SAVORY PAN-SEARED TUNA STEAKS
These marinated tuna steaks, served rare, taste 'fancy' but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish.

Steps:
- Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
- Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
- Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

SEARED AHI (BBQ TUNA STEAKS)
I've had this dish at many different restaurants. Almost all had done a great job at the preparation as its an easy meal to make. Garlic mashed potatoes really complete this dish.

Steps:
- Melt the butter in a bowl or plate large enough to hold the tuna steak Place tuna steak in bowl, coating both sides with butter Sprinkle half of cajun seasoning on each side of steak For an extra spicy treat, add black pepper.
- I recommend cooking this outdoors on your grill.
- Cooking indoors will generate excessive smoke.
- Heat your grill to the highest possible temperature Turn off burners (to avoid flame up) then immediately add steak Cook for 2 minutes on first side Flip and cook on other side for 1 minute.
- (The steak will be very pink inside - yum!) Remove and serve immediately as it will cool quickly.
- I recommend serving over garlic mashed potatoes with either wasabi mustard or wasabi mustard/mayo mix.
- Enjoy!
GRILLED MEDITERRANEAN AHI TUNA
Ahi Tuna (Yellowfin) Steaks Grilled with a Mediterranean Flair. Yellowfin Tuna or Ahi Tuna is usually served either Raw, as in sushi or Seared. or Grilled. When I first had this tuna grilled in spain with olive oil and salt I couldn't believe it was fish at all. This recipe is a bit of a cross between seared italian style and Spanish grilled.

Steps:
- 1) Preheat Outside Grill on Medium High setting when you start your prep. Or start your charcoal grill about 30 minutes before you plan to grill tuna.
- 2) Pat tuna steaks with paper towels to remove excess moisture then place in a shallow dish.
- 3) Mix all spices with oil and lemon juice in a small bowl with a fork or wisk. Allow to rest for at least 5 minutes to blend together.
- 4) Brush mixture on both sides of Tuna steaks and allow steaks to rest for another 5 minutes.
- 5) Grill steaks on hot grill 2-5 minutes on each side to attain desired doneness. For well done there should still be some pinkness to the center. Most prefer barely warm red centers. Be Brave, you will be surprised at the flavorful moistness and un-fishyness of this Tuna!
- Overcooking to a uniform color would be a sad waste of a great dish!

Steps:
- Marinade: In a bowl, whisk together the first 7 ingredients to make a marinade. Towel dry tuna steaks and place in a glass or ceramic dish. Pour marinade over the fish, turning to coat well throughout. Cover tightly and chill several hours to overnight; turn fish over at least once in the middle of marinade time.
- Sear: Heat 3 TB oil in a large heavy skillet (aluminum or stainless steel; not nonstick) until oil is smoking. Sear ahi steaks 1 1/2 minutes per side on high heat, taking care to flip carefully with a flat, steel spatula. (If your tuna is less than 1 1/2 inches thick, sear for only 1 minute per side.)
- Rest/Cool: Transfer seared ahi to a large cutting board and let rest/cool 10 minutes. Use a very sharp (serrated works well) knife to slice thinly across the grain.
- Serve: Serve chilled or at room temp, over your favorite salad greens or crispy Asian salad. Sprinkle with sesame seeds and cilantro or green onions, if desired. Drizzle with Sriracha mayo if desired.

SPICE-RUBBED SEARED TUNA STEAKS WITH BALSAMIC REDUCTION
Steps:
- Gather the ingredients.
- Make the balsamic reduction : Place the balsamic vinegar, lemon juice, and garlic in a small saucepan over medium-low heat.
- Simmer until the mixture reduces by half. Turn off the heat and reserve until needed. This sauce does not have to be hot for serving. The reduction will thicken slightly as it cools.
- If your tuna fillet is not already sliced into servings, slice into 4 rectangular steaks of equal size. In a small bowl, combine the salt, coriander, paprika, and cayenne pepper. Lay the tuna steaks out on a plate and sprinkle the spice mixture evenly on all sides.
- Evenly coat the tuna steaks with the freshly ground black pepper and gently press it in so that it adheres to the surface, being careful not to smash the flesh.
- Place a thick-bottomed frying pan or cast-iron skillet over medium-high heat. Add the oil and swirl to coat the pan. When you see small wisps of smoke, add the tuna to the pan and sear the steaks for about 1 minute per side or until the desired doneness is reached.
- Remove the tuna steaks and place them on a cutting board. For presentation, cut each steak diagonally into 4 to 5 slices and fan on a plate. Serve with a small amount of sauce drizzled alongside. Garnish with a lemon wedge and enjoy.

- Season the ahi tuna steaks with pepper, transfer to the bag and seal the bag and marinate for 15 minutes. Take care not to marinate for any longer, otherwise the fish will start to "cook" in the marinade.
- Heat a nonstick skillet, cast iron skillet or grill pan over medium-high heat. Sear the fish until the desired degree of doneness is reached, about 2 minutes per side.

- Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides.
- Add the steak to the grill and cook 30 to 60 seconds per side, until lightly browned on the outside but still raw on the inside (115 degrees Fahrenheit if you measure with a food thermometer). If you’d like to sear the short sides, turn the tuna with tongs and sear each side for a few seconds.

- Mix the soy sauce (2 tablespoons), toasted sesame oil (1 tablespoon), honey (1 tablespoon) kosher salt (1/2 teaspoon- OMIT if marinating for more than a couple hours, see notes), pepper (1/4 teaspoon), and cayenne pepper (1/4 teaspoon) until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Optional: allow to marinate for at least 10 minutes, or up to overnight in the refrigerator. Also optional: Reserve a spoonful or two of the marinade before coating the fish for drizzling on top after you've cooked it.
- Heat a medium skillet (preferably non-stick or a well-seasoned cast iron skillet) on medium-high to high until very hot ( or medium medium-high for nonstick). I recommend giving cast iron 3-5 minutes to get hot and nonstick about 1 minute, depending on how thick it is.
- Add the canola oil (1 tablespoon) to the hot pan. Sear the tuna for 2 minutes on each side for medium rare (1.5 minutes on each side for rare; 3 on each side for medium). (Note: different burners get hotter depending on your stove. Use your best judgement whether you use medium, medium-high, or high heat, as the marinade may burn if too high heat is used)

GRILLED SEARED AHI TUNA STEAK RECIPE | GRILLED ASPARAGUS ...

Cuisine SeafoodCategory EntreeServings 5Total Time 35 mins
- Preheat your charcoal grill to 450–500 degrees Fahrenheit. To cut down on total cooking time, preheat a well-seasoned steel sear plate on the grids as your work station warms up; this will let you grill the bacon-wrapped asparagus and tuna steak at the same time.
- While the grill preheats, prepare the slaw. You’ll do this by thin slicing the green and purple cabbage, julienning the carrots and bell peppers, and small chopping the green onions and parsley. Place all these veggies in a large mixing bowl, which you’ll cover and place in the fridge until ready to serve.
- Next up: the slaw dressing. Mix together ginger, olive oil, sesame oil, honey, rice vinegar, and salt and stir well with a whisk. Pick out a container wide enough to hold the tuna steak; pour in about half the dressing, then add the soy sauce. Move the original portion of slaw dressing into the fridge, but leave out this second container. It’s a very important part of the pre-grilling process — it’ll be our dunking marinade for the tuna, right before it hits the searing plate.
- For the bacon-wrapped asparagus, the recommendation here is standard-sized bacon, not thick-cut; this keeps the vegetable from coming out raw without charring the bacon (choosing pencil-sized asparagus will only make the process that much smoother). Use 1–3 stalks per bacon slice, depending on personal preference. Before wrapping, place the asparagus on a sheet pan and drizzle just enough olive oil to fully coat. Sprinkle salt and pepper to taste, then begin tightly wrapping with your bacon strips.
