SEARED AHI TUNA WITH MANGO AND AVOCADO

Seared Ahi Tuna with Mango and Avocado image

This Seared Ahi Tuna with Mango and Avocado appetizer or first course, is beautiful, healthy and full of fresh flavors. It's always a big hit!

Provided by Valentina K. Wein

Categories     Appetizer     First Course

Time 23m

Number Of Ingredients 7

1 (½-pound) sushi grade Ahi tuna fillet ((see notes))
grapeseed oil for the pan
1 mango ((see notes))
½ large avocado
salt and freshly ground black pepper (see notes)
drizzle of Tamari or soy sauce
about 2 teaspoons chives, (washed and dried, finely chopped)

Steps:

  • Prep ahi. Place the ahi fillet on a clean, dry surface. Lightly sprinkle all of the sides with sea salt, then either sprinkle or grind black pepper directly onto the top and bottom surfaces of the fillets. The pepper should be a thin, but generous layer.
  • Sear ahi. Coat a small sauté pan with grape seed oil and place it over high heat.Once the pan is very hot, add the Ahi and sear each side until it's only cooked through ⅛ to ¼ inch, 1 minute or less per side. (If you don't hear a sizzling sound when the tuna hits the pan, it's not hot enough -- wait for the sizzle!)
  • Slice ahi. Remove the seared tuna from the pan and place it on a clean plate. Once it has cooled completely, cut it into thin, evenly sized slices -- about ¼ inch each. Set aside. (You should have at least 14 slices.)
  • Prep mango and avocado. Cut the mango into halves. Then, slice each half into approximately 14 evenly sized slices, about ¼ inch each. (Here's How to Cut a Mango.)Cut the avocado into halves. Then, horizontally, slice the half into approximately 14 evenly sized slices, about ¼-inch each. (Here's How to Cut an Avocado.)
  • Assemble. Arrange the Ahi, mango, and avocado slices evenly between two appetizer plates -- I like alternating them, but arrange them any way you'd like to. Drizzle with a bit of Tamari or soy sauce, and sprinkle with the chives.
  • Serve. Serve immediately, or cover the plates with plastic wrap, drizzle the avocados with a bit of lemon juice, and refrigerate them until you're ready. (Up to an hour or so.)

SEARED SESAME TUNA & GRILLED AVOCADO-MANGO SALSA RECIPE - (4.2/5)

Seared Sesame Tuna & Grilled Avocado-Mango Salsa Recipe - (4.2/5) image

Provided by ruthg

Number Of Ingredients 22

TUNA:
2 tablespoons olive oil
1 teaspoon sesame oil
2 Ahi Tuna steaks
3 tablespoons black sesame seeds
3 tablespoons white sesame seeds
Kosher salt to taste
freshly ground pepper to taste
AVACADO SALSA:
2 cups tomatoes, diced
1/2 medium white onion, finely diced
2 cloves garlic, finely minced
1/4 cup fresh cilantro, chopped
1 jalapeno, minced
1 lime, juiced plus 1 tablespoon
1 teaspoon white wine vinegar
1 avocado, halved and seed removed
1 mango, halved and seed removed
2 tablespoons canola oil
cayenne pepper to taste
cumin to taste
Kosher salt and freshly ground pepper to taste

Steps:

  • AHI TUNA: Turn on grill and set to high. In a small basting bowl, mix olive and sesame oils. Liberally brush the oil mixture over the tuna steaks. Toss both black and white sesame seeds in a large bowl and season with salt and pepper to taste. Press the tuna steaks into the sesame seeds, covering all sides of the fish. Grill the tuna, searing the fish on all sides for 45 seconds to 2 minutes. The fish should have grill marks but still be medium rare in the center. Remove from the grill, season with additional salt and pepper to taste, slice and serve the tuna with grilled avocado-mango salsa and summer greens. SALSA: Turn on grill and set to high. Combine the tomato, onion, garlic, cilantro, jalapeno, juice of one lime, and vinegar. Score the cut sides of both the avocado and mango, then brush with a mixture of the canola oil and the reserved 1 tablespoon of lime juice. Grill the avocado and mango for 3 to 4 minutes, turning a quarter turn after 60-90 seconds and removing from heat once cross-hatch grill marks are in place. Discard the skin and chop the seared avocado and mango. Combine with the other vegetables. Season to taste with cumin, cayenne pepper, salt and freshly ground pepper. Refrigerate for 20 minutes, drain any excess liquid and serve.

Number Of Ingredients 16

1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
fresh ground black pepper
1/2 teaspoon ground coriander
12 ounces ahi or 12 ounces albacore tuna, cut into 1 inch steaks
1/2 tablespoon olive oil
8 taco shells
2 limes, halved
2 ripe avocados, pit and skin discarded
2 medium tomatoes, diced, into 1/4 inch cubes
1 cup lightly packed fresh cilantro, leaves, coarsely, chopped, stems discarded before before measuring
1/4 cup red onion, diced
3 tablespoons fresh lemon juice
salt
1/4 teaspoon fresh ground black pepper

Steps:

  • In a small bowl, combine cumin, cayenne, salt, pepper and coriander.
  • Rub spice mixture generously on both sides of the tuna.
  • Preheat oven to 350°F for the taco shells.
  • Heat a nonstick pan on the stove over high heat. When pan is smoking hot, add olive oil, wait 10 seconds, then add tuna. Sear for 1 minute per side, or until fish is cooked on the outside, but rare on the inside. Transfer to a plate.

  • While the shells are heating, dice tuna into 1/4-inch cubes.
  • To serve, fill all eight taco shells halfway with salsa. Spoon tuna over salsa and squeeze a spritz of lime juice overtop. Serve immediately.
  • Avocado Salsa: Avocado is just ripe if it indents with the firm press of a finger.
  • Add all ingredients to a medium-size bowl. Toss gently. DO NOT MASH AVOCADO.

  • Mix the soy sauce (2 tablespoons), toasted sesame oil (1 tablespoon), honey (1 tablespoon) kosher salt (1/2 teaspoon- OMIT if marinating for more than a couple hours, see notes), pepper (1/4 teaspoon), and cayenne pepper (1/4 teaspoon) until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Optional: allow to marinate for at least 10 minutes, or up to overnight in the refrigerator. Also optional: Reserve a spoonful or two of the marinade before coating the fish for drizzling on top after you've cooked it.
  • Heat a medium skillet (preferably non-stick or a well-seasoned cast iron skillet) on medium-high to high until very hot ( or medium medium-high for nonstick). I recommend giving cast iron 3-5 minutes to get hot and nonstick about 1 minute, depending on how thick it is.
  • Add the canola oil (1 tablespoon) to the hot pan. Sear the tuna for 2 minutes on each side for medium rare (1.5 minutes on each side for rare; 3 on each side for medium). (Note: different burners get hotter depending on your stove. Use your best judgement whether you use medium, medium-high, or high heat, as the marinade may burn if too high heat is used)
