I've always loved wasabi with tuna, but usually the wasabi overpowers such a delicate fish. When this recipe came to me through a friend, who doesn't recall its origins, I finally found the perfect marriage of flavors. I can't make this often enough!

24 ounces ahi tuna steaks, around 1-inch thick
2 tablespoons dark sesame oil
salt and pepper
1/2 cup butter
3 tablespoons soy sauce
2 tablespoons wasabi paste (the tube kind)
3 green onions, sliced
2 tablespoons fresh lemon juice
lemon slice (for garnish)

Steps:

  • Drizzle sesame oil on both sides of each tuna steaks. Season with salt and pepper.
  • Combine remaining ingredients in a small sauce pan. Heat over low heat until butter is melted, stirring constantly to mix and prevent scorching.
  • While sauce is heating, heat a heavy frying pan on another burner with high heat. Place tuna in pan and sear until crispy and brown. Turn and sear on the other side.
  • Note: Tuna steak fans who like their tuna on the rare side (like me) will usually find 2 minutes searing time is ample. Folks who like their tuna steaks more well-done (like my DH) may want to sear their tuna for 4-5 minutes per side.

Prepare yourself for some strong kick from wasabi butter sauce on this seared tuna salad. Try this recipe at home. Your taste buds will thank you!

½ cup or gluten free panko panko bread crumbs
3 tbsp black and white sesame seeds
5 oz 4 raw, used Trader Joes frozen ahi tuna steaks ahi or yellowfin tuna steaks
½ tsp kosher salt
freshly ground black pepper
or cooking spray canola oil
2 tbsp reduced sodium or gluten-free soy sauce
1 tsp prepared wasabi paste
2 tsp minced shallots
¼ cup used Sauvignon Blanc White Wine
2 tbsp whole milk
2 tbsp unsalted butter
4 cups fresh baby arugula
4 cups fresh baby spinach
sliced for garnish, optional radish
sliced for garnish, optional cucumber

Steps:

  • Mix panko and sesame seeds on a large plate or shallow bowl.
  • Season tuna with salt and pepper, to taste.
  • Gently press both sides of each tuna steak into the crumb mixture.
  • Heat a large skillet over medium-high heat and spray with oil.
  • Add 2 steaks, spray each with oil and allow them to cook 2 to 3 minutes, or until the outer edge becomes opaque.
  • Flip each steak, spray second side with oil and cook an additional 2 minutes, or until the outer edge is opaque.
  • Repeat with remaining 2 steaks.
  • Set all 4 steaks on a cutting board and allow them to rest and cool.
  • Meanwhile, in a small bowl, combine soy sauce and wasabi paste. Set aside.
  • In a small skillet over medium-low heat, add shallots and wine. Simmer until reduced by half for 2 to 3 minutes.
  • Add the milk and whisk constantly until the sauce no longer looks separated and has slightly thickened (about 1 minute).
  • Remove from heat and whisk in soy and wasabi paste mixture. Add butter and whisk to combine.
  • Distribute arugula and spinach evenly among 4 shallow bowls.
  • Thinly slice the tuna and top each bed of lettuce with 1 tuna steak.
  • Drizzle each with about 1 1/2 tablespoons of sauce. Serve immediately.

I have been making this recipe for years. It was actually one of the first things I ever learned to cook. Remains a staple in my cookbook.

4 tuna steaks (1-inch thick)
vegetable oil, for brushing tuna
1 1/2 teaspoons crushed black peppercorns
1 tablespoon minced fresh dill
3 scallions, sliced thin
1 teaspoon minced fresh coriander (I use dry)
1 1/2 tablespoons fresh lime juice
3 tablespoons soy sauce
1 1/2 tablespoons wasabi paste
6 tablespoons cold unsalted butter, cut into pieces

Steps:

  • Arrange tuna steaks in one layer in a shallow dish and lightly brush both sides with oil.
  • Spread peppercorns and dill evenly on both sides of tuna and marinate 20 minutes.
  • Grill tuna on a oiled rack set about 5-6 inches over glowing coals. 3 minutes on each side for medium-rare fish. (Alternatively, grill tuna in a preheated oiled well-seasoned ridged grill pan).
  • Make sauce while tuna marinates:.
  • In a heavy saucepan combine scallions, coriander, lime juice, soy sauce and wasabi paste and bring to a boil.
  • Reduce heat to low and whisk in butter, 1 piece at a time, lifting pan from heat occasionally to cool mixture and adding each new piece before previous one has melted completely. (Do not allow sauce to simmer. Sauce should not get hot enough to seperate).
  • This dish goes well served with garlic mashed potatoes and french green beans.

This is a combination of two recipes I found while looking around on the internet. One didn't have the sesame seeds and one had the sauce I wanted. So I mixed ideas. If your tuna isn't bright red and it flakes apart you won't want to use it for this dish. I am finding if it isn't the right color and isn't fresh it does not taste right. I have purchased steaks in individual plastic packs that have been pre-frozen from the fish counter with good results. In the picture you see it with a vegetable it is Recipe #91301.

2 ahi tuna steaks, 1/2 lb, 1-inch thick
1/2 cup white sesame seeds, toasted
1 tablespoon coriander seed, crushed (or 1/2 tablespoon coriander powder)
1 teaspoon coarse salt
1 teaspoon pepper
1 tablespoon oil (vegetable, corn, canola, etc.)
1 tablespoon sesame oil
1/2 cup water
2 tablespoons wasabi paste
1/3 cup soy sauce (I use reduced sodium)
2 tablespoons vegetable oil
1 1/2 teaspoons sesame oil
1 tablespoon dry sherry
1 1/2 teaspoons fresh gingerroot, minced
4 green onions, thinly sliced
1 cup daikon radish, grated use large holes on cheese grater

Steps:

  • Grate Daikon radish first, prep two plates with the radish laid out in a thin layer large enought to place a tuna steak on, leave out so it can get to room temperature (it isn't as good cold).
  • Mix together all sauce ingredients and set them aside.
  • Rinse tuna under cold water and pat dry.
  • Place sesame seeds, coriander, salt, and pepper into a bowl large enough to dip the steaks into. Mix the ingredients well.
  • Dip both sides of steaks into spice mix pressing down lightly to help the spices stick to the steaks.
  • Warm sesame, and regular oil in deep 10" (I use a non-stick) frypan over medium high heat(gas 8) until they're shimmery.
  • Carefully place both steaks into oil.
  • Keep an eye on the side of the steaks, when they start to slightly brown turn them over and brown the other side.
  • When done transfer steaks to cutting board and slice into 1/2" strips.
  • Then place on beds of daikon radish and pour half of sauce over each steak.
  • I usually serve this with a side of jasmine rice, or my recipe for wasabi mashed potatoes.

This tuna is seared and still raw insde so be sure to get sushi quality tuna. I myself like it that way!

1 1/4 cups white wine
2 tablespoons limes
1/4 cup onion, minced
1 piece fresh ginger, size of a quarter and crushed
1 garlic clove, left whole and but crushed
2 -4 tablespoons wasabi paste
1 tablespoon soy sauce
1/2 cup unsalted butter
1 cup fresh cilantro leaves or 1 cup fresh parsley
6 (6 ounce) tuna steaks
1 tablespoon olive oil
salt and pepper

Steps:

  • Combine wine, lime, onion, ginger and garlic in a saucepan over medium heat. Simmer to reduce to about 2 tablespoons.
  • Place reduced sauce in blender with the butter, soy and wasabi and blend till smooth and butter is melted.
  • Place in a bowl.
  • Stir in cilantro.
  • Preheat grill high. It needs to be very hot!
  • Mix olive oil and 1 tablespoon sauce together. Brush tuna steaks with the sauce and oil mixture.
  • Grill for 90 seconds then turn and continue grilling for 90 seconds more.
  • If you just want the tuna seared remove from grill now. Otherwise continue grilling for 1 minute on each side again.
  • Serve tuna topped with the yummy sauce.

1/3 cup soy sauce
3 tablespoons peanut oil
1 tablespoon dry sherry

24 ounces tuna steaks
5 tablespoons white and black sesame seeds

Steps:

  • Whisk 1/2 cup water and wasabi powder in medium bowl to form smooth paste. Whisk in soy sauce, 2 tablespoons peanut oil, sherry, and sesame oil. Set aside.
  • Coat eachside of the tuna steaks with the sesame seeds.
  • Heat 1 Tablespoons of peanut oil in a heavy skillet over high heat. Add tuna and sear until opaque in center, about 3 minutes per side.
  • Remove Tuna from skillet and add sauce. Reduce saude until thick. Pour sauce over tuna or serve on the side.
