These Easy Seasoned Roasted Potatoes have big flavor thanks to the yummy combination of seasonings. Perfectly crispy and simple too!

Number Of Ingredients 8

4 medium gold or yellow potatoes (about 5 cups after chopping)
2 tbsp olive oil (If your potatoes are pretty large you can add an extra tbsp of oil.)
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp dried parsley (Can substitute another dried herb.)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
  • Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. ¼ cup olive oil
2 tablespoons minced fresh garlic
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut the potatoes in half or quarters and place in a bowl with olive oil, garlic, salt, and pepper; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into one layer.

1/3 cup parmesan cheese
1 teaspoon paprika
3 large potatoes
milk, enough for dipping
melted butter
16 ounces fat free sour cream or 16 ounces light sour cream
crumbled bacon (real or bits work fine too)
chives
1/2 teaspoon garlic powder

Steps:

  • In a large resealable plastic bag, combine flour, parmesan cheese and paprika.
  • Cut potatoes into thin wedges OR small bite size chunks.
  • Dip potato pieces in milk, then place in the bag of flour/cheese mixture.
  • Toss the bag to coat.
  • Place potatoes in a greased baking dish and drizzle with 2 tbsp of the melted butter.
  • Bake uncovered at 400 for 20 minutes.
  • Stir, turn potatoes, then drizzle with remaining butter and bake for an additional 20-25 minutes.
  • Serve with sour cream dip.
