- Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
- Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.

- Add the sauce ingredients to a small bowl and mix together. Give it a taste and adjust ingredients if needed. Set aside.
- Season both sides of the tuna steaks with salt & pepper.
- Add the oil to a skillet over medium-high heat (or even hotter) and let the pan get very hot (oil should be smoking a bit). Sear the tuna for 45 sec - 1 minute per side.
- Slice the tuna and serve it with the sauce, sesame seeds sprinkled over top, and chopped scallions.

- Whisk sesame oil, canola oil, and soy sauce together in a large glass or ceramic bowl. Add tuna steaks and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 15 minutes.
- Mix together toasted and untoasted sesame seeds on a rimmed plate.
- Remove tuna steaks from the marinade and dip in sesame seed mixture until well coated on sides and edges. Discard remaining marinade and seeds.
- Heat a cast iron skillet over high heat until very hot. Add tuna steaks and sear for 45 seconds on each side, and 20 seconds on each edge. Remove tuna to a plate and cool in the refrigerator for 30 minutes to 2 hours.
- Remove tuna from the refrigerator and cut into thin slices.
- Combine coleslaw mix, bell pepper, and vinaigrette in a bowl; mix until well combined. Transfer to a large rectangular serving plate and top with shaved cucumber and sliced tuna. Place pickled ginger in one corner of the plate and wasabi in another corner.

While I can't promise authenticity, I can promise this is fast and simple to make - and I think, extremely delicious.

- Place spinach in a dry pot set over medium-high heat and cook, stirring, until it just begins to wilt, 1 to 2 minutes. Transfer into a strainer to cool.
- While spinach cools, toast white sesame seeds in a dry pan over medium heat until light golden brown. Transfer into a mortar and pestle and crush into a very coarse paste, leaving some seeds whole. Add white sugar, soy sauce, and mirin. Stir with a wooden spoon to combine and reserve.
- Transfer cooled spinach to a towel and squeeze out any excess liquid. Chop roughly and add to a mixing bowl. Add the dressing and mix well. Cover and chill thoroughly before serving.
- Mix mayonnaise, miso paste, and rice vinegar together for miso mayo sauce. Place in the refrigerator until needed.
- Lightly salt tuna steaks, and then coat all sides well with as many sesame seeds as you like, pressing them lightly as you do.
- Brush a nonstick pan with oil and place over medium heat. Sear tuna steaks in the hot pan for 30 to 45 seconds on each side, as well as each edges.
- Slice and place tuna over the miso sauce. Brush tuna with ponzu and serve with spinach salad on the side.

- In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
- Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.

- To make the sauce: Mix all the sauce ingredients in a bowl and set it aside.
- To make the Sesame Crusted Seared Tuna Steaks: Brush both sides of each tuna steak with 1/2 teaspoon (each) vegetable oil. Season them with salt and pepper. Place the sesame seeds on a large plate and gently press both sides of tuna steak in sesame seeds to coat.
- Heat 1 tablespoon of olive oil over medium-high heat in a large non-stick skillet until it is just beginning to smoke. Add tuna steaks (make sure they are not touching each other) and cook for 1 minute* without moving them. Using tongs flip the steaks and cook for another minute. Place the steaks on a cutting board and slice into cubes. Transfer them in a mixing bowl and pour the reserved sauce over the steaks. Cover with plastic wrap and place in the fridge for 10-15 minutes.
- To make the salad: Place baby arugula, avocados, scallions, and jalapeno in a salad bowl. Add in the marinated tuna steaks into the salad (with all of its juices) and give it a gentle stir. Taste for seasoning and add if necessary.
- To serve: When ready to serve, place a cup of forbidden rice at the bottom of a bowl. Spoon some of the salad and its juices on top. Continue with the rest of the bowls. Serve immediately.

- In a small bowl - combine all the tuna steak marinade ingredients - soy sauce, rice vinegar, mirin, sesame oil, sliced ginger & garlic, scallions, and chilly flakes.Pro tip - Use glass or plastic, never metal when marinating. Otherwise, the acid ingredients in the marinade can react with the metal.
- Place the tuna steaks in the marinade and turn them over a few times to coat well. Leave to marinate for 15 minutes up to an hour. Pro tip - You can marinate the tuna for up to 3 hours in the fridge.
- Sear tuna steaks - Heat a cast-iron skillet on medium-high heat. Add the olive oil and let the pan become very hot. Place the two tuna steaks in the skillet. Season with kosher salt and black pepper. Pro tip - The pan must be smoking hot this will give a nice sear and color on the tuna.
- Cook the steak for 1 to 1 1/2 minutes on each side. (medium-rare) Pro tip - You can do up to 2 minutes on each side if you like it less rare. I would not recommend more than 2 minutes.
- Remove from the pan and let rest for 5 to 7 minutes. Then, slice and garnish with chopped scallions.
- Serve with plain jasmine rice, a side salad, and a vegetable side dish for a complete meal.
