Mixed seafood in a creamy garlic wine sauce {Mariscos al ajillo} image

Recipe for mixed seafood in a creamy garlic wine sauce, or mariscos al ajillo. Made with a mix of shrimp, calamari or squid, and bay scallops cooked in a sauce of butter, garlic, white onion, white wine, cream, and parsley.

½ pound raw shrimp (peeled and deveined)
½ pound squid or calamari (cut into slices)
½ pound bay scallops
2 tablespoons of butter
2 tablespoons of finely chopped white onion
6 garlic cloves (crushed or minced)
¼ cup white wine
½ cup heavy cream
Salt and pepper to taste
Chopped parsley
Patacones/tostones (or fried green plantains)
Rice (Latin style)
Tomato and onion curtido side salad
Bread

Steps:

  • Season the seafood with a sprinkle of salt.
  • Melt the butter over medium heat in a large skillet.
  • Add the onion and garlic, cook for about two minutes.
  • Add the shrimp and cook for 1 minute.
  • Add the white wine, mix well and cook over high heat for 1 minute.
  • Add the heavy cream and cook until the shrimp are almost done.
  • Add the squid and bay scallops, cook for about two minutes or until done, and immediately remove from heat.
  • Taste and add salt if needed. Add ground black pepper to taste.
  • Mix in the chopped parsley.
  • Serve the mixed seafood in garlic sauce immediately. You can serve it as an appetizer with bread. It can also be served as a main dish with rice, fried green plantains, salad, etc.

SHRIMP AND SCALLOPS IN GARLIC CREAM SAUCE

1/4 cup olive oil, plus 2 tablespoons
5 cloves garlic, finely chopped
4 cloves shallots, chopped
2 cups white wine
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves, plus sprigs for garnish
1 teaspoon chopped thyme leaves
2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops
1 1/2 pounds (16/20 count) shrimp peeled and deveined with tails left on
1 1/2 to 2 pounds cooked pasta or rice, for an accompaniment
1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

2 tablespoons butter, melted
1/3 cup all-purpose flour
1-1/2 cups chicken broth
4 garlic cloves, minced
1 cup heavy whipping cream
1/2 cup minced fresh parsley
2 teaspoons paprika
Salt and pepper to taste
2 pounds large uncooked shrimp, peeled and deveined
Hot cooked noodles or rice

Steps:

  • In a small saucepan, melt butter; stir in flour until smooth. Gradually add broth and garlic. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the cream, parsley, paprika, salt and pepper., Butterfly shrimp, by cutting lengthwise almost in half, but leaving shrimp attached at opposite side. Spread to butterfly. Place cut side down in a greased 13-in. x 9-in. baking dish. Pour cream sauce over shrimp. Bake, uncovered, at 400° for 15-18 minutes or until shrimp turn pink. Serve with noodles or rice.

I copied this recipe years ago out of a cookbook a friend received for Christmas. It has been one of my favorite pasta recipes ever since. I can't stand mushrooms, so I never use them. I also use lobster meat sometimes. Imitation crab and/or lobster meat works well in a pinch. Sauce tends to thicken after removed from heat. Since the recipe was listed as a sauce, it didn't give an exact amount of pasta. It simply recommended using a shell or curly type. I'm guessing 6-8 ounces is how much I use and I usually use rotini. Cooking the pasta isn't included in cooking time.

2 cups half-and-half
1/4 cup butter
1/3 cup shredded mozzarella cheese
1/2 clove minced garlic

500 g king prawns (medium raw)
250 g scallops (roe removed)
2 teaspoons olive oil
3 garlic cloves (crushed, minced)
340 g asparagus (halved on the diagonal)
150 g sugar snap peas (trimmed)
2 teaspoons lemon juice
2 tablespoons dry white wine
3/4 cup cream (180ml)
2 tablespoons parsley (coaarsely chopped)

Steps:

  • Shell and devein prawns (leave tails intact if you prefer, we don't).
  • Into a medium bowl combine prawns, scallops, oil and garlic.
  • Cook seafood on a heated oiled grill plate (or grill on the barbecue) until changed in colour, remove and keep warm.
  • Boil, steam or microwave asparagus and sugar snap peas, separately until tender; drain and cover to keep warm.
  • Simmer juice and wine in a small saucepan, uncovered, about 1 minute or until reduced by half.
  • Add cream and bring to the boil, reduce the heat and simmer uncovered for 2 minutes.
  • Add seafood and simmer uncovered until hot.
  • Serve seafood with vegetables and garnish with the parsley.

2 cups sliced fresh mushrooms

1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
3 cups heavy whipping cream
2 tablespoons shredded Romano cheese
2 tablespoons tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 pound uncooked shrimp (26-30 per pound), peeled and deveined
3/4 pound bay scallops
3/4 pound fresh or frozen clam meat, thawed
Additional Romano cheese and fresh basil, optional

Steps:

  • Cook fettuccine according to package directions; drain., Meanwhile, in a 6-qt. stockpot, heat butter over medium heat. Add mushrooms, basil, oregano, thyme and cayenne; cook and stir 1-2 minutes or until mushrooms are tender. Add garlic; cook 1 minute longer. Add both cans diced tomatoes; bring to a boil. Reduce heat; simmer, uncovered, 6-8 minutes or until liquid is almost evaporated, stirring occasionally., Add cream; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until thickened. Stir in cheese, tomato paste, salt and pepper until cheese is melted. Add shrimp; cook 2 minutes. Add scallops and clam meat; cook 3 minutes longer or until shrimp turn pink. Add fettuccine; toss to coat. If desired, sprinkle with additional cheese and basil.

I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

1 bag(s) frozen cheese tortellini, cooked & drained
1 lb raw shrimp, peeled & deveined
1 pkg imitation crabmeat
1/2 stick butter
3 c milk
1/4 c flour
1/2 tsp salt
1/4 tsp pepper
1 c grated parmesan cheese
1/2 c diced onion
1/2 c frozen english peas
2 c colby jack blended shredded cheese

Steps:

  • 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
  • 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
  • 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
  • 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.
