SEE'S COPYCAT FUDGE

See's Copycat Fudge image

This See's Copycat Fudge is perfect and creamy. No candy thermometer required!

Provided by Christy Denney

Categories     Dessert

Time 30m

Number Of Ingredients 7

3 (12 ounce packages) semi-sweet chocolate chips
1 (7 ounce container ) marshmallow cream (see Note for substitutions)
1 cup (2 sticks) butter, softened
2 tablespoons vanilla extract
2 cups pecans or walnuts, chopped
4 1/2 cups white sugar
1 (12 ounce can ) evaporated milk

Steps:

  • Line a 9x13 baking dish with foil or parchment paper. This makes it easier to remove the fudge and cut it. This makes a full 9x13 pan of fudge so if you want shorter pieces you could use a bigger pan.
  • Place chocolate chips, marshmallow cream, butter, vanilla, and nuts in large bowl. Set aside for later.
  • Pour sugar and evaporated milk in a very large pot. You need a larger pot than you think because when the mixture boils is will expand a lot. Bring mixture to a boil and boil briskly over medium high gear for 7 minutes stirring continuously. Remove from heat and pour into the bowl containing the first mixture. Mix until incorporated completely. Work quickly because fudge will start to set up. Pour into prepared pan and refrigerate until set. See notes if it doesn't set up or separates.
  • Slice into squares and serve. You can prepare this ahead of time and freeze if desired.

Start stirring with a wooden spoon until the marshmallows have melted and add the nuts and stir until the fudge is smooth. Pour into a 9×13 pan or a 15×13 sheet pan. (I use a 9×13 disposable aluminium pan.) Cover your pan with aluminum foil. (You do not have to butter your pan before pouring your fudge into it.) COPYCAT SEE'S FUDGE

Copycat See's Fudge image

Tried and true, this is the fudge you remember from growing up, and probably the only fudge recipe you'll ever need. It's got just the right bite to it and the perfect sweetness.

Time 45m

Yield 50 pieces

Number Of Ingredients 7

18 ounces chocolate chips
2 jars (7 ounce size) marshmallow cream
1/2 pound butter, slightly softened and cut into small pieces
2 tablespoons vanilla extract
2 cups walnuts, chopped
4 1/2 cups white sugar
1 can (12 ounce size) evaporated milk

Steps:

  • Combine the chocolate chips, marshmallow cream, butter, vanilla, and walnuts in a large heat-proof bowl and set aside. In a heavy saucepan over medium-high heat, combine the sugar and evaporated milk. Stir well to dissolve the sugar and bring to a boil. Boil briskly for exactly 9 minutes after the mixture comes to a boil, stirring constantly. Remove the pan from the heat and stir the milk mixture into the ingredients in the large bowl. Mix well until the chocolate melts and the mixture is a uniform color. Spread the fudge into a buttered pan and place in the refrigerator until set. Slice into small squares and serve. You can freeze the fudge for 2-3 months. cook's notes The original copycat recipe had vague amounts based on old standards for ingredient sizes. We've updated the ingredient list and clarified the instructions to fit with more modern times.
