2 lb can be cod or grouper fillets, cut into large chunks mahi-mahi
1 lb diced or crushed tomatoes
5½ oz chopped yellow onions
4 cloves finely chopped garlic
4 cups or seafood broth fish broth
1 cups trimmed spinach
½ cup divided olive oil
½ cup white wine
2 tbsp tomato paste
2 tsp dried thyme
¼ tsp chili flakes
to taste salt and ground black pepper
1 slice per serving crusty bread
1 tbsp grated or powdered, per serving parmesan cheese

Steps:

  • Heat up half of your oil in a skillet over medium-high heat. Add your fish and sear evenly on all sides, no more than 5 minutes per side. Drain and set aside.
  • Heat up the remaining olive oil in a soup pot over medium-high heat.
  • Add the onion, garlic, spinach, chili flakes, and thyme. Saute until translucent.
  • Add tomato paste and roast briefly.
  • Deglaze with white wine and reduce briefly.
  • Add the tomatoes and broth. Bring soup to a simmer and continue simmering until soup has reduced by half, roughly 20 minutes.
  • Add the fish back. Stir to combine.
  • Season to taste with salt and pepper. Adjust accordingly. Continue simmering for another 5 minutes.
  • Sprinkle parmesan cheese on your soup and serve with a slice of crusty bread.

Brodetto, a fish stew with a tomato base, is a specialty of the Marche region of Italy. There are several recipes for brodetto, even within the Marche. This recipe belongs to the province of Ancona. To make this recipe, I chose fish available in the southern United States.

1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, finely chopped
1 carrot, chopped
2 celery ribs, chopped
2 bay leaves
1 cup chopped fresh parsley
red pepper flakes to taste
1 (28 ounce) can whole peeled tomatoes, mashed
1 ½ pounds red snapper fillets, cut into 2 inch pieces
½ cup white vinegar
salt and ground black pepper to taste
3 cups fish stock
1 pound clams in shell, scrubbed
½ pound medium shrimp, with shells
6 (3/4 inch thick) slices Italian bread, toasted

Steps:

  • Heat the olive oil in a large saucepan, Dutch oven, or preferably a clay pot over medium heat. Add the onion, garlic, carrot, celery, bay leaves, parsley, and red pepper flakes. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir in the mashed tomatoes and cook for 15 minutes over medium heat. Add the fish. Pour in the vinegar or wine. Cook until the liquid has almost evaporated, about 10 minutes; pour in the fish stock. Cover, reduce the heat to low, and simmer for 10 minutes.
  • Gently mix in the clams. Cook until clams have opened (discard any that don't open) about 2 minutes, and then stir in the shrimp. Cook until the shrimp are pink, about 3 minutes.
  • Place a slice of toasted bread in the bottom of each bowl. Ladle brodetto over the bread and serve immediately.

Here is an easy-to-make Croatian brodet recipe. I always loved my mums, and now I show you how I make my own.

1.5 kg fish. We always enjoy scorpion fish, ccean perch, conger eel, reef and rockfish species the best (3lbs 5oz). Just take what you can get that is fresh from your fishmonger
50 ml extra virgin olive oil (1/4 cup)
4 tablespoons white vinegar (more if you like)
Six garlic cloves, sliced
½ bunch flat-leaf parsley, chopped
3 large onions, finely chopped
½ cup finely chopped tomatoes (more if you like)
Salt & pepper
600 ml water to cover fish (2 1/2 cups)
12 mussels, cleaned and debearded
6 scampi

Steps:

  • Get yourself a large heavy-based saucepan, heat the oil and fry the garlic and onion on a low to medium heat for a couple of minutes
  • Add the tomatoes and a little water and cook for around 10 minutes
  • Season the fish with salt and then add it to the saucepan and mix the fish with the garlic, onion and tomatoes
  • Add water so that it covers the fish
  • Pour in the vinegar and pepper and simmer. You want the stew just simmering
  • Allow the fish to cook for 20 minutes giving the saucepan the occasional shake. DO NOT stir as you will break the fish
  • Check the seasoning. Add more salt and pepper if required
  • It's now time to put your scampi into the saucepan - throw them in one-by-one
  • After five mins, check on the progress of your fish. It should be close to being done - however, this will vary depending on the type and size of the fish. Leave the fish for as long as it needs to be cooked through
  • Approx five minutes before this fish is cooked, toss in your mussels and parsley
  • Serve the brodet with creamy polenta and garnish with some parsley

WHITE SEAFOOD BRODETTO

1 1/2 pounds swordfish, dark spots trimmed, cut into 1 1/2-inch cubes
Kosher salt
All-purpose flour, for dredging
5 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1 large onion, sliced
1 teaspoon red pepper flakes
3/4 cup dry white wine
1 pound manila clams (about 24), scrubbed
1 pound large shrimp, peeled and deveined
1 pound small calamari, tentacles separated, bodies sliced into rings
3 tablespoons unsalted butter
1/2 cup chopped fresh parsley
3 tablespoons white wine vinegar or fresh lemon juice
Grilled or toasted crusty bread, for serving

Steps:

  • Season the swordfish with salt. Pour some flour on a plate and dredge the swordfish in the flour. Heat 3 tablespoons olive oil in a large Dutch oven over medium-high heat. Working in batches, cook the swordfish until golden on all sides, about 4 minutes. Transfer to a plate.
  • Reduce the heat to medium; add the remaining 2 tablespoons olive oil to the pot. Add the garlic, onion and red pepper flakes and cook about 3 minutes. Season with salt and add the wine. Cover and cook, stirring a few times, until the onion is tender, about 5 more minutes.
  • Add the seafood to the pot in layers, starting with the clams, then the shrimp, calamari rings and tentacles, and the swordfish. Cover and cook until the clams have just opened, about 6 minutes. Lightly stir, cover again and simmer 5 more minutes. Discard any clams that do not open. Stir in the butter, parsley, vinegar and salt to taste. Serve with bread.
