Steps:
- Heat butter in a medium nonstick skillet over medium heat.
- Add leek; cook 5 minutes or until tender, stirring occasionally.
- Add water and peas; cook 5 minutes or until peas are tender.
- Place pea mixture in a food processor.
- Add basil, juice, and tarragon; process until smooth, adding more water if necessary.
- Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper; keep warm.
- Sprinkle salmon with remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper.
- Heat a nonstick skillet over medium-high heat.
- Coat pan with cooking spray.
- Add salmon, skin side down, and cook for 6 minutes or until golden.
- Turn, and cook for 8 minutes or until fish flakes easily with a fork or until desired degree of doneness.
- Serve salmon over warm mashed peas. Garnish with lemon wedges, if desired.
SALMON WITH HERB & GARLIC CREAM SAUCE

- Season: Pat salmon dry, then sprinkle with salt and pepper.
- Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.
- Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).
- Butter baste: When it's almost cooked, add the butter. Melt, then spoon over the salmon a few times.
- Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.
- Sauté garlic: Add garlic and stir for 20 seconds or until light golden.
- Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.
- Thicken cream & stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.
- Add parmesan & herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.
- Serve: Serve salmon with Creamy Sauce, ensuring there's something on the plate to soak up all that amazing sauce! Mashed Potato rates highly. See above video for list of suggestions (including side salads).

- In a large pot of salted boiling water, cook the potatoes for about 20 minutes or until tender. Drain.
- Meanwhile, in a saucepan over medium heat, soften the leeks in 3 tbsp (45 ml) of the butter for 5 minutes, stirring frequently. Cover and continue cooking over low heat for about 5 minutes or until the leek is tender.
- With a potato masher, purée the potatoes with the milk. Stir in the cooked leeks. Season with salt and pepper. Keep warm.
- In a large non-stick skillet over medium-high heat, brown the salmon in 2 tbsp (30 ml) of the butter for 4 minutes on each side or until the desired doneness.
- In the same skillet, soften the corn and garlic in the remaining butter (1 tbsp / 15 ml). Add the arugula and cook for 1 minute.
