This seedless blackberry jam is one of the best blackberry jam recipes around. Truly seedless! Make sure you take advantage of this delicious fruit when it's available.

600g (1⅓lb ) blackberries, washed
200g (7oz) jam sugar
1 lemon, juiced
3 thyme sprigs [optional]

Steps:

  • The night before you make your jam, layer the blackberries and sugar together in a large bowl, then cover and set aside at room temperature.
  • Place the berry mixture, lemon juice and thyme in a large saucepan and heat the contents slowly until the sugar has dissolved.
  • Remove the thyme sprig, if you used it.
  • Bring to the boil and simmer for 5 minutes. Preferably, use a sugar thermometer. Your aim is for the mixture to reach 105°C/221°F, which is the setting temperature.
  • Remove from the heat and let a small dollop cool off on the cold saucer. Push it with your finger. You want it to go wrinkly. If it doesn't, return the saucepan to the heat and boil for another 2 minutes before removing from the heat again and testing it. Repeat until you get the desired result.
  • Once the jam is ready, leave to cool for 15 minutes.
  • Sieve the jam and place in a sterilised jar. Store in a cool dry place and refrigerate once opened. Enjoy!

2 pounds fresh strawberries, hulled
4 cups white sugar
¼ cup lemon juice

Steps:

  • In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to hot sterile jars, leaving 1/4 to 1/2 inch headspace, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.

450 g Raspberries (washed and dried)
400 g Granulated sugar
3 tsp Lemon juice

Steps:

  • Add raspberries, sugar and lemon juice to a preserving pan (large pan).
  • Use a potato masher to mash up the raspberries.
  • Place the pan on the hob over a low heat (do not simmer), stirring occasionally until all the sugar has dissolved. (Sweeping a wooden spoon along the bottom will alert you to any sugar crystals).
  • Take a glass bowl and place a metal sieve over it.
  • Pour the jam mixture into the sieve (you may have to remove a few seeds stuck to the pan).
  • Pour the drained juice back into the pan and place the sieve over the pan.
  • Use a large metal spoon to push the pulp through the sieve (will take about 5 minutes).
  • Once all the pulp is sieved into the pan, stir with a wooden spoon.
  • Bring the pan to a rolling boil and time for 5 minutes.
  • Take the pan off he heat and drizzle a little jam onto a saucer and place in the fridge for a minute.
  • Run a finger through the jam and if it forms a crinkle (tacky) then the jam is ready, if not continue to boil for another minute at a time and re-test until it is ready.
  • Pot into hot jars and seal with lids immediately or if using wax discs place those on and then the cellophane once cool.
  • Store in a cool dark place and refrigerate once opened.

Number Of Ingredients 6

6 cups prepared fruit (buy about 3-1/2 lb. fully ripe seedless grapes)
1-1/4 cups water
1/2 cup fresh lemon juice
1 box MCP Pectin
1/4 tsp. butter or margarine
8 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Stem grapes; finely chop or grind fruit. Place fruit in large saucepan. Stir in water and lemon juice. Bring to boil. Reduce heat to low; cover and simmer 25 min. Measure exactly 6 cups prepared fruit into 6- or 8-qt. saucepot.
  • Stir pectin into fruit in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 4 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

2 quarts fresh raspberries ((about 2½ pounds in all))
6-7 cups granulated sugar
2-3 tbsp fresh lemon juice
½ tsp unsalted butter ((optional))

Steps:

  • Heat oven to 225˚F. Rinse the raspberries and drain them well. Put them into a heat-proof dish. I found that my 2 quarts fit nicely in a 13×9 Pyrex pan. Bake the pan of berries, uncovered, for about 30 minutes, because heating the berries gently will make it easier to sieve the seeds out.
  • Put a fine-mesh sieve over a large bowl or pot. Take the pan of hot raspberries out of the oven and sieve the berries in batches. Scoop some of the softened berries into the sieve, and press the pulp and juice through with a big spoon. It's surprisingly hard work to press the berries through the sieve. You want to end up with only seeds in the sieve, as dry as you can manage. When you've pressed out as much fruit as you can, put the seeds in a clean quart-sized jar (* see Notes) and set aside. Repeat until all the berries have been sieved. Don't forget to scrape the underside of the sieve with a clean spoon, to get all the pulp off it!
  • Combine the raspberry pulp with three-quarters its weight in sugar, or just estimate by volume, adding 6 c sugar to the lot, tasting it, and adding a bit more if it's too tart. Add lemon juice. Heat at a very low setting, and stir until sugar is dissolved. Taste again for balance of sweet and tart; adjust as you wish.
  • Now add the pat of butter (it helps reduce foaming) and turn heat to high. Bring the jam to a boil, stirring frequently, until the jam thickens and will pass a wrinkle test. Ladle jam into prepared jars, wipe rims, and apply lids and bands. If your last jar is only partly filled, just stick a lid on it and refrigerate.
  • Ladle jam into prepared jars, wipe rims, and apply lids and bands. Refrigerate any partially filled jar, and seal the rest in a boiling water bath for 10 minutes.

  • In a Dutch oven, combine strawberries, peppers and lemon juice. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into 9 hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. 5 cups fresh strawberries (washed and tops removed)
1 1/2 cup granulated sugar
1 tablespoon lemon juice

Steps:

  • Add the strawberries to a deep pot along with the sugar and lemon juice.
  • Stir to combine and turn the heat to high, stirring every now and then until the mixture starts to bubble and become hot.
  • Use a potato masher to mash the strawberries until they begin to fall apart. The more you mash, the smaller the strawberry pieces will be.
  • When the mixture begins to boil, continue to stir every 30 seconds or so.
  • Use an instant-read thermometer - here's a link to mine (affiliate link) - to measure the temperature of the jam as it boils. Be sure the thermometer is measuring at the middle of the jam and not touching the bottom of the pot.
  • Continue boiling as the temperature climbs and don't let it stop boiling until it reaches 220 degrees Fahrenheit (for low altitudes) or 218 degrees Fahrenheit (for high altitudes). This should take about 8 minutes or so.
  • Once the correct temperature is reached, remove the pot from the heat and carefully spoon the jam into a standard mason jar. The jam might seem a little bit liquid at this stage - don't worry! It will thicken as it cools.
  • Add the lids to the jars and allow to cool at room temperature until completely cool.
  • Store in the fridge (or freezer for long term storage) and enjoy on toast, scones, or however you like!

  • If you wish to make this jam seedless, sieve the liquid using a metal sieve over a large glass bowl before you follow the steps to boil. Once the jam has been sieved, pour the liquid from the bowl back to the pain and continue with the steps above.

  • Set up your station. Set out all your tools and ingredients. Place canner rack in bottom of canner and fill about halfway with clean, warm water.
  • Crush berries. Using a potato masher, crush berries, one layer at a time, until they measure exactly 4-1/2 cups. One layer at a time ensures they’re evenly crushed.
  • Add pectin. Stir pectin into crushed berries and quickly bring to a rolling boil over high heat, stirring frequently. (Prolonged boiling can break down the pectin.)
  • Skim foam. Remove saucepan from the heat. Skim off foam with a large spoon; discard foam. Editor’s Tip: This isn’t for food safety. If left, the foam that would be at the top of each jar can become slightly gray and visually unappealing.
  • Fill jars. Wearing oven mitts, carefully remove jars from water bath canner using tongs. Drain all water back into the canner. Arrange jars on cooling rack.
  • Process jam. Using a jar lifter or gloved hands, carefully arrange jars in rack above water in canner. Lower the rack into the water, cover and return to a vigorous boil.
  • Cool jam. Allow the jam to stand, upright, for 12-24 hours while the lids seal and the jam sets up (the jam will appear very thin right after processing).
