BAKED SEA BASS WITH LEMON CAPER DRESSING
This elegant, gluten-free main is special enough for a dinner party, yet simple and quick to make for no fuss entertaining

- To make the dressing, mix the oil with the lemon zest and juice, capers, mustard, some seasoning and 1 tbsp water. Don't add the parsley yet (unless serving straight away) as the acid in the lemon will fade the colour if they are left together for too long.
- Heat the oven to 220C/200C fan/gas 7. Line a baking tray with baking parchment and put the fish, skin-side up, on top. Brush the skin with oil and sprinkle with some flaky salt. Bake for 7 mins or until the flesh flakes when tested with a knife. Arrange the fish on warm serving plates, spoon over the dressing and scatter with extra parsley leaves, if you like.

GRILLED SEA BASS WITH GARLIC BUTTER
Steps:
- Gather the sauce ingredients.
- Combine the butter, lemon juice, garlic, and parsley in a small saucepan over medium-low heat.
- Cook until the butter has melted. Set aside.
- Gather the remaining ingredients.
- Preheat the grill to medium-high heat. Combine the garlic powder, paprika, onion powder, and salt in a small bowl.
- Sprinkle the seasoning mixture on both sides of the fish.
- Right before placing the fish on the grill, make sure to clean and oil the grill grates to keep the fish from sticking during the cooking process. This can be achieved by using a large pair of tongs, folded paper towels, and a high smoke point oil (canola oil, peanut oil, or sunflower oil; olive oil will work in a pinch). Dip the paper towel into the oil and run it across the grates at least 3 times to create a nonstick surface.
- Place the fish on the grill and cook for 5 to 7 minutes. Turn the fish and baste it with the butter sauce. Cook for about 5 to 7 more minutes.
- Once the fish reaches an internal temperature of at least 145 F, remove it from the heat, and drizzle it with olive oil.

- Melt the butter in a large frying pan. Fry sea bass, turning once halfway through cooking time. Cook until opaque and moist on the inside, 4 to 8 minutes.
- In a small saucepan, gently melt the butter. When it starts sizzling add the garlic and let it sizzle for a minute or two, allowing the garlic to infuse the butter. Lower the heat to the minimum setting, add the lemon juice, stir and let it heat through. Season to taste. Drizzle over the fish fillets when it is served.

- Add the flour to a small tray, season with salt and pepper and mix. Coat the sea bass on both sides with flour mixture.
- Melt 1 1/2 tablespoon butter in a skillet over low heat, also adding the olive oil in the process. Fry the sea bass on both sides until golden brown. Set aside on a paper towel to absorb some of the oil.
- Use the same olive oil and melted butter for preparing the sauce. Add the garlic and stir for 1 minute or so. Add the white wine, lemon juice, and fresh parsley, season with salt and pepper, and cook and stir for 1 minute more. Coat the remaining butter with flour and add it to the skillet. Cook and stir until it melts or for 1 minute.
- Serve the fish drizzled with sauce and garnished with thyme sprigs and lemon wedges.

- Pat fillets dry; slash skin side of each crosswise in 2-inch intervals. Season generously with salt and pepper. Sprinkle with flour to evenly coat, shaking off excess.
- Heat oil in a large skillet over medium-high. When oil shimmers and wisps of smoke rise from skillet, add fish in a single layer, skin-sides down. Reduce heat to medium; cook, undisturbed,until skin is crisp and flesh is opaque halfway up sides and almost cooked through, 5 to 7minutes, depending on thickness.
- Flip and continue cooking until just cooked through, 1 to 2 minutes more. Transfer to plates, skin-sides up. Add vermouth to skillet; boil until mostly evaporated, 1 to 2 minutes. - For the seabass marinade, blend the lime juice, coriander, parsley, thyme, allspice, Worcestershire sauce, chilli, spring onions and half of the olive oil in a food processor until smooth.
- Lay the sea bass fillets into a shallow glass or ceramic dish and pour over the seabass marinade. Cover the dish with cling film and chill in the fridge for 15-20 minutes.
- Meanwhile, for the cou-cou, slice the block of ready-made polenta into four long pieces. Sprinkle the flour onto a plate and season, to taste, with salt and freshly ground black pepper.
- Heat the vegetable oil in a pan over a medium to high heat. Add the blocks of polenta and sprinkle over the thyme leaves. Fry for 1-2 minutes on each side, or until pale golden-brown on all sides.
- Heat the butter in a separate frying pan over a medium heat. Add the okra, onion, garlic, the remaining thyme and the salt and fry for 4-5 minutes, or until softened.
- Heat the remaining vegetable oil for the sea bass in a heavy-based frying pan over a medium heat. Shake the sea bass fillets to remove any excess marinade, then add them to the pan, skin-side down, and fry for 1-2 minutes, or until crisp.
- Carefully turn the sea bass fillets over and fry for a further 1-2 minutes, or until completely cooked through.
- For the tomato and lime salsa, heat the vegetable oil in a separate frying pan over a medium heat. Add the tomatoes, spring onions and Scotch bonnet chilli and fry for 3-4 minutes, or until softened.
- To serve, place one sea bass fillet onto each of four serving plates. Drizzle over the olive oil. Spoon the cou-cou, okra and tomato and lime salsa alongside.
