Black Sesame and Walnut Banana Bread image

This recipe requires the 'Black Sesame Seed and Walnut Mix' that I submitted on this website. I make this bread twice a week. It's our all-time family favorite!

¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 large banana, mashed
¼ cup white sugar
¼ cup packed brown sugar
1 egg white
2 tablespoons milk
1 tablespoon canola oil
½ teaspoon vanilla extract
⅓ cup black sesame seeds
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt together in a bowl. Mix banana, white sugar, brown sugar, egg white, milk, canola oil, and vanilla extract together in a separate bowl; stir into flour mixture just until batter is moistened. Fold sesame seeds and walnuts into batter; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in pan before transferring to a wire rack to cool completely.

From a Girl Scouts cookbook (Washington Rock Council, Westfield, NJ); thought I'd share a very unique banana bread. I had never heard of this combination before. Careful to note that seeds may affect people who have nut allergies so note if taking to a bake sale, etc.

1/4 cup butter, softened
1/2 cup sugar
2 eggs
3 ripe bananas, mashed
1/4 cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sesame seeds

Steps:

  • Preheat oven to 350 degrees F.
  • Cream the butter and sugar together until fluffy.
  • Add eggs, one at a time.
  • Stir in bananas, milk and vanilla.
  • Add remaining ingredients and mix well.
  • Pour into a greased 9" X %" X 3" loaf pan.
  • Bake 50-60 minutes.
  • Remove from pan and slice and serve while it is still warm, or cool on a wire rack and wrap up.

  • Preheat oven to 350°. Toast 1 Tbsp. white sesame seeds and 1 Tbsp. black sesame seeds in a dry medium skillet over medium, stirring occasionally, until fragrant, about 5 minutes.
  • Blend bananas in a food processor to a smooth purée. Whisk flour, baking powder, baking soda, and salt in a medium bowl. Whisk eggs, oil, tahini, and vanilla in a large bowl. Whisk in brown sugar and banana purée until well blended, then whisk in dry ingredients until just combined. Fold in toasted sesame seeds.
  • Scrape batter into a 9x5" loaf pan and sprinkle with remaining white and black sesame seeds. Bake bread until a tester inserted into the center comes out clean, 60–70 minutes. Let cool completely in pan.
