Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

Here is a nice technique for grilling fries that is pretty low calorie and also tasty. The whole family liked these, and next time we want "French Fries" I will probably make these. They are easier and healthier and yummier. From Bobby Flay and "Boy Meets Grill" on Food Network. I don't have "ancho chili powder", so I just used regular chili powder.

3 lbs idaho potatoes
1/2 cup canola oil
2 tablespoons dried ancho chile powder
1 tablespoon kosher salt
2 teaspoons ground cumin

Steps:

  • Put the potatoes, unpeeled, into a large pot and cover with cold water. Bring to a boil and simmer until almost tender, about 15-20 minutes. Do not overcook, or they will fall apart and you won't be able to cut them into fries.
  • Drain and dry the potatoes and allow to cool enough to handle.
  • Carefully cut each potato lengthwise into about 6 wedges. (Original recipe said 4 wedges, but those are too thick in my opinion.) You do have to be careful, since they are already cooked, that they could crumble or fall apart.
  • Place the wedges on a baking sheet and brush both sides of the potatoes with oil.
  • In a small bowl combine chili powder, salt and cumin. Sprinkle over the potatoes.
  • Grill the potato wedges for 3 to 4 minutes per side, until golden brown.

These fries are grilled to the perfect texture and then seasoned with simple spices that make them out of this world. They are also healthier and easier to make than traditional fries and are perfect for any BBQ!

1 head garlic
1/4 cup olive oil, divided
Kosher salt, to taste
3 russet potatoes, scrubbed
2 teaspoons paprika or smoked paprika, divided
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 cup mayonnaise
Juice of 1 lemon
1/2 teaspoon Worcestershire sauce
Fresh herbs, to serve

Steps:

  • Preheat the grill to medium-high heat. Cut the top off of the head of garlic to expose the cloves. Place the garlic head on a sheet of aluminum foil and drizzle the exposed cloves of garlic with about a teaspoon of olive oil. Sprinkle with salt and wrap in the foil. Grill until tender and browned, about 30 minutes.
  • Meanwhile, slice the potatoes into wedges and transfer to a large bowl. Drizzle with the remaining olive oil and season with salt. Toss to coat.
  • In a small bowl, mix together half of the paprika, and the cumin, chili pepper, garlic powder, black pepper, and salt, as desired. Set aside.
  • Grill the potato wedges until cooked through and grill-marked, about 8-10 minutes per side. Toss the grilled potato wedge fries with the spices.
  • Before serving, squeeze the roasted garlic into a medium-sized bowl with the mayonnaise, lemon juice, Worcestershire sauce, and remaining paprika. Mix well and serve the roasted garlic aioli and grilled wedge fries with fresh herbs.

1 1/2 teaspoons dry mustard
1 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground nutmeg

1/4 teaspoon ground allspice
1/2 teaspoon ground ginger
1 teaspoon paprika
1/4 teaspoon crushed red pepper flakes

Steps:

  • Combine all spices in a small bowl.

3/4 cup paprika
3/4 cup kosher salt
1/2 cup chili powder
1/2 cup granulated garlic
2 tablespoons cayenne pepper
2 pounds butter
1/2 cup lemon juice
1/4 cup minced garlic
1/4 cup hot sauce
1/4 cup Worcestershire sauce
2 tablespoons kosher salt
1 1/2 tablespoons granulated garlic
1 ounce liquid smoke
3 1/2 cups shredded Parmesan
1 1/2 cups shredded mozzarella
1 tablespoon granulated garlic
1 bunch fresh parsley, chopped
1 bunch fresh parsley, finely chopped
1/2 red onion, small dice
3/4 cup mayonnaise
1/4 cup lemon juice
1/4 cup hot sauce
1 tablespoon honey
1 tablespoon seafood seasoning, such as Old Bay

Steps:

  • Prepare your preferred method for frying french fries, such as oil on a stovetop, countertop fryer or air fryer at 350 degrees F.
  • Drop the frozen fries into the oil and cook for 8 minutes (if you prefer a little extra-crisp, cook for an additional 2 minutes). Transfer to a medium bowl.
  • Season with the Fry Seasoning to taste. Drizzle with the Char Grill Butter and toss until the fries are all covered.
  • To a bowl or plate of your choice, add a layer of fries, an even layer of the Char Grill Cheese, lump crab and a drizzle of the Crab Mayo on top, then repeat the process.
  • In a medium bowl, combine the paprika, salt, chili powder, granulated garlic and cayenne. Stir with a whisk until all ingredients are incorporated. Store in an airtight container, up to 1 month.
  • In a medium stockpot, combine the butter, lemon juice, garlic, hot sauce, Worcestershire, salt, granulated garlic, liquid smoke and 1/2 cup water. Melt the butter on low heat, then turn the heat to medium and bring to a simmer. Cook for 5 minutes, then turn off the heat. (Be sure not to bring the mixture to a boil.) Store in an airtight container for up to 7 days.
  • Combine the Parmesan, mozzarella, granulated garlic and parsley in a large mixing bowl. Transfer to a food processor and pulse until chopped into small pieces. Can be stored in the refrigerator for up to 7 days.
  • In a large bowl, combine the parsley, onion, mayonnaise, lemon juice, hot sauce, honey and seafood seasoning until all ingredients are fully incorporated. Refrigerate in an airtight container for up to 7 days.
