BEEF POT ROAST
This is the best and easiest recipe for pot roast I have ever tried. It is best to make it a day ahead. Serve with oven roasted vegetables, potatoes, carrots, onions, or your favorite side dish.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Heat a heavy Dutch oven on top of the stove over medium high heat. Add oil, and sear meat in the center of the pan for 4 minutes. Turn meat over with tongs; sear all sides for 3 to 4 minutes on each side. Remove meat from pan. Arrange onion, garlic, and 1 bay leaf in the bottom of the pan, and sprinkle with salt and pepper. Return meat to pan, place remaining bay leaf on top of meat, and cover.
- Cook in the oven for 30 minutes at 325 degrees F (165 degrees C). Reduce the heat to 300 degrees F (150 degrees C), and cook for 1 1/2 hours. Remove roast to a platter to rest for 10 to 15 minutes. Slice, and top with onions and gravy.

ROAST BEEF IN A BAG
This is the easiest recipe ever....and I dont cook roast beef any other way because no matter what, you end up with a wonderfully moist roast every time. Oh yeah and there is no oven mess to clean up afterwoods.

Steps:
- Place dry soup min in bag and shake.
- Put beef in bag and roll around to coat.
- Seal bag (do not pierce)and place in moderate oven.
- Cooking time will depend on how you like your beef cooked.
- I like mine well done -- dont worry it will be moist and flavoursome.
- Let sit for 5 minutes.
- Remove meat from bag, reserve juices to make the worlds best gravy!
- note: This recipe is best for a bolar roast. Topside etc. is a bit too lean and wont turn out as tender.

SEASONING FOR BEEF POT ROAST IN A BAG
I love the seasonings that come in a pot roast bag but I was out of them so I came up with this and think it's a ringer for a very moist and tasty pot roast.

Steps:
- Sprinkle salt, pepper and garlic salt to taste on both sides of roast. Place roast in bag. In a small bowl combine first nine ingredients. Mix well.
- Combine cornstarch and water and stir until smooth. Pour over roast and top with sliced onions. Tie bag and turn roast upside down and shake so seasoning covers all while holding sliced onion on top. Return to pan, being sure to move onion back to top of roast.
- Poke about 5 small holes in top of bag and bake at 350 for 2 hours or until top is a bit brown and roast is tender.

- Preheat oven to 350°F. Arrange opened Cooking Bag in 13x9-inch baking pan or dish. Place roast and vegetables into bag.
- Stir Seasoning Mix and water until well blended. Pour over roast. Close bag loosely with nylon tie. Cut 4 small holes in top of bag to allow steam to escape.
- Bake in lower half of oven 2 hours. Remove from oven. Let stand 5 minutes. Cut open bag. Serve roast and vegetables with pan juices. If desired, thicken juices for gravy or serve with prepared McCormick® Brown Gravy.

- Preheat oven to 325 degrees F (165 degrees C).
- Whisk flour, black pepper, paprika, garlic powder, and onion powder together in a bowl. Dredge roast through the flour mixture to evenly coat.
- Melt butter in a large pot over medium-high heat; brown roast in the melted butter, about 5 minutes per side. Transfer roast to an oven bag and put into a 13x9-inch casserole dish.
- Whisk beef consomme, water, onion soup mix, garlic, and Worcestershire sauce together in a bowl; pour into the oven bag over the roast. Cut 6 small slits in the top of the oven bag for ventilation.
- Bake roast in the preheated oven for 1 hour 45 minutes; add carrots, onion, and mushrooms to the oven bag and bake until vegetables are tender and roast is cooked through, about 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- Use paper towels to pat the chuck roast dry. Place the roast on a clean paper towel and cover all sides of the meat with the salt and pepper.
- Remove the skins from the onions, and cut each onion in half. Wash the carrots under cool running water. You can peel the carrots or leave them unpeeled, depending on your preference. Cut the carrots into 2-inch slices. Rinse the potatoes, removing all dirt and sand, and slice each one into quarters.
