HOMEMADE CRISPY SEASONED FRENCH FRIES
My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

SEASONED GRILLED FRIES
Here is a nice technique for grilling fries that is pretty low calorie and also tasty. The whole family liked these, and next time we want "French Fries" I will probably make these. They are easier and healthier and yummier. From Bobby Flay and "Boy Meets Grill" on Food Network. I don't have "ancho chili powder", so I just used regular chili powder.

Steps:
- Put the potatoes, unpeeled, into a large pot and cover with cold water. Bring to a boil and simmer until almost tender, about 15-20 minutes. Do not overcook, or they will fall apart and you won't be able to cut them into fries.
- Drain and dry the potatoes and allow to cool enough to handle.
- Carefully cut each potato lengthwise into about 6 wedges. (Original recipe said 4 wedges, but those are too thick in my opinion.) You do have to be careful, since they are already cooked, that they could crumble or fall apart.
- Place the wedges on a baking sheet and brush both sides of the potatoes with oil.
- In a small bowl combine chili powder, salt and cumin. Sprinkle over the potatoes.
- Grill the potato wedges for 3 to 4 minutes per side, until golden brown.

GRILLED POTATO WEDGE FRIES WITH ROASTED GARLIC AIOLI
These fries are grilled to the perfect texture and then seasoned with simple spices that make them out of this world. They are also healthier and easier to make than traditional fries and are perfect for any BBQ!

- Preheat the grill to medium-high heat. Cut the top off of the head of garlic to expose the cloves. Place the garlic head on a sheet of aluminum foil and drizzle the exposed cloves of garlic with about a teaspoon of olive oil. Sprinkle with salt and wrap in the foil. Grill until tender and browned, about 30 minutes.
- Meanwhile, slice the potatoes into wedges and transfer to a large bowl. Drizzle with the remaining olive oil and season with salt. Toss to coat.
- In a small bowl, mix together half of the paprika, and the cumin, chili pepper, garlic powder, black pepper, and salt, as desired. Set aside.
- Grill the potato wedges until cooked through and grill-marked, about 8-10 minutes per side. Toss the grilled potato wedge fries with the spices.
- Before serving, squeeze the roasted garlic into a medium-sized bowl with the mayonnaise, lemon juice, Worcestershire sauce, and remaining paprika. Mix well and serve the roasted garlic aioli and grilled wedge fries with fresh herbs.
GARLIC PARMESAN FRENCH FRY SEASONING MIX
Steps:
- Add 1 teaspoon garlic powder, 1/8 teaspoon cayenne pepper, 1/2 teaspoon onion powder, 1 tablespoon sea salt, 1/2 teaspoon paprika, 6 tablespoons parmesan cheese, and 1/2 teaspoon parsley flakes to a bowl.
- Mix well until thoroughly combined.

"OLD BAY" GRILLED STEAK FRIES
Steps:
- Combine all spices in a small bowl.
- Place potatoes in a pot of cold water, add 1 tablespoon of salt and cook until potatoes are tender, but still firm, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
- Heat grill to high.
- Brush potatoes with oil and season with the "Old Bay-style" spice rub and grill until golden brown and cooked through, 3 to 5 minutes.
CRAB FRIES
Steps:
- Prepare your preferred method for frying french fries, such as oil on a stovetop, countertop fryer or air fryer at 350 degrees F.
- Drop the frozen fries into the oil and cook for 8 minutes (if you prefer a little extra-crisp, cook for an additional 2 minutes). Transfer to a medium bowl.
- Season with the Fry Seasoning to taste. Drizzle with the Char Grill Butter and toss until the fries are all covered.
- To a bowl or plate of your choice, add a layer of fries, an even layer of the Char Grill Cheese, lump crab and a drizzle of the Crab Mayo on top, then repeat the process.
- In a medium bowl, combine the paprika, salt, chili powder, granulated garlic and cayenne. Stir with a whisk until all ingredients are incorporated. Store in an airtight container, up to 1 month.
- In a medium stockpot, combine the butter, lemon juice, garlic, hot sauce, Worcestershire, salt, granulated garlic, liquid smoke and 1/2 cup water. Melt the butter on low heat, then turn the heat to medium and bring to a simmer. Cook for 5 minutes, then turn off the heat. (Be sure not to bring the mixture to a boil.) Store in an airtight container for up to 7 days.
- Combine the Parmesan, mozzarella, granulated garlic and parsley in a large mixing bowl. Transfer to a food processor and pulse until chopped into small pieces. Can be stored in the refrigerator for up to 7 days.
- In a large bowl, combine the parsley, onion, mayonnaise, lemon juice, hot sauce, honey and seafood seasoning until all ingredients are fully incorporated. Refrigerate in an airtight container for up to 7 days.
SEASONED GRILLED FRIES
Steps:
- Cover the potatoes with cold water in a large saucepan and cook until almost tender. Drain and dry the potatoes. Cut each potato lengthwise into quarters. Place the potatoes on a baking sheet and brush both sides of the potatoes with oil. Combine the chili powder, salt, and cumin in a small bowl, and sprinkle over the potatoes. Grill the potato wedges for 3 to 4 minutes per side until golden brown. Serve with ketchup.
