Semolina Muffins is an ideal bake with Sooji or Fine Rava, It is made with healthy ingredients which is perfect for the kids or toodlers.

¼ cup + 2 tbsp Semolina / Sooji / Fine Rava
¼ cup + 2 tbsp Brown Sugar
¼ cup Curd - ¼ cup
Salt (a pinch)
¼ cup + 2 tbsp Milk
1 tsp Vanilla essence
1 tbsp Olive oil
¼ tsp Baking powder
¼ tsp Baking Soda
2 tbsp Nuts

Steps:

  • In a mixing bowl add in the Semolina, Brown sugar, and Curd.
  • Next add in the milk, Olive oil, and Salt.
  • Mix everything well with a whisk until everything is well combined and allow it to rest for 20 mins. Next, add in the vanilla essence and then add n the baking powder.
  • Next add the baking soda and then add in the chopped nuts. Mix well. Line a muffin tin with muffin liners.
  • Scoop in an equal amount of batter and fill the muffin liners to its 3/4th. Top the batter with some chopped nuts ,I used Pistachios. Preheat the oven at 180 Deg C for 10 mins and then bake it at 180 Deg for 25 mins. Allow it to cool completely and then store.

1 1/2 cup semolina
2 tsp baking soda
1/4 tsp baking soda
1/2 cup packed brown sugar
1 cup milk
1 cup water
1 large egg
1 tsp vanilla extract
2 Tbsp canola oil

Steps:

  • Spray 12 cup muffin pan with cooking spray or line with muffin cups. Preheat oven to 375 F. Add the first four ingredients in a large bowl. In a medium bowl. Add the remaining ingredient into another bowl. Add the wet ingredients into the dry. The mixture will be watery, do not be bothered by this,the semoline will soak up the water as it cooks. Stir as you pour into the muffin pans as the semoline tend to settle in the bottom. Bake for 15 minutes or until a tooth pick comes out clean.
