SEA SALT WATER BISCUITS

Steps:
- Heat oven to 180C/fan 160C/gas 4. Line two baking sheets with parchment. Place the flour, baking powder, butter and ½ tsp of the flaky salt in a food processor, then whizz for a minute until the butter is completely mixed with the flour. Add 4 tbsp water and pulse until the dough comes together. If it still feels dry, add 1 tsp more water and process until you have a soft but not sticky dough.
- Roll out the dough on a lightly floured surface into a rectangle approximately 50 x 25cm and as thin as possible. Brush a little water over the surface of the dough, scatter 1 tsp salt flakes over and press in lightly. Prick the dough all over with a fork, then cut into 18 squares. Place on the prepared trays - don't worry if they stretch a bit. Bake for 10-15 mins until the biscuits feel dry and sandy but are still pale - they may still feel soft but will harden up when cooling. Transfer to a wire rack and leave until completely cool. Will keep in an airtight container for up to 2 weeks.

EASY TEA BISCUITS
Came from a news paper. It's super easy. They can be very crumbly b/c there is no egg to hold them together. You can mix in shredded cheese, or cinnamon and brown sugar, etc. to make them your own.

Steps:
- Mix dry ingredients, cut in margarine until crumbly.
- Add 1/2 cup of milk then mix, add the last 1/4 as needed. Dough should be wet, but not sticky.
- Roll into roughly 5cm (2 inch) balls. Flatten slightly and stack them 2 high.
- Oven 425, cook 10-12 min or until slightly golden.
TEA BISCUITS
A quick tea time treat. Serve warm, buttered, and with jam or honey.

- Preheat oven to 400 degrees F (205 degrees C). Grease a baking sheet.
- Combine flour, baking powder, and salt. Cut shortening in until mixture has a fine crumb texture. Stir in milk with a fork to make a soft dough. Knead 8 to 10 times, and then roll out to a thickness of at least 1/2 inch. Cut into rounds with a cookie or biscuit cutter. Place on cookie sheet, and allow to rest for a few minutes.
- Bake for 12 to 15 minutes. Serve warm.

RICH TEA BISCUITS
Found this recipe in Jean Pare's "Company's Coming" cookbook. I've made baking powder biscuits before, but not with cream of tarter in the recipe.

Steps:
- Put first 5 ingredients in bowl.
- Stir thoroughly.
- Cut in butter until crumbly.
- Pour in milk.
- Stir quickly to combine.
- Dough should be soft.
- Turn out on lightly floured surface.
- Knead gently 8-10 times.
- Roll or pat 1/2 to 3/4 inch thick or half the thickness you want the baked product to be.
- Cut with small round cookie cutter.
- Place on greased cookie sheet close together for soft sides or apart for crisp sides.
- Bake in 450 degrees oven for 12 to 15 minutes.
- Brushing biscuits with milk before baking will produce a pretty brown top.
- Makes 10.

SEA BISCUITS
Steps:
- Preheat oven to 425 degrees F. Put all of the ingredients in the mixing bowl and mix with a fork until the mixture has lumps the size of peas. Work dough with your hands until it is smooth. Divide the dough into 28-30 small pieces about the size of marbles.
- Roll each piece of dough into a ball then flatten it with your fingers into a very thin circle. Place the circles on an ungreased cookie sheet.
- Bake in the oven for 8-10 minutes or until the biscuits are dry and light brown around the edges. Cool and store in an airtight container.
