BALSAMIC-GLAZED SALMON

Balsamic-Glazed Salmon image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 14

3/4 cup balsamic vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 clove garlic, peeled and smashed or chopped
Four 6-ounce center-cut salmon fillets, skinned
2 tablespoons olive oil
Kosher salt and freshly ground pepper
2 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
2 cloves garlic, peeled and smashed or chopped
2 1/2 cups frozen shelled edamame (12 ounces), thawed
2 cups sugar snap peas (6 ounces), halved

Steps:

  • For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
  • For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes. Set aside to cool for 10 minutes.
  • For the vegetables: In a medium skillet, heat the olive oil over medium-high heat. Add the shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until the shallots are softened, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the edamame and snap peas and cook until warmed through, about 3 minutes. Season with salt and pepper.
  • Divide the vegetable mixture among 4 serving plates. Top with a piece of salmon and drizzle with the glaze.

6 (5 ounce) salmon fillets
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
⅓ cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste
1 tablespoon chopped fresh oregano

Steps:

PAN-SEARED SALMON WITH SOY MUSTARD GLAZE

Pan-Seared Salmon with Soy Mustard Glaze image

Tangy and sweet, the glaze makes this easy but elegant seared salmon dish.

Provided by Jennifer Segal (Soy Mustard Glaze adapted from Cook's Illustrated)

Categories     Dinner

Time 15m

Yield 6

Number Of Ingredients 11

¼ cup plus 2 tablespoons dark brown sugar
¼ cup soy sauce (use gluten-free if needed)
¼ cup mirin (Japanese sweet rice wine)
2 tablespoons sherry vinegar
2 tablespoons whole grain mustard, best quality such as Maille
2 tablespoons water
2 teaspoons cornstarch
¼ teaspoon red pepper flakes
Six 5-6 oz fillets center-cut salmon, skinned
½ teaspoon kosher salt
2 tablespoons vegetable oil, for cooking

Steps:

  • Whisk together all of the ingredients for the glaze in a small saucepan. (Be sure to do this off the heat, as cornstarch won't dissolve in hot liquid.) Bring to a boil over high heat, then reduce to low and simmer until thickened, about 1 minute. Cover to keep warm and set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Season the salmon fillets with kosher salt. When the oil starts to shimmer, place the salmon, skin-side up, in the pan. Cook until golden brown on the first side, about 4 minutes. Turn the fish over with a spatula, then reduce the heat to medium and cook until the fillets feel firm to the touch, 3-4 minutes more. (If all of the fillets won't fit in the pan, cook the fish in two batches.)
  • Transfer the salmon fillets to plates or a platter and spoon the glaze generously over top. Serve immediately.

SEARED SALMON WITH BALSAMIC GLAZE

Seared Salmon with Balsamic Glaze image

Along with tuna and swordfish, salmon is considered a "red meat" of the fish world, and it can stand up to strong flavors like balsamic vinegar. Here we reduce the vinegar to a glaze, tempering the sharpness of the acid. The tangy sauce that results bring out the sweetness of the crisp-crusted salmon.

  • Take the salmon out of the refrigerator for at least 30 minutes to an hour. Cut it to size if necessary, pat dry with a paper towel. Then, season with just pepper. set asidePro tip - we do not use salt to season now as the soy sauce has salt as well.
  • Combine all marinade ingredients in a bowl. Add the salmon pieces and let marinate for 15 to 30 minutes turning once in between.Pro tip - The longer you marinate the darker the color of the salmon and the lesser the cooking time. I would not recommend it for more than an hour.
  • In a skillet add the oil, and place the salmon skin-side down. Season with salt and pepper. Pro tip - ensure the salmon is dry so the skin will crisp when added to the pan.
  • Cook for 3 minutes then flip the salmon and cook for 2 minutes on the second side. Pro tip - keep the heat on medium-high for the first 2 minutes this will give a nice crisp skin.
