"I COPIED this recipe exactly the way Grandma has written it in her worn cookbook. The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

This is another recipe from my Grandma. She would take this to family reunions and would never have any left. It soon become one of my favorite recipes for at home and for carry ins. When I would go signed up for carry-ins my name would already be down with ham loaf beside it. Guess people liked it.

- 1. Mix the first 4 ingredients together like you would meat loaf. Put it into a loaf pan or I make 2 small loaves and freeze one.
- 2. Mix up the basting ingredients and brush onto the ham loaf. Put in oven at 325 degrees for 2 hrs. I baste every half hour. The more basting the better it is.
HAM LOAF RECIPE
This ham loaf recipe is one of the best ways to use up leftover ham. Baste with a sweet pineapple glaze during baking for a delicious caramelized flavor.

- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
- Spray a 9x13 baking pan with cooking spray.
- Shape the ham mixture into a loaf, packing the meat firmly.
- Sprinkle the top of the ham loaf with paprika.
- Bake the ham loaf for 20 minutes. During this 20 minutes, make the pineapple glaze.
- Combine the glaze ingredients together in a small saucepan over medium heat. Cook and stir until the sauce comes to a boil, then boil for 1 minute.
- Remove from the heat and set aside until the ham loaf is ready to glaze.
- After the initial 20 minutes of baking, brush the top of the loaf with the pineapple glaze.
- Bake again for 70 minutes, basting the ham loaf 2 or 3 more times during baking.
- Serve warm with any leftover pineapple glaze drizzled on top.

NANCY'S HAM LOAF (USING LOTS OF HAM)
There are many ham loaf recipes around but this one uses a much higher ratio of ham to ground pork which I happen to like. It produces a very tasty loaf with a nice tangy sauce on top. Here's a good way to use up leftover Easter ham.

- Preheat oven to 350 degrees F. Have ready 2 8-x4-inch loaf pans.
- Mix all ingredients (except sauce ingredients) together. Divide among loaf pans. (It may also be made in a 9- x 13-inch pan.).
- Bake 1 hour in preheated oven. Remove from oven and pour the sauce over the tops of the loaves. Return to oven and continue baking 1/2 hour longer.

- Have meat ground together for one 2 lb.
- combination mixture; bring to room temperature.
- (not included in prep time) Preheat oven to 350 degrees.
- In large bowl, lightly but thoroughly combine meat and bread crumbs; use your hands if necessary.
- In medium bowl, beat eggs, add sour cream, onion, lemon juice and spices.
- Mix well, pour over meat mixture and blend together.
- Form mixture into loaf and place in well oiled shallow baking dish.
- Bake uncovered for 1 hour.
- NOTE: This mixture isn't packed into a loaf pan, it is a free standing long loaf shape.
- Meanwhile, prepare basting sauce.
- In a small saucepan, mix all ingredients and bring to a boil.
- Thicken with some cornstarch mixed with water; as needed.
- When ham loaf has baked for 45 minutes, remove from oven and drain off grease.
- Spoon sauce over ham loaf and continue baking another 15 minutes.
- Baste every few minutes with sauce until done cooking.
- Let sit for at least 10 minutes before cutting to allow loaf to retain shape.
- Enjoy!

- In large bowl, gently combine all ham loaf ingredients. Form into a loaf; place in shallow baking pan. HAM LOAF
Steps:
- In a large bowl, combine ham, pork, oats, bread crumbs, and onion. Using clean hands, mix until combined. Add allspice, pepper, dry mustard, yellow mustard and parsley to eggs and mix well with a fork. Add egg mixture and milk to meat mixture and continue mixing with hands until well combined. Mixture should be moist and very soft. If too dry, add up to ½ cup of extra milk. Form into one large loaf (or two smaller ones). One large loaf should fit perfectly into a 9-by-13-inch rectangular pan. Preheat oven to 350 degrees. Meanwhile, in a small saucepan, combine glaze ingredients and stir over medium heat until sugar is dissolved. Mixture will be thin. Pour about one-third of glaze over ham loaf. Cover with foil and bake for 50 minutes. Uncover and pour remaining glaze over loaf, basting frequently until glaze begins to get thick and sticky and ham loaf is browned and cooked through completely, about 30 minutes longer for a large loaf.
