A family favorite for years, this special green bean recipe is a cinch to double and can be assembled ahead of time. When my nephews are coming for dinner, it's an absolute must! -Betty Shaw, Weirton, West Virginia

Number Of Ingredients 10

3 tablespoons butter, divided
1/2 cup cornflakes, crumbled
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried minced onion
1 teaspoon sugar
1 cup sour cream
4 to 6 cups French-style green beans, cooked and drained
1 cup shredded sharp cheddar or Swiss cheese

Steps:

  • In a small saucepan, melt 1 tablespoon butter; stir in cornflakes and set aside. Melt remaining butter in a large saucepan. Stir in flour, salt, pepper, onion and sugar; heat and stir until bubbly. Reduce heat; add the sour cream and stir until smooth. Cook and stir over low heat for 2 minutes (do not boil). Fold in the beans. , Spoon into a greased 1-1/2-qt. baking dish. Sprinkle with cheese and cornflake mixture. Bake, uncovered, at 400° for 20 minutes or until heated through.

Screaming skillet green beans get their name from the screaming hot skillet used to cook them. Laced with garlic and the fruity citrus notes of white wine, they make a great summer side dish.

Number Of Ingredients 7

1/2 pound green beans
1 clove garlic
2 - 3 teaspoons olive oil
1/2 teaspoon salt, divided
1/4 teaspoon ground black pepper
1/2 cup dry white wine
1/4 - 1/2 cup of water

Steps:

  • Wash green beans and pat dry. Snap off the vine end of the bean and place them in a medium size mixing bowl.
  • Mince the garlic clove, sprinkle with 1/4 teaspoons of salt and run your knife through it a few more times to create a thick chunky paste-like consistency.
  • Add garlic, olive oil, remaining 1/4 teaspoons of salt, and pepper to the green beans. Toss to coat thoroughly.
  • Heat a cast iron skillet over medium high heat, either on the stovetop or grill.
  • Add green beans to pan and cook 2 minutes until garlic begins to brown, tossing often.
  • Add the white wine, toss, cover and allow to cook 90 seconds. Toss, re-cover and cook an additional 90 seconds.
  • When the wine in the pan evaporates, add 1/4 cup of water. Continue to cook while covered, tossing every 90 seconds and adding water as needed, no more than 1/4 cup at a time.
  • For tender crisp green beans, it should take about 8 minutes total cooking time.
  • When the beans are almost done, remove the lid and allow the rest of the liquid to cook off before serving.

This is a really old recipe that I've had forever. They're simple but good. You can substitute 1 pound of asparagus for the beans if you'd like.

1 pound fresh green beans, trimmed and snapped
1 tablespoon butter
¼ cup heavy cream
2 tablespoons grated Parmesan cheese
ground nutmeg
salt, to taste
ground black pepper, to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil. Cook uncovered until the beans are bright green and barely tender, about 6 minutes. Drain and set aside.
  • Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter. Bring the mixture to a simmer. Gently stir the beans into the mixture to coat; season with salt and pepper. Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

Patti's Screamin' Mean Greens image

With a few tweaks to the recipe of the infamous and incomparable Ms. Patti Labelle, I can now make greens my young children love to eat!

Number Of Ingredients 10

1 lb collard greens
1 lb kale
1 lb turnip greens
1 lb mustard greens
2 medium onions, chopped
1/4 cup vegetable oil
1 1/2 lbs turkey wings, smoked
salt, seasoned
fresh ground black pepper
2 jalapenos, seeded and chopped (optional)

Steps:

  • Fill your kitchen sink with water and wash the greens well. As you lift the greens from the sink, any grit will fall to the bottom. Repeat if necessary.
  • Tear the greens into large pieces, and remove and discard tough stems. Place greens in a large bowl - do NOT drain in a colander.
  • In a large pot, combine the onions, 2 cups water, oil, and jalapenos (if using). Bring to the boil over high heat.
  • Gradually stir in the greens, letting one batch wilt before you add the next. Bury the turkey wing in the greens. Season with salt and pepper to taste.
  • Cover the pot and reduce the heat to medium-low. Cook until the greens are tender, about 30 minutes, stirring occasionally.
  • Remove the turkey wing, discard the skin and bones. Chop the turkey meat and return to the pot.
  • Use a slotted spoon to transfer the greens to a serving dish. Serve hot.

If you're looking for something different as a side dish these green beans are a must. This recipe is so easy; that's the second best part (the taste being the first!). You don't have to measure anything, even the beans, just take a good sized amount that will please you and alter it to taste!

3 cups fresh green beans
1 (10 3/4 ounce) can cream of mushroom soup (regular sized)
2 tablespoons onion soup mix

Steps:

  • Preheat your oven to 400°F.
  • Cut ends off of beans.
  • Fill a small lasagna pan, cake pan, or casserole dish with the beans, mushroom soup and onion soup mix.
  • Mix together well.
  • Cook, uncovered, for 45 minutes up to an hour, stirring occasionally.
  • Remove from oven, and serve.

2 medium onions, chopped
1/4 cup vegetable oil
2 jalapenos, seeded and finely chopped (optional)
5 pounds assorted greens (such as collard, kale, mustard, and turnip greens), rinsed, tough stems discarded, and torn into large pieces
One 1 1/2-pound smoked turkey wing
Coarse salt and freshly ground pepper

Steps:

  • In a large pot, combine onions, 2 cups water, oil, and jalapenos, if using; bring to a boil over high heat. In batches, stir in greens, allowing greens to wilt between each addition. Add turkey wing, covering it with greens. Season with salt and pepper. Cover, reducing heat to medium-low, and cook, stirring occasionally, just until greens are tender, about 30 minutes; do not overcook greens.
  • Remove turkey wing from pot. Pull off meat, discarding skin and bones; chop, and stir into pot. Using a slotted spoon, transfer greens to a serving dish. Serve immediately.
