PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME
Steps:
- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
- Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.
GRILLED LIME CILANTRO AHI WITH HONEY GLAZE

Steps:
- In a medium bowl, mix together 1/4 cup olive oil, lime juice, balsamic vinegar, garlic, ginger, and 1/4 cup cilantro. Add tuna fillets, and turn to coat evenly. Let marinate for several hours in the refrigerator.
- Preheat an outdoor grill for high heat and lightly oil grate. In a small bowl, mix together honey, 2 tablespoons olive oil, and 2 tablespoons cilantro; set aside.
- When grill is hot, reduce heat to low, and place tuna fillets on grate. Close lid, and cook for 1 to 2 minutes. Flip fillets over carefully, and close lid again for another minute to sear fish. Open lid, and continue cooking until barely done, basting frequently with marinade. When fish is almost cooked through, brush the honey glaze over both sides of fish, and remove from grill.

CRUNCHY SLAW WITH SEARED TUNA AND HONEY-SESAME-GINGER SAUCE
Steps:
- Mix together the red and green cabbage, green onions, cilantro, carrots and bell pepper in a large bowl. Toss to combine.
- Rub the tuna with sunflower oil. Over medium-high heat, heat a large skillet. Add the tuna and cook 3 minutes per side to sear so that it is rare in the center and golden brown on the outside.
- Meanwhile, for the dressing, add the rice wine vinegar, garlic, ginger, toasted sesame oil, soy sauce, sriracha, honey and olive oil to a small bowl. Mix to combine. Drizzle on the salad and toss gently to combine. Plate on a platter.
- Slice the tuna into 1/2-inch slices and top the salad with the tuna. Sprinkle with the cashews, sunflower seeds and Aleppo pepper. Squeeze over a wedge of lime and serve the remaining lime wedges on the side.

- Heat oil in heavy small saucepan over medium-high heat. Add shallots and ginger and sauté 2 minutes. Add broth, orange juice concentrate and vinegar. Boil until mixture is reduced to 3/4 cup, about 6 minutes. (Can be made 1 day ahead. Cover and chill. Return to boil before continuing.) Stir in miso and cilantro. Simmer 1 minute. Season with salt and pepper.
PAN-SEARED TUNA WITH GINGER, MISO AND CILANTRO SAUCE

- Whisk lemon juice, sesame oil, soy sauce and pepper in small bowl to blend. Place tuna steaks in 13 x 9 x 2-inch glass baking dish. Pour marinade over tuna steaks; turn to coat. Cover and refrigerate 3 hours, turning occasionally.
- Remove tuna from marinade. Spray large nonstick skillet with vegetable oil spray. Heat skillet over high heat. Add 3 tuna steaks to skillet and cook about 3 minutes per side for medium-rare. Transfer tuna steaks to plate. Tent with aluminum foil to keep warm. Repeat with remaining 3 tuna steaks.
- Transfer tuna steaks to plates. Spoon Ginger, Miso and Cilantro Sauce atop tuna. Garnish with cilantro and serve.
SEARED AHI WITH CILANTRO GINGER DRIZZLE
Oh so easy, and a beautiful presentation when using sushi-grade ahi. The sauce is versatile, and you can fine tune to your liking. Sometimes I add sesame oil, sometimes I use lemongrass paste (from the produce aisle) instead of ginger. And if I want it extra spicy, I use red Thai chilies. Make it your own!

- 1. In a small bowl, combine all the sauce ingredients and set aside.
- 2. Season the ahi with salt and pepper. Put about 1 1/2 tablespoons of olive oil in a skillet over medium heat. Oil should coat the surface. Heat till shimmering, then add the ahi. Let sear for about one minute per side - just enough to form a nice crust. Add about half the sauce to the pan and shake to distribute. Remove from heat.
- 3. Place the ahi on a cutting board and let sit for about 3 minutes to firm up. Meanwhile, peel and slice the avocado. Then slice the ahi on the diagonal.
- 4. To serve, arrange the ahi slices nicely on the plate, top with some avocado slices, and drizzle each portion with the remaining sauce. Serve immediately or the avocado will brown.

- Start by making the sweet soy sauce. Add the soy to a small heavy bottom pan and place over medium high heat. Add the brown sugar, water and star anise. Bring to a boil and stir until the brown sugar dissolves.
