SWEET BRAISED CHICKEN
Steps:
- Wash and prepare the chicken cuts and place them in a bowl. Add the calamansi juice and massage it with each piece.
- Add the minced garlic, white ground pepper, soy sauce, banana ketchup and brown sugar. Mix until well combined. Cover the bowl with a plastic wrap. Let it marinate for 1 hour or overnight.
- Transfer and arrange the marinated chicken in a pan (with the marinade). Add the unsalted butter. Cover the pan and let it simmer for at least 15 minutes using medium high heat.
- After 15 minutes, lower the heat to medium and stir gently to cook all the pieces evenly. Cover the pan again and let it cook until the sauce is reduced.
- When the oil starts rendering from the chicken and the sauce is reduced, turn the heat off.
- Transfer the sweet style braised chicken to a serving plate and serve together with hot steaming rice! Enjoy!

- Set aside 3/4 cup cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, honey, lemon juice, garlic and ginger; set aside.
- Dip chicken in egg whites. Dredge in flour that has been combined with pepper, shaking off excess. In a large skillet over medium heat, brown chicken on all sides in butter. Place chicken in a Pam sprayed 13-in. x 9-in. baking dish (or if you skillet is oven proof can leave it in for easier clean up). Top with cherry sauce.
- Bake, uncovered, at 350° for 15 minutes; turn chicken. Top with reserved cherries. Bake, uncovered, 15-20 minutes or until done.
- Meanwhile, heat crepes as directed on package. Place on crepe on each plate and top with one chicken breast and some cherry sauce.

- Mix the liquid ingredients in a small oven proof lidded bowl. Place the chicken in upside down and marinate 30 minutes.
- Turn the chicken over and cover the bowl.
- Braise for 1 hour.
- Serve over a bed of rice with additional sauce ladled over it.
