawaiian cake that is sweet and gooey, not unlike like Japanese mochi. Rice flour is a core pantry ingredient in most Japanese households, including mine, so I almost always have the ingredients on hand to whip up this cake when the mood (or need) strikes. Just like this recipe, I'm a little bit Japanese and a little bit American. The combination of American ingredients like butter and evaporated milk with Japanese ingredients like rice flour and sesame seeds feels familiar and comforting to me. Butter mochi can be baked plain or topped with coconut and black and white sesame seeds or slices of fruit like strawberries, mango or peaches. You can serve butter mochi with ice cream if you like as well.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch-square cake pan or 10-1/2-by-7-inch cake pan with butter.
- Put the 4 tablespoons butter in a medium saucepan and cook over medium heat until melted. Meanwhile, whisk the coconut milk to remove any lumps. Add the coconut milk to the melted butter and reduce the heat to low. Gently warm the mixture, stirring often, until just above room temperature and no lumps remain.
- Whisk together the mochiko, sugar, baking powder and sea salt in a large bowl.
- Whisk together the eggs, evaporated milk and vanilla in a medium bowl. Pour this mixture into the dry ingredients and stir until just combined. Add the melted butter-coconut milk mixture, whisking continuously, until fully incorporated and smooth with no lumps.
- Pour the batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles. Evenly sprinkle the top with the coconut chips or flakes. Sprinkle with the black and white sesame seeds and finish with the fleur de sel.
- Bake the mochi until it is set and golden brown on top, 1 hour 5 minutes to 1 hour 15 minutes. You can bake the mochi longer for a firmer texture, or for less time for a gooier texture. If using a glass or dark metal pan, subtract a few minutes from your baking time.
- Transfer the pan to a wire rack to cool completely. Coat a knife with butter and cut around the edges to help the cake separate from the pan and prevent the cake from sticking to the knife. Serve the cake directly from the pan.
PANTRY POPOVERS
This is such a simple recipe and reminds me of some of the super-simple recipes my mom would pull out from time to time. She loves Yorkshire pudding and popovers. These are great eaten hot out of the pan. Just tip the pan over and start devouring. They work well with ham and cheese or fruity jam. They are a great and edgy companion to some eggs, and really spruce up a brunch party in a hurry. Pears have a good amount of natural pectin which adds thickness to the jam naturally as it cooks. The spices seem so right with pears. They really taste like fall and make you feel like Thanksgiving is around the corner. This butter is so easy and the results are so satisfying: homemade butter! One tip: Use a sour cream that is pure and has no stabilizers added or the butter will NOT whip up nicely...

- Preheat the oven to 425 degrees F. Liberally grease each cup of 2 standard 6-cup or 1 standard 12-cup muffin tin(s) with some of the melted butter.
- Make the batter: Sift the flour into a large bowl. Whisk together the eggs, milk and salt in a smaller bowl until blended. Pour the egg mixture and melted butter into the flour. Gently stir to combine, breaking up any big lumps. (Don't stress over small lumps of flour.)
- Bake: Fill each cup in the muffin tins about three-quarters of the way full. Place the tins in the center of the oven and bake for 12 minutes, then reduce the oven temperature to 350 degrees F and bake until the popovers develop a nice brown color, are cooked through and feel crusty, an additional 10 to 12 minutes. (Opening the oven door while popovers bake increases the chance they will deflate, so look through the window but don't give in to temptation!
- Finish: Remove the tins from the oven and pierce the tops with the tip of a small knife to allow steam to escape as they cool. Turn the popovers out on a wire rack. Serve immediately with Spiced Pear Jam and Sesame Butter.
- Combine the pears, sugar, vanilla, cinnamon, allspice, cloves and 1 cup cool water in a medium pot. Bring the mixture to a simmer over medium heat and cook until the pears start to break down, 10 to 12 minutes. (The liquid should be fairly thick and will thicken some more as it cools.) Let cool completely.
- Prepare a medium bowl of ice water. Whip the heavy cream and sour cream together gradually in a stand mixer fitted with the whisk attachment. Increase the speed of the mixer and continue whipping until the cream separates and the mixture thickens.
- Use a rubber spatula to gather up the butter and remove it from the bowl. There will be some liquid that is a natural result of this process, which is actually buttermilk. You can reserve this and use as you would regular buttermilk. Gather the ball of butter together in a double-layer of cheesecloth or a thin kitchen towel and plunge it into the bowl of ice water to wash any buttermilk off the surface.
- Place the sesame seeds and salt in a medium bowl and use a rubber spatula to mix the seeds and salt into the butter. Pack the butter into a bowl or roll it into a ball or log shape using plastic wrap. Use immediately at room temperature or store, covered, in the refrigerator.

- Over a double boiler (or in the microwave in 30 second spurts), melt the chocolate chips over medium-low heat until completely melted. Bring the heat down to a low once fully melted to keep at a thin consistency for nice, evenly thin chocolate shell.
- The easiest way to make these is to use silicone muffin cups as opposed to paper muffin cups (although the paper ones will work, just need some extra TLC to remove). Use about 1.5 tsp of melted chocolate to make the bottom of the cup. I use a back of a small spoon to gently push the chocolate up the sides of the muffin cups, about 1.5 cm high (about 1/2 an inch). Fill all 12 cups (I use a muffin baking sheet to hold all the cups) and then transfer to the freezer to set.
- Make the filling by combining black sesame seed butter, icing sugar, ground toasted black sesame seeds, and vegan margarine. Mix well until fully combined. It will be mostly solid, perhaps a tiny bit runny at warmer room temperatures, but you can add extra sugar or ground black sesame if you want it to be a stiffer filling.
- Top with the melted chocolate (about 1 tsp), and cover the filling well and make sure the chocolate meets the edges.
