PERFECT ROASTED ASPARAGUS

- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup. Snap off the woody ends of the asparagus (if you sharply bend the asparagus near the base, it will snap in the right place). Discard the ends.
- Place the asparagus on the sheet and drizzle with 1 to 2 teaspoons olive oil, just enough to lightly coat the asparagus. Sprinkle salt and pepper over the asparagus, and toss until the spears are lightly coated in oil. Arrange the spears in a single layer on the pan.
- Bake just until the base of the asparagus is easily pierced through by a fork. Very thin asparagus, like the kind shown here, will take as little as 9 to 12 minutes, whereas thicker asparagus will need 15 to 20 minutes.
- Transfer the roasted asparagus to a serving platter and season however you'd like. You could keep it simple with a squeeze of lemon juice, or a sprinkle of Parmesan, or add a pat of butter or drizzle of balsamic vinegar.
- Roasted asparagus is best served when it's fresh out of the oven, but it will keep at room temperature for up to 1 hour or up to 4 days in the refrigerator (gently reheat before serving).

SAUTéED ASPARAGUS
Sautéed asparagus cooks quickly with olive oil, garlic, and butter, and is finished with lemon juice and parmesan cheese. It's an easy spring side!

Steps:
- Trim the woody ends from the base of the asparagus spears by cutting off the bottom 2 inches or by snapping it off with your hands.
- Heat a large skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the asparagus in a single layer and cook, turning occasionally, until lightly golden and almost tender, 8 to 10 minutes. (Cut a small piece from the end of one asparagus to see if it's near tender.)
- Reduce the heat to low. Add the butter, garlic, salt and pepper and stir to coat the asparagus. Cook until the garlic is softened and fragrant, 1 to 2 more minutes. Immediately transfer to a serving plate.
- Just before serving, squeeze the juice from the lemon half over the asparagus and sprinkle with parmesan cheese. Serve immediately.
SEASONED ROASTED ASPARAGUS
As a kid, I really disliked asparagus! They were always cooked to a "perfect mush!" This recipe makes me crave the veggie I disliked most as a child! Crisp aspargus, easy recipe. The juice has an "Italian-like" flavor. From the Tastefully Simple recipe file, I suggest using their seasoned salt to make this perfect!

- Place asparagus in a single layer on a baking sheet or broiler pan (suggested).
- Drizzle with oil and lemon juice; sprinkle with seasoned salt - coat evenly.
- Bake at 450 F for a total of 10 minutes or until crisp-tender. For a more even tenderness, turn each aspargus stalk after 5 minutes.
- Sprinkle with Parmesan cheese immediately before serving.

SEASONED GRILLED ASPARAGUS
Grilling asparagus really brings out a terrific flavor. Easy too, just add to the grill as you're cooking the meat. The seasoning is just a guideline, use whatever herb or seasoning you like. We've used basil, oregeno, etc.

Steps:
- Remove woody ends from asparagus and discard.
- Place asparagus in large ziploc bag. Pour in oil and sprinkle seasoning.
- Close bag forcing out air. Rub asparagus through bag to evenly distribute seasonings.
- Grill to your taste. We use a pan for the grill that has holes in it. Often serve with grilled shrimp since it can all be placed in the same pan. Delicious.

- Hold one spear of asparagus with a hand at each end and bend it until it snaps into two pieces. Discard the woody stem end that snapped off. Repeat this process with the remaining asparagus. Or, line up the rest of the asparagus next to the trimmed one and use a sharp chef's knife to trim off the ends so that the spears are the same length as the first one.
- Place the asparagus spears on the parchment-lined baking sheet. Drizzle with olive oil and toss to coat. Arrange the asparagus in a single layer, with a little room between each spear if possible.
