For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

Number Of Ingredients 17

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

1 lb fresh salmon
Nativo - Spice the Sea seasoning for sprinkling on the salmon before cooking
1 tsp garlic salt
1 TBS Nativo Spice the Sea seasoning
1 TBS olive oil
1 TBS butter
1 medium onion, diced
1/2 red bell pepper, diced
1 cup seasoned panko
2 beaten eggs
3 TBS mayo
1 tsp Worcestershire sauce
1/4 cup fresh parsley, minced
1 tsp garlic salt
1/2 tsp black pepper
For the remoulade sauce
1/2 cup mayo
1 TBS lemon juice
1 TBS sweet relish
1/2 TBS paprika
1 tsp hot sauce
1 tsp Old Bay seasoning
12 tsp horseradish
1 clove garlic, minced
2 TBS dijon mustard

Steps:

  • Instructions Sprinkle Nativo Spice the Sea seasoning on salmon. grill salmon until it flakes easily (I love to grill it on a cedar plank) Heat a medium cast-iron skillet and add 1 TBS olive oil and 1 TBS butter Saute the onion and red bell pepper until they start to soften. remove from heat and cool. To a mixing bowl, add the beaten eggs, garlic salt, Nativo Spice the Sea, onion, red bell pepper, mayo, Worcestershire, black pepper, and panko and stir to combine. Coarsely break up the salmon and add to the mixing bowl with the other ingredients. Gently stir to combine being careful not to break up the salmon too much. Form the salmon mixture into patties and refrigerate for 2-3 hours until they are firm. Heat the cast-iron pan again to medium heat and melt another TBS of olive oil and butter. Add the salmon cakes to the pan and cook for 5-6 minutes per side, until they are golden brown. For the remoulade sauce, combine all ingredients and chill for at least 1 hour. Enjoy!

1 (7 ounce) can salmon, drained and flaked
1 egg, beaten
1 tablespoon olive oil
2 green onions, finely chopped
2 cups finely crushed saltine cracker crumbs
lemon pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.
  • Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

2 cups fresh bread crumbs
2 eggs, beaten
¼ cup fresh parsley, chopped
¼ cup chopped green onions
2 teaspoons minced fresh dill weed
1 teaspoon fresh lemon juice
¼ teaspoon ground black pepper
1 (14.75 ounce) can salmon, drained
2 tablespoons butter

Steps:

  • In a large mixing bowl, place 1 1/2 cups bread crumbs. Set aside remaining 1/2 cup. Add eggs, parsley, green onions, dill weed, lemon juice and black pepper. Mix well.
  • Add salmon and mix with hands, breaking up salmon into small pieces. Form into 8 patties; each about 1/2 inch thick.
  • Place remaining 1/2 cup bread crumbs on a plate and dip both sides of the salmon cakes into crumbs.
  • In a large skillet, melt butter. Fry salmon cakes over medium heat for about 3 minutes or until golden brown and crisp. Turn, adding more butter if necessary, and fry about 3 minutes on other side.
