SEARED SCALLOPS WITH CREAMY SUMMER SUCCOTASH

Seared Scallops with Creamy Summer Succotash image

Tender scallops and sweet corn are a classic combination, but we upped the ante by making a creamy summer succotash. Along with freshly shucked corn, we added haricots verts, bell pepper, cherry tomatoes and basil -- seasonal ingredients that are available fresh all summer long.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

4 tablespoons canola oil
4 ounces pancetta, diced
1 small red onion, diced
4 ears corn, shucked and kernels cut off
2 cloves garlic, minced
3/4 cup heavy cream
4 ounces haricots verts, trimmed and cut into 1-inch pieces (about 1 cup)
1 red bell pepper, stemmed, seeded and diced
1 cup heirloom cherry tomatoes, halved
Kosher salt and freshly ground black pepper
1 cup fresh basil leaves, torn
1 1/4 pounds large sea scallops (about 20), "foot" muscle removed, patted dry (see Cook's Note)

Steps:

  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the pancetta and cook, stirring occasionally with a wooden spoon, until well browned and crisp, about 5 minutes. Transfer to a paper-towel lined plate. Discard all but 1 tablespoon of the fat in the pan.
  • Return the skillet to medium-high heat. Add the red onion and cook, stirring often, until just tender, about 2 minutes. Add the corn and garlic and cook, stirring often, until the corn is crisp-tender, about 2 minutes. Remove from the heat.
  • Combine 1/2 cup of the corn mixture with the heavy cream in a blender. Blend until smooth and reserve.
  • Add 1 more tablespoon of the oil to the skillet with the remaining corn mixture and turn the heat to medium-high. Add the haricots verts and bell pepper and cook, stirring often, until the haricots verts are bright green and crisp tender, about 2 minutes. Stir in the cherry tomatoes, reserved corn puree and pancetta. Cook until the mixture is bubbling and warmed through, about 1 minute. Season with 1/2 teaspoon salt and a few grinds of black pepper. Set aside and keep warm over low heat.
  • Heat the remaining 2 tablespoons oil in a large skillet over high heat. Pat the scallops dry with paper towels and season both sides generously with salt and pepper. Add to the skillet and cook, undisturbed, until browned on the bottom, about 3 minutes. Flip and sear until just cooked through, about 1 minute more.
  • Stir half the torn basil into the corn mixture, then spoon the succotash onto plates. Top with the seared scallops and serve with more torn basil on top.

SHEET-PAN TROUT AND SUCCOTASH RECIPE | EPICURIOUS

Sheet-Pan Trout and Succotash Recipe | Epicurious image

Make succotash by steaming a mixture of corn, green beans, and tomato in a foil pouch alongside butterflied trout for an easy Southern-inspired sheet-pan dinner.

Provided by Anna Stockwell

Time 35m

Yield 4 servings

Number Of Ingredients 11

2 whole butterflied trout (about 12 oz. each), heads removed
2 tsp. Old Bay seasoning
3 Tbsp. unsalted butter, cut into small pieces, divided
1 lemon, thinly sliced
3 medium ears of corn, kernels cut from cobs (about 3 cups)
6 oz. green beans, cut into 1" pieces
1 large tomato, cut into 1" pieces
1 tsp. kosher salt
¾ cup mayonnaise
¼ cup fresh lemon juice
½ tsp. freshly ground black pepper

Steps:

  • Arrange a rack in top third of oven; preheat to 450°F. Line an 18x13" rimmed baking sheet with foil. Lay trout open like a book, skin side down and alternating head-to-tail next to each other on one half of pan. Sprinkle flesh with Old Bay, then dot with half of butter. Arrange lemon slices over.
  • Drape a long (about 30") piece of foil crosswise over other half of pan. Toss together corn, green beans, tomato, salt, and remaining butter on foil. Fold edges up and over to create packet; pinch edges closed.
  • Roast until trout is opaque and cooked through, about 10 minutes. You want to check the thickest part of the flesh-if you need to lift a lemon to look at it, do so, and continue roasting until it's totally opaque.
  • While fish is cooking, whisk mayonnaise, lemon juice, and pepper in a small bowl until smooth.
  • Divide trout and succotash among plates. Serve with mayonnaise sauce alongside.

STRIPED BASS PUTTANESCA WITH SEARED FINGERLING POTATOES

Striped Bass Puttanesca with Seared Fingerling Potatoes image

This is a classic Italian sauce with rich, briny flavors that is the perfect thing to flavor flakey white striped bass. And it's also one of the easiest, fastest one-pot, stove top meals.

Provided by Dave Lieberman

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 18

1/4 cup extra virgin olive oil
4 large garlic cloves, thinly sliced
1/4 teaspoon red pepper flakes
3 anchovies, roughly chopped or mashed with a fork
1/4 cup capers
3/4 cup pitted Moroccan oil cured black olives, roughly chopped
1/2 cup white wine
6 cups Basic Tomato Sauce, recipe follows
4 (6-ounce) striped bass fillets, skinned
Kosher salt and freshly ground black pepper
1 small bunch basil, stemmed, for garnish
1 pound fingerling potatoes, parboiled for about 12 to 15 minutes, drained and cooled
2 tablespoons olive oil
5 tablespoons olive oil, plus extra for garnish
12 cloves garlic, thinly sliced
6 (28-ounce) cans chopped tomatoes
2 1/2 teaspoons sugar
Kosher salt

Steps:

  • In a large skillet over medium heat, heat the olive oil. Add the garlic and red pepper flakes and cook until just fragrant, 1 minute. Add the anchovies, capers and olives and cook until the anchovies have begun to dissolve in the oil, about 5 minutes. Pour in the wine and the Basic Tomato Sauce and bring to a simmer. Add the fish fillets, making sure they are submerged in the sauce, and gently simmer until the fish is cooked through and the flesh is milky white and slightly flaky, about 10 minutes. Season with salt and pepper, to taste.
  • Meanwhile, cut each fingerling in half lengthwise and place in a medium bowl. Toss well with salt and pepper. Heat the olive oil in a large skillet over high heat. Add the potatoes, cut side down, and cook until well browned, about 5 minutes.
  • Serve the potatoes alongside the puttanesca and garnish with basil and freshly ground black pepper.
  • In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
  • Add the garlic and cook until fragrant but not browned, 1 to 2 minutes. Add the tomatoes, bring to a simmer, and cook until thickened slightly, about 15 minutes. Stir in sugar, and season with salt, to taste.
  • Let extra sauce cool completely and then seal in airtight containers. Refrigerate for up 1 week and freeze for up to 1 month.
