1 egg, lightly beaten
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 pound frozen cooked salad shrimp, thawed and patted dry
4 green onions, chopped
1 can (8-3/4 ounces) whole kernel corn, drained and patted dry
1/4 cup chopped celery
1/4 cup chopped sweet red pepper
2 tablespoons capers, drained and minced
1 tablespoon minced fresh cilantro
2 garlic cloves, minced
1 teaspoon chili powder
1/4 teaspoon pepper
4 packages (2.1 ounces each) frozen miniature phyllo tart shells
1/2 small green pepper, cut into small strips

Steps:

  • In a small bowl, combine the egg, mayonnaise and mustard. Stir in the shrimp, onions, corn, celery, red pepper, capers, cilantro, garlic, chili powder and pepper. Spoon about 2 teaspoonfuls filling into each tart shell., Place on baking sheets; bake at 350° for 7-10 minutes or until tops begin to brown. Top with green pepper strips. Serve warm.

1 package (8 ounces) cream cheese, softened
1-1/2 teaspoons Worcestershire sauce
1 to 2 teaspoons grated onion
1 teaspoon garlic salt
1/8 teaspoon lemon juice
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1/2 cup seafood cocktail sauce
30 peeled and deveined cooked shrimp (31-40 per pound), tails removed
Optional: Minced fresh parsley and lemon wedges

Steps:

  • Beat the first 5 ingredients until blended. Place tart shells on a serving plate. Fill with cream cheese mixture; top with cocktail sauce and shrimp., Refrigerate until serving. If desired, sprinkle with parsley and serve with lemon wedges.

1 can (6.5 oz) lump crabmeat, drained
1 jar (6.5 oz) marinated artichoke hearts, well drained, finely chopped (about 1 cup)
1/4 cup chive-and-onion cream cheese spread (from 8-oz container)
2 tablespoons mayonnaise or salad dressing
2 tablespoons chopped red onion
1/2 teaspoon seafood seasoning
2 packages (2.1 oz each) frozen mini phyllo dough shells (30 shells)
30 tiny shrimp (from 4-oz can), rinsed, patted dry
Fresh parsley sprigs

Steps:

  • In medium bowl, mix crabmeat, artichoke hearts, cream cheese spread, mayonnaise, onion and seafood seasoning.
  • Just before serving, spoon 1 scant tablespoon crabmeat mixture into each phyllo dough shell. Garnish each tartlet with shrimp and parsley.

1/2 cup Original Bisquick™ mix
1/2 cup milk
1/4 cup sour cream
1/2 teaspoon Worcestershire sauce
2 eggs
2/3 cup shredded Parmesan cheese
1/2 cup chopped cooked shrimp
4 medium green onions, sliced (1/4 cup)

Steps:

  • Heat oven to 400°F. Spray 24 miniature (1 3/4x1 inch) muffin cups with cooking spray.
  • In medium bowl, beat Bisquick mix, milk, sour cream, Worcestershire sauce and eggs with spoon until blended. Stir in remaining ingredients. Spoon about 1 tablespoon mixture into each muffin cup.
  • Bake 15 to 20 minutes or until golden. Cool 5 minutes. Loosen sides of tarts from pan; remove from pan.

2 eggs
3/4 cup warm water
24 shredded wheat crackers (I use Triscuit Dill, Sea Salt & Olive Oil crackers)
1 1/2 cups seafood salad
24 fresh dill sprigs

Steps:

  • Heat oven to 350 degrees.
  • Whisk eggs and water in shallow dish until blended.
  • Add 6 crackers; press to evenly cover. Let stand 2-3 minutes or until softened.
  • Press 1 soaked cracker into each of 6 mini muffin pan cups sprayed with cooking spray.
  • Repeat to make a total of 24 crusts.
  • Bake 25 minutes. Cool.
  • Fill cracker cups with chilled seafood salad , or other favorite salad.

These tarts are a cinch to make, and always a hit at a shower or any gathering. Substitute a vegetable for the seafood to make this recipe vegetarian. This dish also lets you stretch a small amount of seafood; for example, smoked salmon tarts are easier on the budget to put out than a whole platter of smoked salmon. These keep well in the fridge for a day or two, as well.

12 unbaked miniature tart shells
1/2 cup chopped smoked salmon (or ANY seafood, your choice)
1/2 cup half-and-half (table cream)
1 large egg
2 teaspoons Dijon mustard
2 teaspoons chopped fresh dill (optional)

Steps:

  • Preheat oven to 375F; arrange tart shells on a baking sheet.
  • Into each shell, place 2 tsp of your favourite seafood; this recipe will also work with chopped ham, chopped asparagus etc, so use your imagination!
  • In a small bowl, whisk together the cream, egg and mustard; I like to also add the fresh dill because I like its taste, but leave it out or substitute if you don't want dill.
  • Distribute cream mixture evenly among the tarts and then bake for 12 to 14 minutes, until golden and"custard" is set.
  • Serve warm or at room temperature.

36 Tenderflake mini tart shells
2 cups whipping cream
2 garlic cloves, minced
250 grams salad shrimp
1 (120g) can Thrifty crabmeat with 50% leg meat, drained well
1 Tbsp. chopped fresh dill or tarragon
White pepper to taste
1/3 cup freshly grated Parmesan cheese
Small dill or tarragon sprigs for garnish, optional

Steps:

  • Bake the tart shells on a parchment paper-lined baking sheet as per package directions, and cool. Place the cream and garlic in a tall pot. Bring to a simmer and simmer until the cream is thickened and reduced to 1 cup. Remove from the heat and stir in the shrimp, crab, chopped dill or tarragon, and pepper. Cool to room temperature. Remove tarts from their foil liners and set back on the baking sheet. (If you wish to serve the tarts later, cover and store the seafood mixture in the fridge. Cover the tart shells and leave out at room temperature until ready to stuff and bake.) Preheat the oven to 350 degrees F. Fill the tarts with the seafood mixture; sprinkle with the cheese. Bake for 10 minutes, or until the seafood is well heated through. Garnish with dill or tarragon sprigs, if desired.
