MAYONNAISE BAKED FISH RECIPE



Mayonnaise Baked Fish Recipe image

Number Of Ingredients 9

¾ pound fish fillets (I suggest halibut or Chilean sea bass)
1 tablespoon olive oil (or melted butter)
¼ cup mayonnaise
1 tablespoon lemon juice
pinch salt and freshly ground black pepper
¼ teaspoon dried dill
¼ teaspoon Old Bay seasoning
1 tablespoon Parmesan cheese (grated )
2 tablespoons panko (Japanese bread crumbs)

Steps:

  • Preheat the oven to 400°F.
  • Spray a baking dish with non-stick cooking spray.
  • Lightly brush the fish with the olive oil or melted butter.
  • Mix together the rest of the ingredients, except the panko, to make a paste. Spread half on each fillet. Press half of the panko on evenly on top of each fillet.
  • Bake for about 10 minutes, just until fish is opaque.
  • Turn on the broiler and finish for 2 minutes, until panko is golden brown and mayonnaise has puffed a little.

We used to get a pinkish mayo, supposedly for fish, but I never liked it. I found a better alternative -- and super quick too -- in a magazine column. I'm saving it here because I'll make it for sure!

Number Of Ingredients 7

1 cup mayonnaise, tangy (250 ml tangy mayo, Woolworths in SA has an excellent one)
4 tablespoons ketchup (60 ml tomato ketchup like All Gold which is made from real tomatoes)
1 -2 anchovy fillet, chopped up and mashed
2 tablespoons cream
1 tablespoon shallot, finely chopped (or use mild onion)
2 teaspoons lemon juice (or use more, to taste)
1/4 teaspoon white pepper

Steps:

  • Mix all the ingredients well. Put into a sterilized bottle and keep in the fridge. It will last for ages, just like ordinary mayo.
  • Do taste, as you might want to add more lemon juice or cream. Finely chopped parsley could be added when serving the sauce.

An old recipe I have in my fish collection that's simple, fast and tasty. I've also used this with Walleye and Bass fillets.

1 lb haddock
3 tablespoons mayonnaise
1 teaspoon dry mustard
1/2 cup onion, chopped
1 dash cayenne
1/8 teaspoon dill weed

Steps:

  • Preheat oven to 400°.
  • Place fish in lightly greased shallow baking dish.
  • Stir mayonnaise, mustard, onion, cayenne and dill weed in a small bowl until blended.
  • Spread mixture on the fish.
  • Bake at 400°F for approx 20 minutes or until fish flakes easy with a fork.
