SEAFOOD ALFREDO STUFFED SHELLS
It's a perfect union between Seafood Alfredo and Stuffed Shells. Pasta shells stuffed with a mix of shrimp, scallops, crab and cheese, baked in Alfredo sauce.

Steps:
- Cook shells until they are almost done and set aside.
- Preheat oven to 350 and lightly grease a casserole dish.
- In a medium mixing bowl, place diced green onion and Mozzarella cheese.
- In a cooking pan, over medium heat, heat up oil and add diced shallots, chopped tomatoes and minced garlic. Saute veggies until soft and fragrant.
- Add seafood and mix.
- Add lemon juice and salt to taste. Cook just until seafood is done (until shrimp are pink and scallops are white). Add veggie/seafood mixture to the mixing bowl. Mix well.
- You can make Alfredo in the same pan as you cooked seafood.
- Melt butter in the pan and saute garlic just until fragrant. Add heavy cream and sour cream. Carefully whisk until combined with a silicone covered whisk. Bring to simmer.
- Add cheeses and some salt, mix well. Simmer for about 5 minutes.
- Add sauce to the casserole dish.
- Stuff pasta shells with the seafood mixture and carefully place each in the sauce. You can scoop some sauce over the shells as well.
- Grate some Parmesan cheese over the top.
- Bake for 17-20 minutes.

Giant pasta shells stuffed with a seafood cheese mixture. Alfredo sauce is poured over all and baked to perfection! Reheats nicely. We like it served with sourdough French bread (#111856)Inexpensive enough to have on our regular menu but nice enough to serve at special occassions. Enjoy!

- Boil giant pasta shells in salted water until they are pliable but not quite completely cooked. While they are cooking, you can make your sauce.
- Melt butter in skillet.
- Add garlic and saute for 3 minute being careful not to burn it.
- Add the cream, milk, salt, lemon zest and bring to a boil. Turn heat to low. Wait 2-3 minutes and add cheeses.
- When cheese has melted, add the lemon juice. Stir over med. heat for 2-3 minutes.
- Make a slurry of water and cornstarch, mixing it well. Add to the sauce and cont. to cook until it thickens nicely. Be sure to keep an eye on it, and to stir it, because it will thicken quickly. Don't overcook it or you will have a paste. It stays nice and creamy even when baked.
- Drain your pasta shells and run under cold water until you can handle them. Stuff with the cheese and seafood mixture.
- Pour the sauce over all and bake 30 minute in a 350 degree oven.

- Preheat oven to 350ᵒ.
- Season chicken with salt and pepper. On a clean work surface, lay chicken breast flat, smooth sides down. Fill and roll: Layer each breast with 12-15 arugula leaves, one bacon strip tore into pieces, and 1 tablespoon of Feta cheese. Starting at the narrow end, roll up chicken tightly; seal with a toothpick. Transfer chicken to a 2 quart baking dish (or a dish just large enough to hold the chicken) sprayed with non-stick cooking spray.
- In a small pot, heat the Ragu and milk on low heat while gradually adding cream cheese. Stir until cream cheese is melted and well incorporated with the Ragu Alfredo Sauce. Slowly pour the sauce over the chicken. Sprinkle chicken with the parmesan cheese and pine nuts.
- Bake uncovered 35-40 minutes until chicken is opaque throughout. Let chicken rest for 5 minutes. Remove toothpicks prior to serving. Enjoy!

BIG PASTA STUFFED SHELLS
This is very easy to make if you can boil water! My sauce is excellent with this dish (recipe #106003--Give it a try)!

- Preheat oven to 350°F.
- Boil shells for no longer that 6 minutes, remove from heat and drain, let cool to handle.
- In a large bowl beat egg, stir in Ricotta or cottage cheese.
- Add 3/4 of the mozzarella and 1/3 of the Paremesan cheese along with the chopped parsley,chop the bacon up in small pieces and add.
- Mix well together.
- Spread 4-5 tablespoons of sauce on the bottom of glass dish (13x9x2).
- Stuff shells with filling sprinkel with remaining cheese, add remainder of the sauce. Cover with aluminum foil about 30 minutes.
- Uncover and bake another 5 minutes without foil.
- Let stand 5 minutes and serve.

EASY CHEESY FONDUE #RAGU
Ragú® Recipe Contest Entry. This is a fun recipe that can either be used as a meal or a great and different appetizer for your next party. The fondue incorporates Ragu Double Cheddar Sauce, Ragu Traditional Sauce and goat cheese; and dippers include tortellini, Italian sausage and polenta.

- To prepare dipping items:.
- Tortellini: Prepare according to package directions.
- Italian bread: Cut into 1-inch cubes.
- Italian Sausage: Place sausage in a large saucepan, cover with water. Bring to a boil over high heat and cook until sausage is cooked through, approximately 10 minutes. Remove from pot and cool for 5 minutes. Slice into 1/4-inch slices. Place a large skillet over high heat; add in enough vegetable oil to cover bottom of skillet. Cook sausage on both sides until golden brown, approximately 2 minutes per side; drain.
- Polenta: Slice polenta into 1/2-inch slices. Place skillet back over medium high heat; add in additional vegetable oil to measure 1/4-inch in bottom of skillet. Add in the slices of polenta and cook until golden brown, approximately 4 - 5 minutes per side. Drain on paper towel, then cut into quarters.
- Note: Dipping items can be prepared in advanced and served hot or at room temperature.
- To prepare fondue:.
- Rub the inside of an electric fondue pot with garlic. Set heat on fondue pot at 350 degrees. Add in the cheddar sauce and traditional sauce and cook until heated through, approximately 3 - 4 minutes. Whisk in the goat cheese until melted. Stir in the black pepper and nutmeg, bring to a boil, stirring constantly. Lower heat to 200 degrees. Using fondue forks or tooth picks, spear prepared dipping items and enjoy!
- Serves 4 as a meal, more as appetizers.
- Note: If fondue pot is not available, you can cook fondue on stove top, in a medium sized pot over medium heat, then transfer fondue to a small dip-sized crock pot to keep warm.
