SEARED SCALLOPS WITH RED CHILE PASTE AND FENNEL SALAD

Seared Scallops with Red Chile Paste and Fennel Salad image

Scallops: so meaty and delicious and yet so easy to overcook. That's why we sear these on only one side, preserving the meltingly tender, near-raw texture on the other end.

Yield 4 servings

Number Of Ingredients 9

2 small red chiles (such as Fresno or Holland), seeds removed, finely chopped
2 teaspoons finely grated grapefruit zest
1/4 teaspoon kosher salt, plus more
2 tablespoons vegetable oil
12 large sea scallops, side muscle removed, patted dry
1 small fennel bulb, quartered through root end, thinly sliced lengthwise, plus 1/3 cup fennel fronds
1 tablespoon white wine vinegar
1/4 cup fresh grapefruit juice
Olive oil (for drizzling)

Steps:

  • Using the side of a chef's knife, mash chiles, grapefruit zest, and 1/4 tsp. salt to a paste on a cutting board. Set chile paste aside.
  • Heat vegetable oil in a large skillet over high until lightly smoking. Season scallops with salt; working in 2 batches to avoid overcrowding the pan, cook until edges begin to brown, about 1 minute. Transfer scallops to a platter, browned side up, and swipe some reserved chile paste on each.

  • Pour grapefruit juice over scallops and top with fennel salad and fennel fronds; drizzle with olive oil.

PAN-SEARED SCALLOPS WITH FENNEL PUREE

Pan-Seared Scallops with Fennel Puree image

Categories     Side     Steam     Scallop

Yield Serves 12 as an hors d¿oeuvre

Number Of Ingredients 4

6 large sea scallops
Coarse salt
Sunflower or other neutral-tasting oil
3/4 cup Fennel Puree (page 310), fennel fronds reserved for garnish

Steps:

  • Sear scallops If necessary, remove the small, tough muscle (called the adductor) found on the side of the scallops (often the fishmonger will have removed it), then slice each scallop in half horizontally so that you have twelve pieces. Heat a large skillet over high heat. Season scallops on both sides with salt. When pan is hot, add enough oil to coat bottom of pan (about 1 tablespoon), and swirl to coat evenly. Working in batches to avoid crowding pan, add scallops and quickly jerk the pan to keep them from sticking. Sear until lightly golden, about 45 seconds; with an offset spatula, turn over and cook until opaque throughout, about 30 seconds more (be careful not to turn too soon or the scallops may tear). Transfer to a plate lined with paper towels and cover to keep warm (if necessary). Repeat with more oil and remaining scallops.
  • Serve Heat fennel puree in a small saucepan over medium heat until warm. Spoon 1 tablespoon puree onto each of 12 small plates and top with a scallop slice. Garnish with fennel fronds, and serve.

SEARED SCALLOPS WITH ORANGE-GINGER SAUCE AND CARAMELIZED FENNEL

Seared Scallops with Orange-Ginger Sauce and Caramelized Fennel image

Number Of Ingredients 19

Serves 4
2 tablespoons (30 g) butter
2 heads of fennel
1 teaspoon sugar
1 head of radicchio, finely shredded
Sauce:
1 shallot, minced
½ clove garlic, minced
1 tablespoon of fresh ginger, minced or grated
½ cup fresh orange juice
½ cup (60 g) heavy cream
5 tablespoons (70 g) cold butter, cut into pieces
Salt and Pepper
Juice of 1 lime
A handful of parsley or basil or a combination of both
Scallops:
12 Sea Scallops
1 tablespoon butter
Salt and pepper

Steps:

  • To cook the fennel, melt the butter in a large skillet over medium-low heat. Season the fennel with salt and pepper. When the butter begins to foam, sprinkle the sugar evenly over the base of the pan and place the fennel on top in a single layer. Add two tablespoons of water and the turn down the heat. Cover with a parchment paper. Cook, turning occasionally and adding more water if necessary, until the fennel is tender when pierced with a knife and evenly colored, about 15 minutes. Keep warm.
  • To make the sauce, melt 1 tablespoon of butter in a small saucepan. Add the shallot, garlic and ginger. Cook 3-5 minutes or until the vegetables are soft. Add the orange juice and simmer until reduced by half, about 4 minutes. Add the cream, bring to a simmer and let it reduce slightly, about 2 minutes. Remove from the heat and swirl in the butter pieces a few at a time until all is incorporated. Keep the sauce warm.
  • To cook the scallops, heat the butter in a large skillet until it begins to foam. Season the scallops, place them in the skillet and sear on one side until lightly browned, about 2 minutes. Turn off the heat and turn the scallops over to lightly cook the other side.
  • To serve, strain the sauce into a small saucepan, add the limejuice to taste and adjust the seasoning, keep warm. Reheat the fennel, when warm through, place two slices on individual serving plates. Add the shredded radicchio to the still warm fennel pan, briefly sauté until lightly wilted, about 1 minute. Place three scallops on top of the fennel, spoon over the sauce and garnish with the sautéed radicchio and herbs.

  • Lay scallops on a paper towel–lined plate and allow to come to room temperature, about 15 minutes. Season with 1/2 tsp. salt and let stand 5 more minutes. "Seasoning before cooking develops the best flavor," says Clark. Blot dry.
  • Meanwhile, make relish: If using fresh tomatoes, dip them in a large pot of boiling water, 10 seconds. Let cool, then peel. (If using canned tomatoes, don't boil.) To seed tomatoes, simply cut them in half and squeeze. Core and dice fine.
  • Heat 2 tbsp. butter in a large skillet over medium heat until it begins to brown. Add onion, fennel, and a pinch of salt and cook until vegetables are soft, about 10 minutes. Add garlic and cook 2 minutes; add cumin and cook 1 minute more, stirring often. Stir in tomatoes and cook until sauce is glossy and thickened, about 8 minutes. Stir in the remaining butter "to emulsify the sauce a bit," then add parsley. Season to taste with salt and pepper.
  • Heat a large frying pan (cast-iron is best; with nonstick, you won't get a good crust) over medium-high heat until hot. Swirl in oil, then arrange scallops in a single layer in pan, with ample space around each. Cook without moving scallops until golden and crusty underneath, about 2 minutes; then turn and cook for about a minute. Remove from heat and let scallops sit in pan 1 minute; transfer to a plate, starting with the thinnest scallops.

  • Melt the butter in a large saucepan. Add all but 1/2 cup of the fennel along with the sliced onion, garlic and fennel seeds. Cook over moderately low heat, stirring, until the fennel is crisp-tender, about 20 minutes. Add the fish stock and bring to a simmer. Cover and cook over low heat until the vegetables are softened, about 20 minutes. Let cool slightly, then puree in batches in a blender.
  • Strain the mixture through a fine sieve; discard the solids. Pour the broth into a small saucepan, add the Pernod and season with salt and pepper; keep warm.
  • Using a sharp knife, peel the orange, removing all of the bitter white pith. Working over a bowl, cut in between the membranes to release the sections. Add the celery, red onion, olive oil, vinegar and the reserved 1/2 cup of fennel to the orange sections and toss. Season with salt and pepper. Spoon the mixture into 4 shallow soup plates and let stand for 15 minutes.
  • In a large skillet, heat the canola oil until shimmering. Pat the scallops dry and season with salt and pepper. Cook the scallops over high heat until browned and crusty, 2 to 3 minutes. Reduce the heat to moderately high, turn the scallops and cook until browned, about 2 minutes longer. Arrange 3 scallops in the center of each soup plate and spoon a little broth over the vegetables. Garnish with the chives and feathery fennel tops and serve.
