SHRIMP STIR-FRY



Shrimp Stir-Fry image

Tender shrimp and crisp vegetables are stir-fried with a garlic and ginger flavored sauce made from Swanson® Chicken Stock, soy sauce and sesame oil, for a savory seafood and vegetable stir-fry.

3 tablespoons cornstarch
1 ¾ cups Swanson® Chicken Stock
1 tablespoon soy sauce
½ teaspoon sesame oil
2 tablespoons vegetable oil
1 pound fresh or thawed frozen medium shrimp, peeled and deveined
4 cups cut-up fresh vegetables (see Note)
½ teaspoon ground ginger
⅛ teaspoon garlic powder
4 cups hot cooked regular long-grain white rice

Steps:

  • Stir the cornstarch, stock, soy sauce and sesame oil in a small bowl until the mixture is smooth.
  • Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the shrimp and stir-fry until they're cooked through. Remove the shrimp from the skillet.
  • Heat the remaining vegetable oil in the skillet. Add the vegetables, ginger and garlic powder and stir-fry until the vegetables are tender-crisp.
  • Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the shrimp to the skillet and cook until the mixture is hot and bubbling. Serve over the rice.

Number Of Ingredients 13

2 tbsp soy sauce
2 tbsp minced ginger
1 tbsp chili garlic sauce
1/2 tsp hot chili oil
1/2 lb scallops
1/2 lb shrimp
1/2 lb mussels
1 cup bean sprouts
1 cup carrots (sliced)
1 cup snow peas
1 cup yellow squash (sliced)
2 tbsp peanut oil
1/4 cup dried japanese peppers (chopped)

Steps:

  • In a bowl, combine soy sauce, minced ginger, chili garlic sauce, hot chili oil, and set aside
  • In a pan on high heat, add peanut oil and begin add vegetables. Cook for 2 minutes, then add seafood; stir in stir fry sauce.
  • Stir in Japanese pepper and continue to cook, stirring frequently, until seafood is opaque and mussels are opened. Serve and enjoy!

4 ounces bay scallops
4 ounces shrimp (peeled and devained)
1 teaspoon chili pepper flakes
1/4 teaspoon cayenne pepper
1 teaspoon italian seasoning (I used McCormicks Italano)
1 garlic clove, minced
1/2 lime, juice of
salt and pepper
3 tablespoons olive oil

Steps:

  • In a medium bowl mix all ingredients except the oil and let sit for 5-10 minutes.
  • In a wok or large pan heat the oil over medium high heat.
  • Add the seafood mixture and stir fry until done, about 5 minutes.
  • Enjoy with seasoned rice or salad if low carbing.

1-1/2 cups broccoli florets
1 small sweet red pepper, juliened
1 small green pepper, julienned
1 to 2 tablespoons vegetable oil
1 pound uncooked shrimp, peeled and deveined
1 tablespoon cornstarch
2 teaspoons brown sugar
1 teaspoon ground ginger
1 cup orange juice
1/4 cup soy sauce
Hot cooked rice

Steps:

  • In a skillet, stir-fry broccoli and peppers in oil until tender. Add shrimp; stir-fry for 3-5 minutes or until shrimp turn pink. , Combine the cornstarch, brown sugar, ginger, orange juice and soy sauce until smooth; add to skillet. bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

1 tablespoon cornstarch
3/4 cup dry white wine or reduced-sodium chicken broth
1/2 cup additional reduced-sodium chicken broth

1/8 to 1/4 teaspoon crushed red pepper flakes
2 cups broccoli florets
4 teaspoons canola oil
1 large sweet yellow, red or green pepper, julienned
2 garlic cloves, minced
2 tuna or swordfish steak (8 ounces each), cut into 1-inch cubes
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. In a small bowl, combine the cornstarch, wine, additional chicken broth, thyme, salt and pepper flakes until smooth; set aside., Meanwhile, in a large nonstick skillet, stir-fry broccoli in hot oil for 4 minutes. Add sweet pepper; stir-fry for 4 minutes. Add garlic; cook 1 minute longer., Stir cornstarch mixture and gradually add to pan along with tuna; stir-fry 3-4 minutes for medium-rare or until slightly pink in the center. A simple spin on shrimp lo mein made with ramen, shrimp, broccoli florets, red bell pepper, fresh ginger, and a sweet and savory sauce.

Number Of Ingredients 15

1 pound shrimp, peel and deveined, tails removed (best if raw)
2 packs of ramen, flavor packets discarded
1 red bell pepper, cored and sliced into thin strips
2-3 cups fresh or frozen broccoli florets
2 green onions, chopped
sesame seeds, for garnish
1/2 cup reserved ramen water
1/4 cup low sodium soy sauce
2 tablespoons packed light brown sugar
2 garlic cloves, minced
1 rounded tablespoon corn starch
1 tablespoon sesame oil
1/2 teaspoon sriracha
2 teaspoons freshly grated ginger or 1/2 teaspoon ground ginger
1 tablespoon vegetable or canola oil, for cooking

Steps:

  • Bring 4 cups of water to a boil in a medium saucepan. Add ramen and boil for about 3 minutes or until tender. Strain, reserving 1/2 cup of ramen water.
  • Use the reserved ramen water for the sauce. Combine in a measuring cup or small bowl with all sauce ingredients. Mix well and set aside.
  • Meanwhile, heat cooking oil in a wok or large skillet on medium heat. Add shrimp and season all over with salt and pepper. Cook for 1 minute per side or until bright orange/white. Remove shrimp and place on a plate.
  • Add veggies and sauté until tender, about 5-7 minutes. Be sure to stir periodically to prevent burning. Return shrimp to the skillet and add the sauce. Let the sauce simmer until slightly thickened. Toss to mix. Stir in ramen and lightly toss until everything is evenly coated.
  • Top with sesame seeds and green onions. Serve immediately.
