EASY OVEN ROASTED POTATOES

Easy Oven Roasted Potatoes image

Simply seasoned, easy oven roasted potatoes make the ideal side dish for a meat and potatoes dinner. A high baking temperature makes the potatoes sizzle and brown nicely.

Provided by Julie Clark

Categories     Side Dish

Time 40m

Number Of Ingredients 6

6 small red potatoes
1/4 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
  • Serve immediately.

EASY SEASONED ROASTED POTATOES

Easy Seasoned Roasted Potatoes image

These Easy Seasoned Roasted Potatoes have big flavor thanks to the yummy combination of seasonings. Perfectly crispy and simple too!

Provided by Christina

Categories     Side

Time 30m

Number Of Ingredients 8

4 medium gold or yellow potatoes (about 5 cups after chopping)
2 tbsp olive oil (If your potatoes are pretty large you can add an extra tbsp of oil.)
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp dried parsley (Can substitute another dried herb.)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
  • Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

These look very good. Recipe is from Simple and Delicious. Update 3/21/09: I've made these recently and I think I will use only half of the ranch dressing mix the next time because I felt it was a little too strong. I will leave the original recipe as is, though.

  • potatoes: Peel and quarter the potatoes. Place prepared quartered potatoes on a microwave-safe plate and zap for 3 1/2-4 1/2 minutes covered with a microwave lid. Insert a knife into the thickest part of the potato, the knife should go through with some resistance. Let potatoes cool to room temperature. You can also refrigerate the potatoes once cooled and use the next day. Just dice the potatoes up into roughly 1/2 inch pieces before you add them to the skillet. They chop up easier if they've had a chance to hang out in the refrigerator.
  • cook: Using a 12-inch skillet or larger, place the butter, olive oil, and if using the rosemary, thyme, and 1 smashed garlic clove into a large skillet over medium-high heat. Allow the butter to melt and the olive oil to heat through. When the herbs start popping and sizzling, remove them and the garlic clove, discard. Add the potatoes in a single layer, season with a generous pinch of salt and pepper, cayenne, garlic powder, onion powder, and smoked paprika, toss to coat evenly. Cook the potatoes for a total of 8-10 minute, flipping and tossing them every 2-3 minutes to ensure even browning. Taste for seasonings and adjust to preference. Serve immediately.
