JENNY'S SEASONED CROUTONS
A seedy multigrain bread brings a new, nutty dimension to these seasoned, buttery croutons. These are great served warm on a cold, fresh salad.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Place bread cubes in a large bowl; drizzle butter over cubes. Toss to evenly coat. Sprinkle half the Cajun seasoning, half the Parmesan cheese, and half the onion powder over cubes; toss to coat. Spread coated bread cubes onto the prepared baking sheet; sprinkle remaining Cajun seasoning, Parmesan cheese, and onion powder onto cubes.
- Bake in the preheated oven for 7 minutes; stir and continue baking until crisp, about 8 more minutes.

SEASONED BREADCRUMBS
This is our all-purpose recipe for breadcrumbs. We have used these to coat chicken and pork chops. We also use them in any savory recipe that calls for breadcrumbs. My fiance and I work this recipe together. I gather the spices and he operates the hand processor.

Steps:
- Pulse the bread in a food processor until they are crumbs.
- Add in the spices and either mix by hand or give another pulse in the processor.
- Notes: We use a hand processor and stop when we get to coarse crumbs.
- We add the spices straight to the processor and get the crumbs down to a slightly less coarse grind. We still don't go down to a fine grind though.
- We have found that when coating chicken or pork chops that the coarser grind makes for a really neat crunch.

SEASONED BREAD CRUMBS
Our Test Kitchen came up with this good-for-you alternative to high-sodium packaged bread crumbs, using garlic powder and a handful of dried herbs. The crumbs make a savory topping for casseroles and a crispy coating for pork, chicken and fish.

- Place all ingredients in a blender or food processor; cover and process until fine crumbs form. Transfer to a 15x10x1-in. baking pan. Bake, uncovered, at 350° for 8-12 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container.

SEASONING FOR BREAD, CROUTONS OR BREADCRUMBS
I just came up with this. My DH & I had a wonderful oil based dipping sauce for bread at an Italian restaurant. I was shocked when DH tried it and like it. I was just thinking about that day and thought I can replicate that dipping sauce. This is what I came up with. I also tossed with bread and baked for croutons and breadcrumbs.

Steps:
- Mix all ingredients together.
- If making for a dip you are done. Serve with a pasta dish and warm breadsticks.
- If making croutons heat oven to 350°F.
- Cut up bread into bite size pieces. Place bread and oil mixture in a sealable bag toss to coat.
- Arrange on baking sheet and bake for 8 to 10 minutes.
- Cool and store in an airtight container.
- If making bread crumbs complete steps for croutons and then place croutons in food processor and blend.
- If you feel the crumbs are too wet place on baking sheet and bake for another 5 minutes watching very closely. These will burn in the blink of an eye.
- Store in airtight container.
- I usually freeze in a storage bag until ready to use.

- Preheat oven to 300°F. Slice and cube your bread. I slice, stack, and slice again, making cubes roughly 1 inch by 1 inch by 1/2 inch. The cubes will shrink up a little as they are tossed in the oil. Some folks trim the crusts, but we’re not that fussy.
- Mix together fat and seasonings in a large bowl, toss bread cubes to coat. Alternatively, some people prefer to paint the seasoned oil on the bread and then slice it, but this seems much more messy to me.
- Spread the seasoned croutons on a baking sheet and place in the oven. Bake 30-45 minutes, stirring every 15 minutes or so, until crisp completely through. Taste testing recommended – just don’t burn your tongue!
