CHEESY SCALLOPED POTATOES AND BACON

Cheesy Scalloped Potatoes and Bacon image

I love scalloped and au gratin potatoes. I love bacon. Putting them together makes for some serious comfort food!

Provided by getoutofmygalley

Categories     Potato

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 12

5 large potatoes
1 teaspoon salt
1 large onion, sliced
1/2 cup green onion, chopped
3 tablespoons butter
1/3 cup flour
3 1/2 cups milk
1 1/2 cups shredded cheddar cheese
3/4 teaspoon salt
1/8 teaspoon black pepper
6 slices bacon
garlic salt

Steps:

  • Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
  • Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
  • In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
  • In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
  • Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.

SCALLOPED POTATOES

Scalloped Potatoes image

My favorite recipe for garlicky, cheesy, perfect scalloped potatoes.

Provided by Ali

Time 1h20m

Number Of Ingredients 12

3 tablespoons butter
1 small white or yellow onion, peeled and thinly sliced
4 large garlic cloves, minced
1/4 cup all-purpose flour
1 cup chicken stock or vegetable stock
2 cups whole milk (or half and half)
1 1/2 teaspoons Kosher salt
1/2 teaspoon black pepper
2 teaspoons fresh thyme leaves, divided
4 pounds Yukon Gold Potatoes, sliced into 1/8-inch rounds
2 cups freshly-grated sharp cheddar cheese*, divided (feel free to add more cheese if you'd like)
1/2 cup freshly-grated Parmesan cheese, plus extra for serving

Steps:

  • Heat oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set it aside.
  • Melt butter in a large sauté pan over medium-high heat. Add onion, and sauté for 4-5 minutes until soft and translucent. Add garlic and sauté for an additional 1-2 minutes until fragrant. Stir in the flour until it is evenly combined, and cook for 1 more minute.
  • Gradually pour in the stock, and whisk until combined. Add in the milk, salt, pepper, and 1 teaspoon thyme, and whisk until combined. Continue cooking for an additional 1-2 minutes until the sauce just barely begins to simmer around the edges of the pan and thickens. (Avoid letting it reach a boil.) Then remove from heat and set aside.
  • Spread half of the sliced potatoes in an even layer on the bottom of the pan. Top evenly with half of the cream sauce. (I usually strain out all of the onions and add them here too.) Then sprinkle evenly with 1 cup of the shredded cheddar cheese, and all of the Parmesan cheese. Top evenly with the remaining sliced potatoes, the other half of the cream sauce, and the remaining 1 cup of cheddar cheese.
  • Cover the pan with aluminum foil and bake for 30 minutes. The sauce should be nice and bubbly around the edges. Then remove the foil and bake uncovered for 25-30 minutes, or until the potatoes are cooked through.
  • Transfer the pan to a cooling rack, and sprinkle with the remaining teaspoon of thyme and extra Parmesan.
  • Serve warm.

  • Add the "Spiced Cream" ingredients to a saucepan and bring to a gentle simmer. Simmer for 5-10 minutes while you grease a 9x13 casserole dish and peel and slice potatoes into 1/8 inch slices. Transfer potatoes to a large bowl.
  • Spoon just enough of the herbed cream that has been simmering to cover the bottom of the casserole dish. Pour the remaining herbed cream over the potatoes and gently toss to coat.
  • Using a slotted spoon, layer the bottom of the casserole dish with 1/3 of the potato/onion slices (the slotted spoon will allow you to leave most of the cream in the bowl). Lightly season the layer of potatoes with freshly cracked salt and pepper (in addition to salt and pepper listed in ingredients). Layer 1 cup of the cheese, 1/2 of the bacon then top with 1/3 of remaining cream. Repeat layers.

  • Preheat oven to 375° F. and grease a rectangular, shallow baking pan approximately 8x10-inches (or 9x9 inches would work, as well)
  • In a skillet, over medium heat, cook bacon until lightly browned. Remove to a paper-towel to drain and set aside.
  • In a medium saucepan over medium heat, melt butter. Add flour and cook, stirring, for about 1 minute (mixture will be crumbly). Add milk and chicken broth and whisk, until well combined. Cook until mixture is smooth and thickened. Remove from heat. Add mustard, Worcestershire, thyme leaves (if using), salt and pepper. Taste sauce. Sauce should be well-salted, so add more, if necessary. Put lid on saucepan and set aside.
  • Cut ends off potatoes. Slice into thin rounds (as thin as you can while still getting a complete slice), using a sharp knife or a mandolin. Stand the potatoes up side-by-side in your prepared pan. Continue until you have about 3 rows that fill up 3/4 of the width of the pan (by the time we put onion and bacon in between, they will spread out to fill the entire width of the pan).
