Time 29m

Yield 4

Number Of Ingredients 17

4 tuna steaks (5 ounce size)
salt and pepper
1 tablespoon canola oil
1/2 cup balsamic vinaigrette
2 slices bacon, diced, cooked until crispy, drained of all fat
2 tablespoons pine nuts, toasted until light brown
1 cup cherry tomatoes, cut in half
1 pound baby spinach leaves, washed thoroughly and dried well
Balsamic Vinaigrette
1/2 cup balsamic vinegar
2 tablespoons lemon juice
1 tablespoon chopped shallots
1 teaspoon chopped garlic
1 teaspoon sugar
salt and pepper
1 1/3 cup extra virgin olive oil
1 1/3 cup canola oil

Steps:

  • Make Balsamic Vinaigrette: In large bowl, mix together all ingredients except oils. Slowly whisk in oils until emulsified. Adjust seasoning and set aside or store in refrigerator until needed. Season tuna steaks with salt and pepper on both sides. Heat large saute pan over high heat. Add canola oil to hot pan. When oil reaches smoking point, carefully place tuna in oil. Cook tuna 2-3 minutes per side. Carefully flip once with spatula. In separate small saute pan, heat balsamic vinaigrette until it just begins to bubble. Add bacon and pine nuts and return to a light simmer. Pour hot dressing over spinach and tomatoes and mix well. Divide spinach salad onto individual plates. Place tuna steak on salad. Serve immediately.

Grilled Tuna with Balsamic Glaze image

Thick tuna steaks are brushed with a glaze of balsamic vinegar, white wine, and a bit of sugar.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 11

6 tablespoons white wine
1 cup plus 2 tablespoons balsamic vinegar
2 tablespoons sugar
1 teaspoon freshly ground black pepper
1 1/2 pounds ripe fresh tomatoes, cut into 1/2-inch dice
2 teaspoons olive oil
2 teaspoons salt
3/4 pound haricots verts or green beans, stem ends trimmed
1 teaspoon fresh lemon juice
6 6-ounce, 1-inch-thick, fresh tuna steaks
1/4 cup loosely packed basil leaves, very thinly sliced

Steps:

  • Combine wine, vinegar, sugar, and 1/4 teaspoon pepper in a small saucepan over medium-high heat. Simmer until slightly thickened and syrupy, 25 to 30 minutes. Remove from heat, and set aside.
  • Combine tomatoes, 1 teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Toss, and set aside
  • Heat grill to medium hot. Combine haricots verts, lemon juice, remaining teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl; toss well. Arrange beans on the grill and cook, turning, until just limp and lightly charred, 2 to 4 minutes. Transfer to a serving platter.
  • Sprinkle remaining teaspoon salt and 1/4 teaspoon pepper on all sides of tuna steaks. Brush wine-and-vinegar mixture on tops and sides of steaks and place, glazed side down, on grill. Grill, brushing with more glaze, until lightly charred, about 3 minutes per side for rare, 6 to 7 for well done. Transfer to serving platter with beans. Add basil to tomatoes, toss, and spoon over tuna. Serve immediately.

SPICE-RUBBED SEARED TUNA STEAKS WITH BALSAMIC REDUCTION

Spice-Rubbed Seared Tuna Steaks With Balsamic Reduction image

These spice-rubbed seared ahi tuna steaks are easy to make and take a few minutes to cook. Add the balsamic reduction sauce, and you're good to go.

Provided by John Mitzewich

Categories     Entree     Dinner

Time 20m

Yield 4

Number Of Ingredients 13

Balsamic Reduction:
6 tablespoons/90 milliliters aged balsamic vinegar
1 medium lemon (juiced)
1 garlic clove (peeled and halved)
For the Tuna:
1 (1 1/2 pounds) center-cut ahi tuna fillet
1 1/2 teaspoons/7.5 milliliters kosher salt
1 teaspoon/5 milliliters coriander (ground)
1 teaspoon/5 milliliters paprika
1/4 teaspoon/1.25 milliliters cayenne pepper
1 1/2 teaspoons/7.5 milliliters black pepper (coarsely ground)
2 tablespoons/30 milliliters vegetable oil (for cooking)
Garnish: 4 lemon wedges

Steps:

  • Gather the ingredients.
  • Make the balsamic reduction : Place the balsamic vinegar, lemon juice, and garlic in a small saucepan over medium-low heat.
  • Simmer until the mixture reduces by half. Turn off the heat and reserve until needed. This sauce does not have to be hot for serving. The reduction will thicken slightly as it cools.
  • If your tuna fillet is not already sliced into servings, slice into 4 rectangular steaks of equal size. In a small bowl, combine the salt, coriander, paprika, and cayenne pepper. Lay the tuna steaks out on a plate and sprinkle the spice mixture evenly on all sides.
  • Evenly coat the tuna steaks with the freshly ground black pepper and gently press it in so that it adheres to the surface, being careful not to smash the flesh.
  • Place a thick-bottomed frying pan or cast-iron skillet over medium-high heat. Add the oil and swirl to coat the pan. When you see small wisps of smoke, add the tuna to the pan and sear the steaks for about 1 minute per side or until the desired doneness is reached.
  • Remove the tuna steaks and place them on a cutting board. For presentation, cut each steak diagonally into 4 to 5 slices and fan on a plate. Serve with a small amount of sauce drizzled alongside. Garnish with a lemon wedge and enjoy.
